Do You Need To Stabilize Whipped Cream For A Chantilly Cake

I always stabilize my whipped cream in some way when I make large layer cakes. This makes it easier to frost with, less likely to weep , and hold its shape over time.

The Chantilly cream is holding up cake layers. Youâll get a little bit of support from the berries, but you donât want the whipped cream squeezing out the sides when you place that final cake layer on top.

There are several different ways to stabilize whipped cream, including gelatin, mascarpone, and cornstarch, to name a few. Whole Foods Market uses both mascarpone and cream cheese to stabilize theirs.

I have a whole post comparing different stabilizers for whipped cream for you to choose from, but I prefer full-fat Greek yogurt for this recipe. It stabilizes by adding body, adds a tangy flavor to the frosting, and doesnât require any complicated steps. Just add yogurt with the heavy cream and whip up!

Overall I Would Highly Recommend Everyone Make This Cake It Does Take Quite Some Time It Probably Took Me Around Three Hours To Do Everything But That Time Would Certainly Be Shorter If You Used A Store

If I had to guess, I’d say I used about $30 worth of groceries to make this cake from scratch however, I did buy the extra-large tubs of berries, which were the most expensive ingredients, so it would be cheaper if you buy the small containers. Since it’s roughly the same price as the Whole Foods version , DIYing it is basically a no-brainer, especially when considering the fact that $30 bought enough groceries to make at least two entire cakes.

This fluffy Chantilly cake is made with fresh berries and layers of soft vanilla sponge cake. To finish, it’s frosted with a light and airy mascarpone whipped cream and decorated with strawberries, raspberries, and blueberries!

This Chantilly cake is the best dessert combining soft, layers of Genoise sponge cake, fluffy mascarpone Chantilly cream, and fresh berries!

I always serve this berry Chantilly cake during the summer when berries are at their peak. But it’s also a fantastic cake to serve all year round, especially during special occasions like birthdays, anniversaries, and holidays like Thanksgiving and Christmas.

The base of Chantilly cake should always be a sponge cake. For this recipe, I used my Genoise recipe which requires a bain-marie but you can also use my Easy Sponge Cake recipe if you’d like.

How To Make Chantilly Frosting

Berry Chantilly Cake With Mascarpone Cream Cheese Frosting!

This may be my favorite part of the entire Chantilly cake. It certainly ties the whole thing together with an airy, lightly-sweetened frosting thats a cross between my cream cheese frosting and whipped cream frosting.

  • Combine heavy cream, some of your powdered sugar, and vanilla extract and beat until you have just barely achieved stiff peaks . The mixture should no longer be very liquid, but instead should be taking on a thick, fluffy consistency.
  • In a separate bowl, briefly beat together cream cheese, mascarpone, and remaining sugar just until smooth. Do not over-do this step as over-beaten mascarpone becomes grainy!
  • Add the mascarpone/cream cheese mixture to the whipped cream and slowly increase your mixer speed until the icing is thick and fluffy, smooth, and well-combined. Its ultimate texture is similar to a very thick and stable whipped cream, but it is not as sturdy or firm as classic buttercream frosting.
