1 1/2 tablespoons light brown sugar

1/8 teaspoon salt

1 recipe Crack Pie Filling

dusting of confectioner’s sugar

1/3 cup light brown sugar, tightly packed

3 Tablespoons sugar

1/2 cup + 1 tablespoon flour

1 cup rolled oats

scant 1/8 teaspoon baking powder

pinch baking soda

1 cup light brown sugar

1 1/2 teaspoon salt

3/4 cup + 2 tablespoons heavy cream

1 teaspoon vanilla extract

In NOLA, we featured a Fire Engine mobile grilling machine . Now we have a Miami food truck run and operated by an actual firefighter who is known to make the meanest pies in town. Introducing Fireman Dereks World Famous Pies.

Owner Derek Kaplan has been making pies for almost half of his life and has even won recognition for his Key Lime pie and Flan. Some of his other best sellers include his Cheesecakes, Pumpkin Pie, Crack Pie, Pecan Pie, Chocolate Pecan Pie, Cookies and Cream, Chocolate Banana Cream Pie, Coconut Cream Pie, Apple Pie and Blueberry Pie. All of which are available whole or per slice. You can even have them on a stick and dunked in chocolate. He even makes homemade ice cream.

Kaplan bakes up to a hundred pies daily and aside from the food truck, his creations can be found in other locations around the Miami area such as Brother Jimmys BBQ, El Jefe Luchador, Finnegans Brickell, La Camaronera, My Ceviche, Umami Burger, and at Walls Ice Cream.

This one we know is going to cause a civil war among Key Lime Pie lovers in South Florida. Some like it sweet, others like to physically taste the fresh pulp, but one things for sure: Joes Stone Crab has been mastering the local dessert for decades. The only spot we feel comes close to the classic pie is over at any of the Kush outposts: Lokal, The Spillover, or Kush. Both entities have a perfect balance of tart, sweet, graham, and fluffy whipped cream.

Fireman Dereks Opening Coconut Grove Pie Shop

Fireman Dereks pies have become so popular theyre almost a Miami tourist attraction. Pass by the tiny Wynwood bakery and youre bound to see a line of people waiting to get a slice of Derek Kaplans key lime or crack pies .

Kaplan, a real-life fireman, is expanding on the success of his pies by opening a second shop. The new store, located on Main Highway in Coconut Grove, is expected to debut in early January with a larger space and more seating. At 1,115 square feet, the new location will be about double the size of the Wynwood flagship, Kaplan says.

Opening a second shop simply made sense, Kaplan says. We ran out of space. Were opening a second store out of necessity.

At Coconut Grove, pies will have their own display case and the kitchen will be hidden in the back. It will retain a homey feel, according to Kaplan, who calls the new store Fireman Dereks 2.0.

With more room, Kaplan will be able to offer more items. In addition to pies, cakes, and coffee, he will have a larger variety of ice cream mix-ins, which allow customers to choose their favorite pie, cake, or brownie to be mixed into their ice cream of choice .

Pies at the Coconut Grove store, like at the Wynwood location, will be made daily at Kaplans Little Haiti bakery. Croissants, cookies, and other smaller items will be baked onsite.

The recipe will remain the same. But the name of Milk Bars signature dessert is getting a change that some critics say is long overdue. Crack Pie the trademarked name for the chains buttery, sugary pie will now become Milk Bar Pie.

The name was a reference to crack cocaine the gag being that the pie was just as addictive as the drug. But an increasing chorus of critics have pointed out that the name makes light of a serious drug epidemic, and one that had an outsize impact on the African American community. The callousness with which people throw around the word crack isnt the same with other drugs. We dont call any desserts opioid pie, even though those drugs, which claim predominantly white lives, are highly addictive, too.

Last month, the Boston Globes Devra First called out chef Christina Tosis use of the word in an essay titled Theres nothing cute about crack pie. It is a moment to pay attention to the way we talk about food, to stop speaking lightly about addiction and equating it with deliciousness, she wrote. San Francisco Chronicle food critic Soleil Ho put the word on her list of Words youll never see me use in restaurant reviews, writing, No matter how delicious something might be, its effect on me is nothing close to what crack does to people and their families. Ho also pledged not to use the term addictive in her writing.

With at least 72 hours notice, they can make whole pies, while unique pie pops need a minimum 5 days notice. The wait is worth it, as everything is made from scratch, using natural, seasonal and local ingredients. Pie pops come in brandied apple, caramel pecan, chocolate hazelnut and an array of other flavors, while hand pies range from blueberry and cherry to salted honey bourbon, spiced pear, caramel crack pecan.
