  • Mix in butter and milk and stir until smooth. Pour the lentil mixture into a 20-centimetre square ovenproof dish. Put the mashed potato into a piping bag with a 1-centimetre nozzle and pipe in straight lines across the top of the lentil mixture.

1. Preheat the oven to gas 6, 200°C/fan 180°C.

2. Start by peeling and then finely chopping your onions. Jamie likes to save time at this stage by using a food processor to chop his onions. Put a deep frying pan on a medium heat, dribbling 2 tbsp oil into the pan, then add the onions. Stir in half of the thyme leaves then cook for 10 mins, or until softened.

3. While the onions are softening, scrub and finely chop your mushrooms , then add to the pan. Cook for 10 mins, then next stir in the lentils.

4. Add the stock to the pan, increase the heat and bring to the boil. Once it’s boiling, reduce the heat and simmer for 15 mins, or until the lentils soften. Add the Worcestershire sauce and season to taste.

5. Scrub the potatoes clean and then finely slice them into 2 to 3mm thick rounds . Toss the slices in 1 tbsp oil and a pinch of salt and pepper.

6. Rip up the kale, removing any tough stalks, and add it into the lentil pan, giving it a good stir. As soon as that’s done, remove it from the heat. If your pan can’t go in the oven, transfer the mix to an ovenproof dish now, evening out the top.

7. Arrange the potato slices on top of the lentils, overlapping them slightly, like in the picture above. Leave a small gap all around the edges, plus a hole in the middle. This allows any steam to escape. Pop the rest of the thyme into the hole in the middle.

  • Preheat the oven to 200u00b0C/400u00b0F/gas 6.
  • Peel and chop all the potatoes into rough 2cm chunks. Place the Maris Pipers into a large pan of cold salted water over a medium heat. Bring to the boil, then simmer for 10 to 15 minutes, or until tender, adding the sweet potatoes after 5 minutes. Pick in the thyme leaves, then cook for around 10 minutes, or until softened.
  • Meanwhile, roughly chop the mushrooms and sun-dried tomatoes. Add to the pan along with the vinegar and 2 tablespoons of the sun-dried tomato oil from the jar. Cook for a further 10 minutes then add a splash of wine, turn up the heat, and allow it to boil and bubble away. Stir in the stock, lentils and chickpeas , then leave it to tick away for 5 to 10 minutes, or until slightly thickened and reduced. Pick and roughly chop the parsley leaves, then stir into the pan. Season to taste, then transfer to a large baking dish .

    Proper English Cottage Pie is a delicious, very traditional mince pie topped with mashed potato. Serve with garden peas.

    1 pound lean ground beef
    1 onion, diced
    2 tablespoons chopped fresh parsley
    1 ½ cups beef broth
    1 tablespoon tomato paste
    salt and pepper to taste
    4 potatoes, peeled and diced
    ¼ cup butter, softened
    salt and pepper to taste
    ¼ pound shredded Cheddar cheese

    Steps:

    • Preheat oven to 400 degrees F .
    • To Make Meat Filling: Place a large skillet over medium heat. Crumble in ground beef and saute 1 minute. Add onion and carrot, then continue to saute until meat is no longer pink and onion begins to brown, about 5 minutes. Mix in flour, cinnamon, mixed herbs, and parsley.
    • In a small bowl, combine beef broth and tomato paste. Mix together, then add to beef mixture. Add salt and pepper to taste. Lower heat and simmer mixture for 15 minutes, stirring occasionally, until almost all of liquid has been absorbed. Spoon mixture into a 9 inch pie plate.
    • To Make Potato Topping: Place diced potatoes in a medium saucepan. Cover with water and place over high heat. Allow to come to a boil. Boil for 15 minutes, or until potatoes are tender. Drain.
    • Mash potatoes until smooth, then add butter or margarine, followed by milk. Whip until fluffy. Add salt and pepper to taste. Spread potatoes over beef filling. Sprinkle with grated Cheddar cheese.
    • Bake in preheated oven for 25 minutes, until top is browned and cheese is bubbly.
