Ill take confident any day! I want my guests to walk away from our home and remember the night, and I want to feel good about the food I served!

With the occasional stress of the season were in, one way to accomplish this is with Harry & Davids easy entertaining food items.

The word easy always captures my attention, because it means less time in the kitchen, and more time to enjoy the season at hand with my guests!

It also takes the pressure off of myself, knowing that most people love a home-cooked meal. In our fast-paced world today, we just want real food.

So Im sharing about 2 amazing food items from Harry & David that I recently cooked for my family when we went to Bend, Oregon a few weeks ago, as our friends let us use their home. I wanted to see how easy the cooking process really was with these 2 items, if I felt confident about the process, and I wanted to feel, on the receiving end, what it felt like to get high quality food items in the mail as a gift. .

Maine Lobster Pot Pie

Serves 6

  • 3 cups all purpose flour
  • 2 sticks butter, cold
  • 1/4 cup plus 3 tbsp ice cold water
  • 4 tbsp unsalted butter
  • 4 tbsp all purpose flour
  • 3 cups chicken or veggie stock
  • 1 1/2 cups diced potato
  • 2 cups frozen mixed veggies
  • 1/2 tsp garlic powder
  • 2 tbsp fresh chopped rosemary
  • 1/2 tsp salt
  • 3 cups roughly chopped cooked Maine Lobster meat
  • 1 egg, beaten

Preheat the oven to 400 degree F. Lightly butter an 8 qt size baking dish

Place the flour in a large bowl and grate the butter into it

Add the salt and gently mix together with your fingers

Add the cold water and mix until the dough forms and comes together to form a ball

Once the dough is in a ball, cover with plastic wrap and chill for 30 minutes in the fridge

In a large pan melt the butter and whisk in the flour until the mixture starts to turn golden in color.

Gradually add the stock whisking after each addition and removing any lumps

Once all of the stock has been added and the sauce has thickened, add the potatoes and veggies and simmer for 3-4 minutes.

Add the garlic powder, rosemary, salt, pepper and heavy cream, stir well

Gently fold in the cooked lobster to the pot pie filling and transfer to your prepared baking dish

Roll the pastry out so it is big enough to cover the baking dish with some hanging over the sides of the dish

Tuck the pastry into the sides of the pie dish making sure to allow plenty of pastry to prevent it shrinking as it cooks

Lobster Pot Pie Duo

Yield 8 to 12 servings

Number Of Ingredients 17

2 lemons, halved
Kosher salt and freshly ground black pepper
Five 1 1/2 to 2-pound lobsters, tails and claws separated from the body, heads and bodies reserved
5 tablespoons unsalted butter
5 carrots, two cut into large dice, three cut into medium dice
4 yellow onions, two cut into large dice, two cut into medium dice
2 stalks celery, one cut into large dice, one cut into medium dice
1 bay leaf
2 russet potatoes, cut into medium dice
1 black truffle
2 tablespoons finely chopped fresh flat-leaf parsley
Freshly grated nutmeg
1 sheet frozen puff pastry, thawed
1 egg, beaten with 1 tablespoon water

Whether youre walking the neighborhood with lil mister or miss this Halloween or have door answering and candy handling duties, you, my friend, deserve a special treat for Halloween, too. This lobster pot pie recipe should do the trick its piping hot, decadently savory and filling, can be made mostly in advance and will have you stomach feeling as warm and rich as your heart, as you entertain your favorite ghouls and goblins. Plus, with a little creative plating, youll see that this lobster pot pie recipe has all the right colors!

If you do decide to make this in advance, simply stop once the gravy is finished and store until youre ready to use it. Re-heat to a low simmer and continue with the steps to complete the lobster pot pie. Youll also note that I added some red shrimp, a sweet shrimp, to this lobster pot pie recipe, as it provides more depth of flavor and texture to the dish at a lower cost than adding more lobster. By all means, feel free to use nuttin but lobster if you like!

  • Allow the puff pastry to thaw about 30-40 minutes or according to directions. Preheat oven to 425F.
  • Meanwhile, sauté the onions, celery, carrot and garlic with 2 tbsp butter in a large sauté pan on medium heat until the onions are translucent, 10 to 15 minutes. Add addl butter as it is absorbed or cooked off.
