  • In a large pot, add butter, potatoes carrots, onion, celery and garlic. Sauté until tender. Stir in flour until blended.
  • Gradually add broth.Bring to a boil. Cook and stir for 2 minutes or until thickened. Stir in peas, 1/2 cup cream, parsley, garlic salt and pepper. Stir in chicken.
  • Spoon into two ungreased 9 in pie plates. In a small bowl, whisk egg and 1 Tbsp or cream, set aside.
  • Roll out the pastry to fit the top of each pie. Place over filling and trim, seal and flute edges. Cut slits in pasty to vent. Brush top of pies with egg mixture.
  • Bake at 375 for 30-35 minutes or until golden. Let stand for 10 mins before cutting.
  • NOTE: You can bake both pies, or cover and freeze one potpie for up to 3 months. To use frozen potpie, remove from the freezer 30 minutes before baking. Cover pie loosely with foil.     Family Size Chicken Pot Pie

    I am still doing my COVID meals for 4 families in my neighborhood. I am just loving it. I have also received some resource help through church funding which has been a great blessing, and very rewarding! I tried a new recipe of my own to make square foil pan Chicken Pot pies ‘Family Size’ and they came out great.


    These ingredients are for four large baking pans. You can cut this recipe in half and have one for dinner and freeze another.

    • 3 lb whole boneless skinless chicken breasts, cut into small cubes
    • Seasonings 1/4 tsp of each until you do a test taste black pepper, season salt, garlic powder, celery salt, a pinch of red crushed pepper, dill weed, chives, parsley, & basil.
    • 2 cans cream of chicken soup with 1 can of milk
    • 1 – 2 cup chicken broth with 1 envelope of onion soup mix and 4 Tbls of Wondra mixed together well
    • 2 bags frozen mixed vegetables
    • 2 lasagne size foil steam pan
    • For pie crusts I use a few short cuts in my cooking! Pie crust is one of them. I buy Pillsbuy ready made crust, take it out of the fridge 1 hour before using
    • 1 egg beaten, for an egg wash
    • 1 bag of egg noodles per 2 dinners cooked, to serve under the pot pie


  • Cut up each chicken breast into cubes, put the chicken in a plastic zipper bag and marinade with any salad dressing , just about 1/2 cup in the refrigerator for an hour.
  • Using a large skillet, a little olive oil, heat… drop in all the chicken and stir until golden brown.

  • Add carrots, celery, onions, garlic, potatoes, and chicken the pot insert.
  • Next add black pepper, salt, and poultry seasoning followed by chicken broth.
  • Close the lid and set the valve to sealing.
  • Select the PRESSURE COOK button on HIGH PRESSURE and cook on manual for 8 minutes.
  • Once the pressure-cooking cycle is over, allow the pressure to release naturally for 5 minutes, then quick release the remaining pressure.
  • Carefully remove the chicken.
  • Shred the cooked chicken breast.
  • Melt butter in a saucepan.
  • Once melted add all-purpose flour, and mix to form a roux.
  • Set the instant pot on the SAUTE function.
  • Add the frozen peas and then add the milk. Stir to combine.
  • Add the shredded chicken back to the pot. Stir to combine.
  • Once the liquid starts to bubble add the roux to thicken the sauce. Mix and let simmer until the sauce thickens.
  • CANCEL the SAUTE button.
  • Serve hot with biscuits or bake in a pie crust.
  • NOTE: The roux must be made after the cooker has completed the pressure cooking cycle. You will get a burn notification if the ingredients inside the pressure cooker are too thick. Make sure to only thicken the pot pie filling once you are done using the pressure cook setting.

    Chicken Pot Pie With Biscuits Ingredients

    This post was inspired by Pi Day, I honestly dont love pies but I do love a good chicken pot pie! These semi-homemade pot pie recipe is super easy and only requires a few ingredients.

    • 1-2 cup leftover cooked chicken chopped
    • 1 cup diced carrots
    • 1/2 large onion diced
    • 1 can of cream of chicken soup
    • 2 cans of flaky biscuits
