How To Make Sweet Potato Pie:

Preheat the oven to 350°F. First, poke holes all over the sweet potatoes and place them in a microwave-safe place. Microwave for 5 minutes flipping the potatoes over halfway through. Poke a knife through the potato, if there is no resistance they are ready, if not place them back in the microwave in 30-second intervals until soft. Let the potatoes cool to room temperature. Then remove the peels off the potatoes and place them in a large bowl. Nest, whip the potatoes with an electric hand mixer until smooth.

Add in the butter and mix until combined.

Now add the brown sugar and granulated sugar, mix until smooth.

Next add the eggs and mix until smooth.

Then, add the heavy cream, flour, lemon juice, vanilla, cinnamon, cloves, ginger, and nutmeg, mix until smooth and combined, scrape the sides if needed.

Place the pie crust into a pie plate and crimp the edge.

Add the filling and smooth out the top.

Bake for 45-50 minutes until set. It might be the slightest bit jiggly. It is ready when a butter knife inserted into the center comes out mostly clean. Or, an internal temperature reaches 175°F.

Finally, let the pie cool to room temperature before slicing to serve, or chill first.

Whats The Difference Between Sweet Potato Pie And Pumpkin Pie

Sweet potato and pumpkin pie are both members of the custard pie family. Custard pies are based on a mixture of eggs, dairy, and sugar. Technically you could swap the pumpkin for sweet potato purée in any pumpkin pie recipe and make a sweet potato pie. However, traditional sweet potato pie has a higher purée-to-custard ratio, fewer spices, and more vanilla. Like a lot of recipes with a Southern heritage, sweet potato pie relies on canned milk. In our recipe we use evaporated milk, which makes for a custard pie with a lighter and creamier texture.

Begin the recipe by preheating the oven to 350 degrees F. If you are using frozen pie crust remove now is the time to remove them from the freezer and allow them to sit at room temperature while preparing the sweet potato pies. You will need two pie crusts for this recipe.

Clean the sweet potatoes, peel off the skin, and cut them into large chunks. Place in a large pot and cover with water. Bring the sweet potatoes to a boil over high heat and allow them to cook until fork-tender, about 10 minutes.

Drain the water off the sweet potatoes and add them into a stand mixer bowl or large bowl to use a hand mixer. Add the butter and mix on medium speed until combined.

Adjust the mixer speed to low and add in the sugar, milk, ground cinnamon, ground nutmeg, and vanilla extract. Mix until combined. Add in the two eggs and turn the mixer speed back on medium and mix until smooth. If there is still a few chunks of potato in the mixture, it is fine.

Turn the mixer off and slowly add the filling evenly into the two pie crusts. Place into the oven to bake at 350 degrees F. for 55 to 60 minutes or until lightly browned.

  • Unbleached all-purpose flour this is used to make the base of the pie crust. Standard bleached flour will work too if thats what you have, unbleached just has better flavor.
  • Granulated sugar and brown sugar the white sugar is used in the pie crust to add a faint sweetness and the brown sugar is used for the filling. The added molasses of the brown sugar pairs perfectly with the sweet potato flavor.
  • Salt this brings out the flavors of the pie crust and filling so it doesnt taste flat.
  • Unsalted and salted butter unsalted butter is used in the pie crust , and salted butter for the filling. Salted browned butter tastes so much better than unsalted.
  • Ice water be sure to add lots of ice to the water, stir and rest before you use it. This helps the butter stay cold so you end up with a flaky crust.
  • Sweet potatoes I like to use red garnet variety. Other orange varieties work as well but dont use white or purple sweet potatoes.
  • Evaporated milk I like to use the small 5 oz. can so I dont have leftover but if you only have a larger can that will work but be sure to measure amount listed.
  • Eggs this helps bind the pie filling together and make a custard type filling. They are crucial to the recipe.
  • Cinnamon, nutmeg and ginger with the ratios here I recommend sticking with each separate spice rather than using a spice blend.
  • Vanilla extract this adds another faint background flavor in the pie. Use real vanilla for best flavor.
