How To Make Coconut Cream Pie

Amazing Coconut Cream Pie From Scratch

Begin by either making your pie crust or use a store bought refrigerated crust.

Place the crust in a 9-inch glass pie plate, crimp the edges, place foil over the crust, and place dry beans or pie weights on the foil in the center and blind bake the crust for 20 minutes.

Remove the foil and bake without it for 5 minutes, or until the pie crust is lightly golden browned. Set it aside to cool completely while you prepare the filling.

To a medium saucepan, add the sugar, cornstarch, salt, and stir to combine before adding the coconut milk and coconut rum. Cook while whisking continuously until thickened.

Remove it from the heat and add a tablespoon of the filling to the egg yolks while whisking constantly so you dont scramble the eggs! Repeat two more times until the yolks are nicely warmed. This process is known as tempering.

While whisking, pour the tempered egg yolks into the saucepan, and cook for one minute while whisking before removing the saucepan from the heat.

Add a tablespoon of butter and let it melt while stirring. Then add another tablespoon of butter and stir to combine, and repeat with the final tablespoon. Once the butter has melted, add the coconut flavoring and whisk well.

Gently stir in the shredded coconut and pour the filling mixture into a bowl to chill in the fridge for at least 20 minutes.

Pour the chilled filling into the cooled crust, smooth it, cover with plastic wrap and place in the refrigerator to chill for at least one hour.

Coconuts are really bad for you! OK, let me rephrase that because I dont want to feel the wrath of the coconut industry. They are not bad for you, and they are an amazingly versatile fruit that can be eaten and used in many ways, including oil, water, milk, and over-priced carved souvenirs for tourists. But according to the USDA, if you eat an entire medium coconut , you will consume 118 grams of saturated fat. How much is that, you ask? Well, thats 590% of your recommended daily value, which seems like a lot. So dont eat a whole coconut.

    Coconut Cream Pie Recipe

A perfectly flaky and delicious pie crust filled with rich, creamy coconut custard layered with mile high whipped cream and topped with toasted coconut. Now, what in the world could be wrong with that?

Making this pie is really one of those times that the effort pays off ten-fold when everyone takes their first bite.

They begin with, Oh my gosh, this is the best coconut cream pie Ive tasted. And then they ask, Did you make this? Can I have your recipe?

I love it when that happens.

This recipe calls for using coconut milk in the coconut custard. While that definitely gives the most flavorful result, you can substitute with whole milk or half-and-half, if needed. But if you have a true coconut lover in your midst, I really suggest you try it with the coconut milk in the custard. Its amazing!

It also calls for my homemade pie crust. Now, that recipe is as simple as well pie to make, but if you need to use a refrigerated pie crust instead in a pinch, it works just fine.

    Coconut Cream Pie Filling Ingredients

Amy Roloff Making Coconut Cream Pie

Most of the time, coconut cream pie is nothing more than vanilla pudding with some coconut thrown on top. Lets make a REAL coconut filling using thick coconut milk. Since coconut milk doesnt have a very strong flavor, well add sweetened shredded coconut and a splash of coconut extract. Dont have coconut extract? Leave it out. The sweetened shredded coconut adds plenty of flavor. Here is a run-down of the ingredients:

  • Egg Yolks & Cornstarch: Egg yolks and cornstarch thicken the pie filling. Combine the two first, then temper into the cooking mixture.
  • Canned Coconut Milk: Canned coconut milk is a cooking ingredient, not a beverage. Its very thick and usually found near the Thai food products. Do not use refrigerated carton coconut milk because the two are very different.
  • Half-and-Half: I found heavy cream to be too thick, while whole milk was too thin. Half-and-half proved to be the best choice for this coconut cream pie recipe.
  • Sugar: Use 2/3 cup to sweeten the filling. The sweetened coconut also helps!
  • Salt: A bit of salt adds flavor.
  • Sweetened Shredded Coconut: Sweetened shredded coconut is soft, moist, and sweet, so you wont find dry crunchy chunks inside the creamy filling.
  • Butter: Add 2 Tablespoons of softened butter for a soft, buttery consistency.
  • Vanilla Extract & Coconut Extract: Both add phenomenal flavor.

How To Make Coconut Cream Pie Filling

Like most homemade pudding, the coconut filling is made on the stove.

Bring the coconut milk, half-and-half, sugar, and salt to a boil. Whisk the egg yolks & cornstarch together and have them ready for tempering. To temper, add *some* of the boiling coconut mixture into the egg yolks, then add it all back into the pot. This *slowly* raises the egg yolks temperature. The purpose of tempering is to prevent scrambling them. You can watch me temper the egg yolks in the video above.

Off-heat, stir in the coconut, butter, vanilla, and coconut extracts. Next, pour the warm pudding into cooled crust, then cover and chill until thickened.

    Is Coconut Rum Necessary

Easy to make Coconut Cream Pie!

Technically rum, or more specifically coconut rum, isnt absolutely necessary.

I used Malibu which is rum with coconut liqueur and there are only 3 tablespoons of it in the whole pie but it adds a nice extra layer of coconut flavor.

The alcohol burns off during the baking process. However, if theres a reason why you dont consume alcohol, you can simply omit it.

Perhaps bump up the amount of coconut extract you use instead.

    Baking & Serving Tips

Make sure to get the most enjoyable and best experience out of our pies by following the baking instructions and serving tips below. These instructions are specific to Coconut Cream Pie. If you would like instructions for a different pie, please check that page.

    Cream Pies

The Coconut Cream Pie should be refrigerated at all times. For best results, the pie should be consumed within 3 days of purchase. Before serving, please remove from fridge and leave at room temperature for 30 minutes. Ideally you do not want your cream pie to sit at room temperature for longer than 1 hour.

    Tips

    • While you can freeze a cream pie, it is not recommended. The whipped cream and the custard are both best consumed when fresh.
    • To cut a perfect slice, try warming your knife blade with hot water and cleaning it between cuts.
    • Never warm a cream pie, as the filling and whipped cream will not survive the heat.

    Searching For Hawaiis Coconut Pies

HAWAII Magazine reader Dale Randall e-mailed us:

I have never seen a mention of a place to purchase coconut piethe old fashion variety with two crusts. Since Kapiolani Bakery closed, I have not been able to locate a source. Liliha Bakery discontinued theirs, but they still make coconut turnovers. Could you suggest a source?

Most Oahu bakeries, such as Liliha Bakery, now offer coconut or haupia cakesnot pies. These cakes are often filled with or frosted with haupia and/or sprinkled with coconut flakes.

Teds Bakery is known for their original chocolate-haupia cream pie, but its only topped with whipped cream.

Two bakeries will still make a double-crust coconut pie:

Agnes Portuguese Bake Shop in Kailua. This Windward bakery on Oahu is best known for its hot malassadas , but they also make double-crust coconut pies.

Larrys Wholesale Bakery makes coconut pies just the way you like themwith the old-fashioned double crust.

Since these desserts are not regular items, both bakeries recommend placing your order a day in advance.

Or you could always try to bake your own pie, with a coconut filling, for which, we admit, we cannot find a recipe.

Can The Coconut Extract Be Omitted

How To Make The Perfect Coconut Cream Pie

The recipe calls for coconut extract, and I recommend buying it for the pie. Its generally much less expensive than vanilla extract because its an imitation or artificial extract.

I recommend checking the baking aisle of your grocery store for a tiny bottle of a store-brand.

Although if you really dont want to purchase it, you can use vanilla extract instead, but take note that your pie wont be as intensely coconut flavored.
