You wont believe the difference macadamia nuts make. I use about 1/2 cup of macadamia nuts in place of some of the graham cracker crumbs and the result is pure bliss. Macadamia nuts are a gem and, as it turns out, often overlooked in the baking world. Why though? Theyre so good.

    Preheat the oven to 375F degrees. Prepare the crust adding the graham cracker crumbs, granulated sugar, and butter to bowl.

    Mix together until combined.

    Press it into a 9-inch pie plate and bake the crust for 10 minute, remove and set aside.

    Make the filling by adding key lime juice, key lime zest, sweetened condensed milk, sour cream, and egg yolks to a bowl.

    Using a hand mixer, blend together the mixture until combined.

    Pour the filling into the crust.

    Bake the pie for 15 minutes. .

    Once the pie has cooled to room temperature, chill for 3 hours or more.

      But now Florida has a new state dessert, too.

      On March 4, a bill to make strawberry shortcake with a healthy dollop of Florida-made whipped cream the states official dessert passed in the House and is on its way to the governors desk. The House passed the bill 109-4. The Senate passed the bill unanimously in January.

      Florida Gov. Ron DeSantis signed the bill into law March 7.

      Naturally, the bills have had dessert connoisseurs in a frenzy over which is best, especially in Key West.

      One of the lawmakers voting in support of the strawberry shortcake bill Friday was Rep. Jim Mooney of District 120, who represents all of the Keys.

    • Prepare the Crust Layer: Place the Oreos in a food processor and pulse to form crumbs. Reserve 1 and ½ cups of the cookie crumbs, set aside. Next, mix the remaining crumbs with the melted butter. Press this mixture into the bottom of a 9×13 baking dish, set aside.
    • Cream Cheese Pudding Layer: Place the cream cheese in the body of a stand mixer with the paddle attachment. Mix until smooth with no lumps. Add in the pudding mix and mix to combine. Next, mix in 1 cup of the heavy cream on slow speed until combined. Add 1 more cup of heavy cream, mix on slow to combine. Finally, add in the key lime juice, mix on slow speed until combined and smooth, scrape down the sides as needed. Reserve cup of this mixture.
    • Pour the remaining cream cheese mixture on top of the cookie crust and smooth it out with a spatula.
    • Oreo Layer: Evenly spread the remaining cookie crumbs on top.
    • Cream Cheese Whipped Cream Layer: In the body of a stand mixer add the remaining 3 & ½ cups of the heavy cream and the powdered sugar. Using the whisk attachment, whip the cream and sugar starting on low speed and gradually increasing in speed to medium to form medium peaks. Take out about of the whipped cream and set aside.
