Yes! As a matter of fact, its very easy to make. One cup of almonds will produce approximately one cup of almond flour, so its best to buy almonds in bulk. Almonds come with the skin on or off . If the almonds you buy are not blanched, keep in mind that the texture of the flour will be more coarse.

Process the almonds in a food processor, pulsing one cup of nuts at a time for a minute or so. Or you can use a high-speed blender. Just dont process too much or youll end up with homemade almond butter!

Blender Instructions:

  • Place one cup of raw almonds into your blender. Blend on high for about 1 minute, watching the texture. When it looks like a fine powder, stop blending.
  • Be very careful that you dont overblend the almonds as that will turn them into almond butter instead.
  • Whichever method you use, dont process more than one cup of almonds at a time. Otherwise, it will be more difficult to form a consistent powder.

    If you notice any large clumps in the flour, run it through a sieve to separate the clumps.

    How To Make Sure Your Low Carb Bread Recipe Is Done

    The only really challenging part about this low carb bread recipe is knowing when its done. It will look done before it actually is! And if you take it out too soon, it will fall and worse, it will be gummy inside.

    Here are 2 ways to test for doneness:

  • The toothpick test. Insert a toothpick and check if it comes out clean. But, note that this bread will pass the toothpick test before its fully done. So, check with a toothpick and then continue baking for at least 10 more minutes.
  • The crust test. Another way to tell is that the top should get very hard and crusty. Yes, this low carb bread creates a hard crust! I actually love that, and its an important marker of the bread being done.
  • Oven temperatures vary, so it might take a little experimentation in yours if its not done the first time. But in general, err on the side of more time and not less. You can always cover the top if it starts to burn, though Ive never had to do that.

    Yes! I don’t eat bread every day. That’s why I like to pre-slice my bread loaves and store them in the freezer. This way it lasts for 3-6 months.

    Lay out the slices next to each other on a sheet of parchment paper so they don’t stick together while they freeze. Then, store them in a freezer bag.

    To defrost, simply let the bread come to room temperature. Or pop a slice in the toaster or microwave straight from frozen!

    Notice that I do not use low-fat cream cheese in this recipe nor do I use the kind of cream cheese that is whipped with air and comes in a tub.

    The greatest thing about psyllium husk powder is that it can also be used to thicken sauces, gravy-like my keto gravy or soups. If you do add too much, however, it does have a gelatinous feeling to it so you have to be careful with the amount you add in.

    Psyllium used in cooked foods needs to be mixed with enough fluid so that the husk can absorb and bulk up, reducing the risk of constipation.

    When baking with it, most recipes will call for eggs or egg whites and hot water. The hot water helps the psyllium activate and activates its ‘glue’ properties.

    You’ll notice that in all of my recipes where I use psyllium husk powder, I add hot water and lots of eggs. I find that by adding both ingredients, it helps double the recipe in size and also makes everything stick together without falling apart.

    • Use finely ground, blanched almond flour. I mentioned this above but cant stress it enough! To get the best texture, you need to use the right almond flour. Youre not going to want to buy almond meal for this recipe, but instead get this finely ground, blanched almond flour.
    • Mix well. Be sure your dough is completely uniform.
    • Pack the dough into the cookie scoop. If you forget to pack that cookie scoop well, your dough will crumble as you release it onto the parchment paper.
    • Give them room . Unlike those made with wheat flour, low carb biscuits with almond flour dont spread or rise much. Because of that, an inch is totally enough space to leave between scoops of dough.
    • The optional sour cream makes them lighter. You can omit the sour cream if you prefer denser low carb biscuits, but definitely include it if you like them more fluffy.
    • Let them cool a little. You can definitely enjoy your keto friendly biscuits fresh out of the oven , but the texture improves if you let them cool a bit from hot to warm.
