I dont know if you can tell from the photos, but I add mini chocolate chips to my banana muffins. The mini chips make sure you get a chocolaty bite every time.

I use mini chocolate chips to make banana bread, too. In this recipe for chocolate chip banana bread, I love combining mini and regular chocolate chips.

Can I Substitute The Chocolate Chips

You can omit the chocolate if you prefer a basic banana muffin. The ripe bananas will still provide great banana flavor, moisture and natural sweetness. You can also substitute the chocolate chips with an equal amount of toasted chopped walnuts for banana nut muffins, or replace with raisins for banana raisin muffins.

How To Make Oatmeal Banana Chocolate Chip Muffins

Prep. Preheat your oven to 425F and add paper liners to a muffin tin. Set aside for later.

Mix the wet ingredients. Next, we whisk the liquid ingredients together until smooth. We like to do this in a separate bowl because it prevents us from over mixing the wet-dry combination which would result in tough and not-fluffy muffins.

Sift the dry ingredients. So we dont really sift, but by whisking our dry ingredients together, we get the same effect. Its a simple way to make sure the baking powder is evenly distributed and the spices are mixed throughout the flour.

Add the mix-ins. Combine the wet and dry ingredients, and then gently mix in the oats and chocolate chips.

Bake the muffins. Divide the batter between 12 muffin liners and top the muffins with a sprinkle of turbinado sugar this is totally optional, we just like the crunch.

Pop the muffins into your preheated oven for 10 minutes. Then, turn down the heat to 350F and continue baking for about 5 7 more minutes, or until an inserted toothpick comes out clean.

Store the muffins covered with an air-tight lid or sealed in a large ziptop bag at room temperature for 4-5 days. I dont recommend refrigerating these muffins as it can cause them to become dry and crumbly.

As is the case with most baked goods that have bananas in them, you want to use overripe bananas for this recipe. I like to use bananas that are just past their speckled state, almost entering totally browned territory, where the banana itself is still yellow inside but very soft and fragrant. You can also use speckled bananas with great results.

If you want to make these muffins at a moments notice but dont always have overripe bananas on hand, here is my advice: buy a bunch of bananas, let them get overripe, then peel them and transfer them to a resealable plastic food-storage bag. Freeze the bananas for up to 2 months. When youve got a hankering for banana muffins or banana bread, remove however many bananas you need from the bag, let them come to room temperature, then use them in your recipe.
