Combine Everything Together And Add Chocolate Chips
The last step for these muffins is to combine the dry ingredients with the wet ingredients and if you are adding them, stir in chocolate chips. I dont know if you can tell from the photos, but I add mini chocolate chips to my banana muffins. The mini chips make sure you get a chocolaty bite every time.
I use mini chocolate chips to make banana bread, too. In this recipe for chocolate chip banana bread, I love combining mini and regular chocolate chips.
Can I Substitute The Chocolate Chips
You can omit the chocolate if you prefer a basic banana muffin. The ripe bananas will still provide great banana flavor, moisture and natural sweetness. You can also substitute the chocolate chips with an equal amount of toasted chopped walnuts for banana nut muffins, or replace with raisins for banana raisin muffins.
How To Make Oatmeal Banana Chocolate Chip Muffins
Prep. Preheat your oven to 425F and add paper liners to a muffin tin. Set aside for later.
Mix the wet ingredients. Next, we whisk the liquid ingredients together until smooth. We like to do this in a separate bowl because it prevents us from over mixing the wet-dry combination which would result in tough and not-fluffy muffins.
Sift the dry ingredients. So we dont really sift, but by whisking our dry ingredients together, we get the same effect. Its a simple way to make sure the baking powder is evenly distributed and the spices are mixed throughout the flour.
Add the mix-ins. Combine the wet and dry ingredients, and then gently mix in the oats and chocolate chips.
Bake the muffins. Divide the batter between 12 muffin liners and top the muffins with a sprinkle of turbinado sugar this is totally optional, we just like the crunch.
Pop the muffins into your preheated oven for 10 minutes. Then, turn down the heat to 350F and continue baking for about 5 7 more minutes, or until an inserted toothpick comes out clean.

Frequently Asked Questions & Expert Tips
Can I add nuts?
Absolutely! Feel free to fold in about 1/2 1 cup of chopped walnuts to the batter for added crunch and flavor. Pecans, cashews, macadamia nuts, or chocolate chips are also great mix-in options.
Can I freeze these muffins?
Yes, you can freeze these banana muffins. To do so, allow the muffins to cool completely then wrap them individually in plastic wrap. Place them inside a large ziptop bag or air-tight container and freeze for up to 3 months.
How do I store them?
Store the muffins covered with an air-tight lid or sealed in a large ziptop bag at room temperature for 4-5 days. I dont recommend refrigerating these muffins as it can cause them to become dry and crumbly.
The Best Bananas For Chocolate Chip Banana Muffins
As is the case with most baked goods that have bananas in them, you want to use overripe bananas for this recipe. I like to use bananas that are just past their speckled state, almost entering totally browned territory, where the banana itself is still yellow inside but very soft and fragrant. You can also use speckled bananas with great results.
If you want to make these muffins at a moments notice but dont always have overripe bananas on hand, here is my advice: buy a bunch of bananas, let them get overripe, then peel them and transfer them to a resealable plastic food-storage bag. Freeze the bananas for up to 2 months. When youve got a hankering for banana muffins or banana bread, remove however many bananas you need from the bag, let them come to room temperature, then use them in your recipe.

The Secrets To A Perfect Chocolate Chip Banana Muffin
We tested and retested this recipe and heres what we found:
- Using all brown sugar gives a super delicious and rich depth of flavor that plays really well with banana.
- Plenty of vanilla extract amps up all the other flavors. Most baked goods dont use enough. Use vanilla paste for even better flavor.
- 3 whole mashed bananas means you wont miss the banana in these muffins, which is why youre here in the first place.
- Creaming the butter and brown sugar for a few minutes gives these muffins a classic light, fluffy, cupcake texture rather than a denser banana bread consistency.
- A little extra liquid in the form of milk keeps these muffins soft and moist.
- The perfect blend of rising agents makes these muffins rise nicely without any awkward doming in the oven.

How To Bake Tall Muffins
Did you know that the secret to baking tall, bakery-style muffins with a domed muffin top is found in the oven temperature? Instead of baking your muffins at the same temperature the entire time, bake them at a higher temperature initially, then decrease the temperature to finish baking. The initial high heat will help the muffins bake up nice and tall, and the lower temperature will help them bake through without burning.
To achieve tall muffins in this recipe, we bake the muffin batter at 425°F for 5 minutes, then reduce the oven temperature to 350°F for the remaining 15-18 minutes. So easy!

Chocolate Chip Banana Bread Mini Muffins
As I hinted in my Chocolate Guinness Brownies post, there are probably quite a few things about me that, even in seven years of blogging, have never come up and might surprise some people!
For instance, I dont know that Ive ever mentioned on here how much I love to danceany kind of dancing I love it all. Pretty much every weekend, you can find me trying to persuade my friends to go out dancing with me. Sometimes they give in to my appeals, and we put on our comfortable shoes for a night on the town.
A couple of weeks ago, after friends stayed over following a night of dancing, I found myself in need of a quick and easy breakfast that I could make with limited supplies.
Because you know when your name is Chocolate-Covered Katie, it is expected that there will always be food at your apartment to feed your friends, regardless of whether or not you were out all night and therefore had no time to prepare said food.

Pro Tips For Moist Banana Muffins
There are 3 key points for achieving moist and tender banana muffins:
- Use very ripe or overripe bananas. Underripe bananas will be difficult to mash and wont incorporate into the batter well.
- Do not skimp on the butter. Since there is no other liquid in this recipe, softened butter is needed for a soft and moist crumb.
- Dont over-bake. Test for doneness by inserting a toothpick into the center after 25 minutes and continue baking only if you see wet batter on the toothpick.

How To Make Easy Banana Muffins From Scratch
This is the best banana chocolate chip muffin recipe if you ask me! They come together quickly and they are super easy to make. No fancy ingredients or equipment. Just mix all the dry ingredient in one bowl , and the rest of the ingredients in another bowl, then mix the two mixtures together. Mix just until the ingredients are combined, because over mixing can make the muffins dry and dense.

Why This Recipe Works
The best use of overripe bananas is arguably banana bread and banana muffins. Theres nothing quite like a bite of soft, cinnamon-spiced, banana-flavored bread alongside a cup of coffee whether it be in muffin or loaf form.
These homemade banana muffins are quick and easy to make with just 3 bananas, cinnamon, sour cream, and a handful of pantry staple ingredients. Instead of dense like banana bread, theyre fluffy, soft, and deliciously moist.
One: Whisk The Dry Ingredients Together
So the dry ingredients are well combined, I like to whisk them together in a bowl before combining them with the other muffin ingredients. For the dry ingredients, you will need:
Flour I prefer to use all-purpose flour, but whole wheat works well in this recipe. You can also substitute your favorite gluten-free flour blend.
Brown sugar sugar adds moisture, sweetness and makes the muffins tender. If you only have white sugar, dont worry you can use it instead.
Baking powder and baking soda these are both leaveners and are what make the muffins rise.
Salt just a tiny bit of salt makes these muffins ultra-flavorful.

Do Mini Zucchini Muffins Freeze Well
Absolutely. As with most baked goods, youll want to make sure these muffins are completely cooled before popping them in the freezer. Any excess condensation that comes from warm muffins in a cold freezer will change the texture .
First, youll freeze the muffins on a baking sheet for 30 minutes until theyre frozen solid. Next up, transfer the frozen muffins to a freezer-safe plastic bag, squeezing out any excess air in the bag. These Mini Zucchini Muffins will keep in the freezer for 2 to 3 months when stored properly, which means many, many happy mornings on the horizon.
What You Need To Make This Recipe
Bananas overripe bananas are a must for this recipe because underripe bananas are too firm which will cause a lumpy batter. Theyre also not as sweet which will affect the taste. If you need to ripen your bananas quickly check out my tip below!
Chocolate chips I like to use semi-sweet chocolate chips but you can use any kind you like whether its milk, dark or white chocolate.
Butter I use unsalted butter so I can control the amount of salt thats added. If you use salted butter omit the additional salt in the recipe.
Salt even although this is a sweet recipe salt is essential for adding and enhancing the flavors.

Can I Use Frozen Bananas
If you have overripe bananas and arent ready to use them, toss them in a ziploc and freeze them for later. Before adding frozen ripe bananas to the recipe, thaw completely at room temperature, or in the refrigerator overnight. Frozen bananas tend to release more moisture so peel and lightly pat dry with paper towels to remove excess liquid.
Pro Tips For Making This Recipe
- To check the muffins are done insert a toothpick into the center of one muffin and if it comes out clean with no wet batter theyre ready.
- You can also fold some nuts into the batter to switch it up slightly, 1/2 cup of walnuts and pecans would work really well!
- You can add in any kind of chocolate you like from milk, dark or white.
- You can omit the chocolate chips altogether if you like or swap them for nuts or raisins.

What Should The Consistency Of The Muffin Batter Look Like
Dont be alarmed, but the batter will be very thick and hard to stir at first. Once you add the zucchini, it will loosen right back up, which means its then time to fold in your mix-in of choice. If youre at my house, you can expect each and every muffin to be thoroughly studded with mini chocolate chips. Most important of all: Be sure your zucchini is grated and rung out very well in a towel to remove any excess moisture. Zucchini hoards water, which we dont thinning out the batter and affecting the perfect light, fluffy consistency.
