As much as wed like to eat an entire pound cake in one sitting, its probably not recommended. Bummer, right? Fortunately, its super easy to store leftover cake and preserve all that hard you put in!

Your key lime pound cake will do quite well tightly wrapped , refrigerated or frozen. Refrigerate for up to a week or freeze for up to six months.

TIP: Thaw your cake on the counter without unwrapping for best results.

Its so easy to make, and you can absolutely make it a few days ahead of time and store it in the fridge until youre ready to assemble your cake. I work long and hard to perfect my cake recipes. I take baking cakes pretty seriously and want to pass on these tried and true recipes to my children, grandchildren, great-grandchildren…so they better be perfect!

I have been baking since the time I could climb up on a stool and help my Mom in the kitchen. Baking cakes and cookies for my friends and family have always been my favorite thing to bake! I shared how my kids get to choose the flavor of their birthday cake every year and they get pretty creative! Since my daughter, Sadie, is obsessed with anything lime flavored, I knew this had to be her special birthday cake.

This is literally one of my husband’s favorite cakes I have ever made. It is seriously the best lime cake!

We just returned home from a Caribbean cruise with the family and had the best time! It was so nice to be away from cellphones and laptops and reconnects as a family. My kids felt like Kings and Queens with access to unlimited food and drinks! Our favorite virgin non-alcoholic drink was definitely the mojito — made with fresh lime juice and mint. This drink was definitely the inspiration for this fresh key lime cake!

This Key Lime Cake with Cream Cheese Frosting can be made as a layered cake with two 9-inch cake pans or three 8-inch cake pans or in a 9 x 13 pan.

It was Saturday and I was tired. Like really tired. I had spent the previous night talking and laughing outside by the campfire and went to bed far later than what a responsible adult should but my soul needed that time of light-hearted connection.

My children, however, get up at 7 am sharp every single morning. Regardless of what time they go to bed the night before, their internal alarm clocks are as prompt as ever So after only a handful of hours of sleep and a pot of coffee I was still tired. From the time they could talk, the kids were in charge of how we spent their birthday . Thats everything from the venue to what we ate, including the cake or dessert. Interestingly enough, the kids have rarely elected to have a huge birthday party. They usually settle for long hikes on our land with family and a nice birthday meal we can all enjoy together. Ive been very thankful for that.

I like to enjoy their special day as much as they do, so it gives me a chance truly cherish the moment with my birthday child without having to be in charge of a production. Of course, we will do the big birthday thing every once in a while, but for the most part, we just enjoy each other and great food.

This year, Emelia, my youngest, chose to go out on our land and ride 4-wheelers after a great meal of homemade hamburgers and twice fried fries! If youre following my Facebook live broadcasts each Sunday, you know we dont have water at our new property yet, so it was little more difficult, but it actually turned out quite nicely. We ate in the barn on picnic tables and enjoyed each having each other around! After that, we rode the ATVs and ate cake under the Hackberry trees behind the little cabin on the property.

Make Ahead Storing And Freezing

If making ahead of time, remove the cake layers from the pans and wrap with plastic wrap and store in the freezer for up to 3 weeks.

The lime curd can be made ahead of time and stored in the fridge for up to 4 days.

If making the buttercream ahead of time, store in an airtight container in the fridge or freezer. Let come to room temperature and beat until light and fluffy.

What Are Key Limes

A key lime is a hybrid citrus fruit that is green when picked and yellow when ripe. Compared to a regular lime, key limes are smaller, more acidic, have a stronger citrus aroma and a thinner rind. A key limes juice is sweet and tart but somewhat more bitter than its everyday counterpart.

Key Limes are often used in very sweet desserts their tartness balances out the sweetness of sugar in wonderfully unique way.

TIP: Take a trip to your local bodega if youre struggling to track down this rare find. Bodegas will often have cheaper pricing as well. Win.

How To Make This Key Lime Pie Cake

The cake layers are flavored with key lime juice and key lime zest. Although honestly, you could totally use bottled key lime juice and regular limes for the zest. Key limes can be tough to find, so dont stress. Itll be just as tasty the other way too. The cake is moist, light and lovely.

The frosting is made with key lime juice as well, plus some sweetened condensed milk. I love the flavor of the sweetened condensed milk in the actual pie and you get a nice subtle taste of it in the frosting.

To complete the pie in cake form, I added the graham cracker crust. The crumbs, a little sugar and some butter are combined and then baked, just like if you were making an actual crust. Its layered right into the cake!

Once the cake is built, its topped with a little more frosting, some glaze and a few quartered key limes for a super fun finish. I spread the frosting just in the middle of the cake, leaving about an inch around the edge to add the piping.

The drizzle is a simple glaze made with sweetened condensed milk, key lime juice and powdered sugar. Its easy to add to the cake just using a spoon to drizzle it down the sides. If theres some left over, Id serve it right with each slice of cake so good!

This is such a fun cake and is great for summer! Its festive and makes you feel like you should be at the beach, if you arent already. Plus yum!!

Where Do You Find Key Limes

This is a great question, and the answer will absolutely depend on where you live. In Washington state where I am, it can be darn near impossible to find fresh key limes! So for this recipe, Im using regular limes instead. If you are able to find key limes, YAY! Double the number of limes Ive listed in the recipe below, since key limes are half the size of traditional limes.

Lime Cream Cheese Frosting

This lime frosting will remind you of your favorite key lime cheesecake! Its amazing and will melt in your mouth.

  • Using a power mixer, mix together the butter and cream cheese until smooth. This will take about 2-3 minutes.
  • Add the powdered sugar, lime juice, and lime zest. Mix until combined and smooth, scraping the sides of the bowl as needed.

A note about the frosting: This buttercream recipe makes enough to cover the cake and add decoration. If you arent planning to add additional icing to the top of the cake, you can divide ingredients for the icing in half.

Talk about a cake with some zing! This Key Lime Cake has all kinds of fresh tangy flavorsit feels like a party in your mouth!

One key to this fabulous key lime cake is to use fresh key limes. Another is to spread some of the zesty Cream Cheese Lime Icing between the layers and on the outside to send it over the top!

Its perfect for birthdays and all kinds of other celebrations. The fresh, fruity flavors make it perfect for serving outdoors.

Birthdays are always a really big deal in our home. We enjoy a week of fun with the birthday girl or boy picking out all the meals. Though we do have two kids with the same birthday , a birthday gives us an opportunity to throw a special celebration for one child.

How To Make A Key Lime Cake

Youll need two bowls to make this cake. Its easiest if you use a hand mixer or stand mixer, but a whisk will work if you dont have either of those.

  • Cream. In a large bowl, add oil, eggs, milk, vanilla, zest, and lime juice. Cream together on low until combined.
  • Stir. In another large bowl, add sugar, flour, baking powder, baking soda, and salt. Stir to combine.
  • Mix. Add the flour mixture into the egg mixture. Mix until combined.
  • Bake. Grease 2 9-inch cake pans with shortening, then dust with flour. Pour the batter evenly into the 2 pans. Bake for 30 35 minutes, until a toothpick inserted into the middle comes out clean.

Cool completely before icing. You can let the cake cool in the pans for about 5 minutes, then loosen and remove to a wire rack to cool completely.

How To Make Key Lime Pound Cake

Youve heard me say this before but Ill say it one more time for the new folks: pound cakes are crazy easy to make. Simple ingredients, one bowl and a baking time long enough to take a nap, all come together to make the easiest homemade dessert ever.

In a simple recipe, each ingredient plays a key role and their contributions are epic. Below are some of unsuspecting all- stars of this cake:


Cream cheese is the difference between a dry pound cake and a moist one. On its own, cream cheese is creamy and subtle in flavor its addition is incredible for infusing moisture.


Key Limes pack an incredible amount of tartness, more so than a traditional lime. Each drop of juice cuts through the sweetness and creates that lip smacker experience.

Citrus zest is full of fragrant and flavorful oil. Even the smallest addition of zest intensifies the lime flavors and makes your cake smell amazing!


Cake flour is lighter than all-purpose flour and produces an airer texture in this pound cake. Using a dense flour would only weigh down the ingredients and create a rock-like cake.

Tips On How To Assemble The Key Lime Pie Cake

  • Make sure the key lime pie filling is at room temperature. If its too cold, you wont have an easy time spreading it on the cake. If its warm, it might melt the marshmallow frosting.
  • Pipe a ring of marshmallow frosting around the edges of the cake before putting the filling inside, to create a barrier so the filling will stay in the cake, and not come out to the sides.
  • You can use a piping bag to be able to spread the filling more evenly on the cake layers.
  • Use a simple syrup to make the cake layers moist and delicious. Read up below more about the simple syrup.

So, I like to make a simple syrup to brush on my cakes. And I added a little note at the end of the recipe explaining how to do that. Its very simple. You grab equal parts of sugar and water, bring to a boil until the sugar melts. Then, let that syrup cool down all the way, and preferably chill it in the fridge until it gets thick. And brush this syrup on your cake as you decorate, before putting the filling on the cake.

A simple syrup brush will ensure you have a very moist and delicious cake.

For a cake the size of this Key Lime Pie Cake, I think about 1 cup of sugar and 1 cup of water syrup might be enough. I used to keep some simple syrup in my fridge when I used to make lots of layer cakes for orders and stuff. Simple syrup will keep in the fridge forever, and you can also use to sweeten cocktails, beverages, etc.

I topped the cake with key lime fudge truffles.
