During the holiday season, I make many, many dozens of cookies. But cookies are by far the easiest dessert to throw together when someone’s had a bad day and needs a pick-me-up. Starting with a cake mix means that I can have cookies baked in less than 10 minutes longer than the time it takes for them to bake in the oven.

In my second cookbook, Gluten Free on a Shoestring Quick & Easy, I have a whole chapter on make-your-own baking mixes. I promise I understand that the whole point of purchasing a ready-made cake mix is the convenience, though!

But it can be difficult to find a really good quality boxed gluten free cake mix, mostly because the flours tend to be gritty and the blends unbalanced . But if you have one that you love, use that! Just make sure that it’s a full 16 ounces of mix.

Can I Substitute Flour For Cake Mix In Cookies

Since cake mix is made with a combination of ingredients, including flour and sugar, it doesnt make a good substitute for flour in a cookie recipe. But that doesnt mean you cant make cookies with cake mix! You just have to adjust the other ingredients in the recipe to account for the other ingredients that are already found in the cake mix.

What Makes Perfect Gluten Free Chocolate Chip Cookies

In my opinion, what makes a perfect chocolate chip cookie is a really thick cookie, kind of cake-like, or bakery style. But, it has to also be really soft. Think Levain Bakery style cookies.

And unlike most chocolate chip cookie recipes, I dont load up on the chocolate chips . I actually like a little less chocolate in my CCCs, I think because I like to taste the brown sugary goodness of the cookie itself with a hit of chocolate every now and then.   • Simple Mills Vanilla Cupcake & Cake Mix. Ummmm hi this is best grain-free cake mix in the entire world. No refined sugar, no creepy ingredients. Just almond flour, coconut sugar and a few other goods youd use from your own pantry. Simple Mills is my obsession. I dont remember life before them and I have been using their products for well over 4 years now. They make a variety of baking and cooking mixes and ready-to-eat products too. You could also use the chocolate cake mix here to make these chocolatey.
  • Eggs. I havent tried flax egg yet to make these plant-based, but I do think it would work well! If you do try, leave a comment below for us.
  • Coconut oil. I melted and cooled coconut oil for this recipe. You can use avocado oil too if you have that. You can also cheat and just buy liquid coconut oil, which is super easy for baking!
