Filling The Cooled Cake

Take a box of ice cream out of the freezer and open it completely so it looks like a square of ice cream.

Start slicing the ice cream in 1/4 to 1/2 inch slices with a large knife. You really want to be able to cut through it in one motion.

You can also allow the ice cream to soften slightly and just spread it on. I prefer to slice and place.

Once the Cake is full, stop slicing. You may have ice cream leftover, just pop it back in the freezer and eat it later.

I usually start by filling the tight curl at the end of the cake.

This part has never wanted to unroll for me, so I just go with the flow and stuff some ice cream in there. I cut one of the ice cream slices into smaller pieces and pack it in.

Once that is filled, start lining up the ice cream slices along with the cake.

Lay the pieces as close together as possible. You can start at either end.

You can leave an inch or so on the sides empty, ice cream will fill that area as you roll it back up.

Some of your pieces may be thicker than the others, this is OK too. We are going to let this sit for 10 to 15 minutes until it is slightly softened.

Do not walk away during this waiting period, if you forget you have sliced ice cream sitting on the cake, it will begin to absorb and melt over the edges running onto the towel and the countertop.

If you arent quick enough to remember you left it on the counter you may find yourself mopping the floor. Ive done this.

If you find that the ice cream is too soft and wont roll without melting into a puddle before you can get it off the pan then you need to add more heavy cream to the mixture. If the ice cream is brittle and breaks instead of rolls, you need a greater portion of sweetened condensed milk. Different brands of sweetened condensed milk may make a difference also.

MIX INS If you dont already have birthday cake on hand, you can typically purchase just a single slice of cake or a single cupcake from the grocery store that will be plenty to use in this recipe. Jimmies do not bleed their color when they get wet like many sprinkles. Do not use nonpareils for this recipe. If youd like to use specialty sprinkles, test their color fastness before mixing them in with the ice cream base.

An ice cream roll cake is very similar to a Swiss roll, but you use ice cream instead of frosting.

This will give you a basic recipe from which you can work off of. How To Make An Ice Cream Roll Cake

The first step is to make the cake, which is a vanilla sponge. While not difficult to make, following the steps are important as the cake can be fragile and you will be handling it quite a bit when you roll it and dont want it to crack too much .

Preheat the oven to 350 degrees. Prepare the baking sheet. Dab it with butter in several places, then line the sheet with parchment paper. Set a pot with a small amount of water on the stove to bring to a boil.

Remove the bowl from the heat and beat on a medium to high speed for 5-6 minutes, or until the mixture has tripled in volume and ribbons form.

While you sift the flour in with one hand, use a wide spatula to fold the flour into the batter with the other hand .

Fold in the melted butter.

Pour the batter into the prepared pan, gently spreading it out to the edges of the pan with the spatula.

Bake for 11-13 minutes, until it is just turning golden at the edges of the pan.

Remove the cake from the oven and let it sit for 5 minutes.

Place another piece of parchment paper on top of the cake and turn it upside down on top of the new parchment paper. Then, carefully remove the paper that covered the bottom of the cake and place it loosely back on top. Let the cake cool until barely warm .

Once the bake is barely warm, gently, but tightly roll the cake lengthwise . Fold the ends of the paper in to enclose the cake and refrigerate until you are ready to assemble the cake.

While in Great Britain, they are called Swiss Rolls. But, dont be surprised if you also hear it called a roulade which is the French term for it.

It gets complicated from there. Because a roulade doesnt always have to use cake, and Swiss roll doesnt always have to use jelly. Well keep it simple though because cake and ice cream in any language is delicious.

Can I Use A Cake Mix Instead Of The Homemade Cake

I tried it and quickly found out that the answer is no.Haha.I learned the hard way so you dont have to. . Although the cake mix sheet cake turned outbeautifully, it just wasnt rollable. Being a food scientist by trade, of course I wanted to know WHY itdidnt work. .

So why does the homemade cake workand the cake mix doesnt? The threebiggest factors are the fat content, the number of eggs and the amount ofleavening agent.

Fat Content: The fatfrom the cake mix , makes a verymoist cake. Its soft and moist whichmakes it really difficult to roll up without crumbling. On the other hand, the recipe below has fatfrom the eggs, but thats it. Therefore,its not as light and airy, but rather more dense and pliable.

Number of Eggs: Thehomemade cake has 4 eggs. We all knowthat eggs have a lot of protein in them and using eggs in baked goods helpswith the structure of a cake. Therefore,the fact that the homemade recipe has more egg proteins in it, its a strongerstructure.

Leavening Agent: Although it likely depends on the brand of cake mix used, the cake mixhas more leavening agent . Therefore, the cake mix cake turned out to be much more light and airy,making it difficult to roll up.

Cake Roll With A Cake Mix

To keep this cake roll 100% easy I used a box mix for this recipe. If you have a chocolate jelly roll cake recipe you prefer to use by all means use it. But in the interest of saving time and making the perfect cake, I used a Betty Crocker Cake Mix.

Now be aware that a cake mix will make TWO cake rolls so youll have to divide the cake mix Youll have enough cake mix left to make another cake roll OR some cupcakes.

To split the cake mix simply weigh and then remove half. If you dont have a scale use cups and divide it as best you can.

If you want to use up that extra cake mix by making cupcakes, follow the package directions and cut the required amount of ingredients in HALF.

How to Roll a Cake:

  • dust a clean dish towel with powdered sugar
  • when the cake comes out of the oven instantly invert it on the dish towel
  • peel off the paper pan lining
  • begin rolling the towel on the short side, roll quickly and firmly but not too tight
  • once the cake is roll inside the towel, place it seam side down on a baking tray to cool
  • once its cool carefully unroll the cake
  • fill it to within 1/2 on each long side and one inch on the short outer seam
  • roll up carefully around the filling, be sure to clean off any extra filling that squeezes out
  • cover in plastic wrap, store in the freezer for ease of cutting, whether your filling is ice cream or just cream or jelly

Perfect Swiss Roll Cake

My Reeses Ice Cream Cake was all for peanut butter lovers, and my mocha ice cream pie was all for coffee lovers and this Snickers Ice Cream Cake is for caramel lovers. But this ice cream cake has something for every taste. The Swiss roll cakes make up each cake layer and in between we have strawberry ice cream, strawberry ice cream topping, vanilla ice cream, marshmallow topping, chocolate ice cream and chocolate ice cream topping.

The assembly of this dessert is simple, it just takes time. I cut my rolls in half and arranged them cut side up. I spread a generous amount of strawberry ice cream over top followed by the strawberry ice cream topping. I then place this in the freezer to set, I would give it at least an hour. Then top with the next round of halved cake rolls. I would freeze this again for about 10 minutes. I found it easier to spread the ice cream over frozen cake. Repeat the process with the vanilla ice cream layers and the chocolate ice cream layers. Your top layer will be cake rolls halved, but set cut side down. Place the cake in your freezer for several hours . My frosting is Cool Whip, which I spread on top. I allowed the entire cake to freeze before serving.

The Swiss Rolls cakes make the perfect cake layer, they stayed tender and soft and held the ice cream layers together nicely . This summertime treat is easy and holds something for everyone for some that something might just be a bit of nostalgia.

How To Make Ice Cream Cake Roll

  • Once the cake is out of the oven, place a thin kitchen towel on a flat work surface.
  • Sift 2/3-3/4 cup of powdered sugar on to the towel. You dont need to cover the ENTIRE towel. But it needs to cover enough space to fit the cake. Dont be shy with the powdered sugar. If you think 3/4 cup isnt enough, add more. The powdered sugar prevents the cake from sticking to the towel. Be generous.
  • Turn the cake onto the powdered sugar lined towel. GENTLY roll the cake and towel together. Rolling the cake while warm creates muscle memory if you will, for the cake.
  • Once the cake has cooled, unroll the cake and add the softened ice cream. My homemade creamy vanilla ice cream tastes amazing in this cake roll! I pull my ice cream out of the freezer 15 minutes or so before I plan on spreading it over the cake. You want the ice cream to be workable.
  • Gently spread the ice cream over the cake until you have achieved an even layer covering the cake. Just remember, if you add a lot of ice cream, you wont get much of a swirl effect. Ive made this cake multiple times, once with A LOT of ice cream and then with 16 oz of ice cream . Both tasted great! So do whatever floats your boat.
  • Roll the cake and ice cream up. Cover with aluminum foil and immediately place in the freezer for 4-6 hours or until firm.
  • Serve with hot fudge, powdered sugar, or crushed candy canes.
  • Or if its for my birthday dessert Ill add cookies n cream ice cream. This dessert is very customizable, so have fun with it!!

    Directions for making this Easy Frozen Oreo Dessert Cake Recipe:

    Preheat oven to 350 and line a 10x15x1 baking sheet with parchment paper. Spray the parchment paper with nonstick cooking spray. Set aside. Line 1 muffin tin with 5 paper liners and set aside.

    Add eggs to a mixer and beat on high for 5-6 minutes until bubbly and frothy.

    Add cake, water and oil. Beat for 30 seconds on low and scrape down the sides of the bowl. Beat on medium for 1 minute until combined well.

    Pour 3-1/2 cups of batter into prepared baking sheet.

    Spread batter evenly.
