to be honest, i am not a huge fan of ice cream cake recipe but i have to admit it is one of the simplest eggless cake recipes. the main advantage of ice cream bread recipe is there isnt much hassle to prepare the cake batter. in this recipe i have added maida and baking powder to the melted vanilla ice cream. but if you have self raising flour, you can totally skip the baking powder and salt making it even more easier. in other words, self raising flour is the combination of maida and baking powder + salt with proper quantities.

  • Line a springform pan with foil and grease, preheat oven. You can also wrap a wet cake strip around the pan if you want a perfectly level cake.
  • Whisk dry ingredients for the cake. Add wet ingredients then mix.
  • Pour into prepared pan and bake until set. Let cool completely.
  • Spread fudge sauce over and freeze.
  • Spoon then spread press slightly softened ice cream over top and freeze.
  • Remove cake from pan.
  • Make sweetened whipped cream and spread over cake.
  • Garnish with sprinkles or chopped chocolate and freeze until firm.
  • Cut into slices and serve quickly so it doesnt melt.

    Once enough time has passed for the first ice cream layer to become full frozen, you can put the second tub of vanilla ice cream out to soften up.

    Using the same method, when the tub of ice cream is at the right consistency, dump it into mixing bowl and smooth it out by stirring with a stiff spatula.

    How To Make Ice Cream Cake

  • Combine the dry ingredients, then stir in the egg, oil, and vanilla until combined. The batter will be a bit dry, but should be completely moistened. An electric or stand mixer makes easier work of this, but isnt required!
  • Add the milk and stir until the batter is evenly combined. Make sure you scrape the sides and bottom of the bowl, thicker/denser portions of batter like to hide out there and, if not incorporated, will yield a lumpy, sunken cake!
  • Slowly pour in the hot coffee and gently stir until incorporated. Again, watch the sides and bottom .
  • Divide the cake batter between two greased, floured, and parchment lined pans and bake for 30 minutes.
  • Combine all ice cream ingredients except whipped cream and sprinkles, then whip the heavy cream in a separate bowl until it reaches stiff peaks. This means the mixture will be thick and fluffy and will resemble store-bought Cool Whip.
  • Add the sprinkles and condensed milk mixture into the whipped cream and fold until the mixture is cohesive.
  • Bring one cake layer out of the freezer, place it on your serving platter, and wrap a cake collar securely around it. Note:I know not everyone keeps cake collars handy , so of course I have instructions on how to do this without one, just head to the recipe!
  • Pouring the entire ice cream mixture over your cake layer.Itll seem like a LOT of ice cream, but I promise its not too much!
  • Prepare your whipped cream frosting and frost/decorate the outside of your cake. Voila thats it!
