Material / Heating: Typical Cast Iron
Made from cast iron, this is an incredibly sturdy pan that will hold up to decades of use. The pan came pre-seasoned, so it was ready to use right away. Still, I had space in the oven and a little time, so I gave it a quick extra seasoning in the oven. Every time I used it and cleaned it, I gave it a light coating of oil. While I didnt cook greasy foods in the pan, pie crusts have oil in them that will continue seasoning the pan as its used.
While I’ve made plenty of pies, I had never made one in a cast iron pan. I’ve used ceramic, glass, heavy-duty aluminum, and stainless steel pans, and even disposable aluminum pans, but until now, I’d never considered cast iron. Now that I have, it makes perfect sense. It holds heat well, it heats evenly, and it promotes browning. Its also nonstick, so slices of pie wont fight to stay in the pan.

What To Cook With Cast Iron
Cast iron cookware is extremely versatile. It has a unique ability to hold onto heat longer than other materials and withstand extended abuse in the kitchen. The consistent heat enhances different flavors, also allowing for better searing and browning. Cast irons heat retention is also a plus when youre trying to hold a low temperature, said Nate Collier, a trained chef and cookware brand Le Creusets marketing director. After youve seared something and you want to hold a really slow simmer to get super tender results, youre also going to hold it better with cast iron, Collier explained.
The only thing these pans arent great for is boiling water or steaming, Gulotta jokes. Other than that, cast iron cookware is ideal for roasting, searing, deep frying, baking, and braising.

What Is Cast Iron Cookware
All cast iron cookware products share one significant property: Theyre cast from molten steel and iron, in contrast to non-cast iron cookware thats made of aluminum or stainless steel.
Not only does this process allow them to go straight from the stovetop and into the oven or over a fire but it also turns them virtually indestructible. Bridget Lancaster, host of Americans Test Kitchen explained the casting process results in one solid piece of equipment: That means less little pieces that could individually fail or break off. The casting process also allows products to maintain both high and low temperatures evenly for everything from searing to simmering. This combination of durability and versatility has Grace Young, author of Stir-Frying to the Skys Edge, calling cast iron a kitchen workhorse. Cast iron cookware generally falls into two categories:
- The dutch oven, a deep pot with a tight-fitting lid thats traditionally made of cast iron or enameled cast iron
- And everything else, including pans, skillets, bakeware, and griddles
Its one of the best kitchen investments, likely to be handed down through multiple generations, said Young. If you use it with care and keep it properly seasoned, it will repay you with decades of delicious meals.
My Overall Thoughts On The Lodge Cast Iron Pie Pan
I love this pan. It feels like an heirloom piece, and provided I treat it well, it will be. Related: How To Season a Cast Iron Skillet
My favorite part about any pie is the flaky crust, so this was a huge bonus for me. I suppose I could have been using one of my many cast iron skillets all along, but I like that now I have a dedicated piece for pies those handles are a total must for taking pie out of the oven. Frankly, I dont know how I ever functioned without them.
I wont be tossing out my glass pie plates , but I have a feeling Ill be reaching for my cast iron pie plate most often. In fact, Im already planning on using it to put a bowlful of apples to good use!

Cons Of The Lodge Cast Iron Pie Pan
Mind The Skillet Size
The math of baking times, temperatures and measurements are far more unforgiving than math of regular cooking. Because of this, its best to stick with 9- or 10-inch cast-iron skillets. Nearly every pie recipe is tailored to the standard pie pans dimensions nine inches wide and one-and-a-quarter inches deep. The 9- and 10-inch Lodge skillets are both just about two inches deep, and as close as youll get to the traditional pie pan shape.

Temperature Limits And Capacity
Depending on the knob of a covered vessel, a Le Creuset cast iron product, for example, should be able to withstand up to 500 degrees in the oven and be broiler-safe. But thats not true for all brands so make sure to check the manufacturers specifications. If youre investing in cast iron, try to find one without strict or low limitations in that regard. I think its really odd to buy a cast iron pan that has a limit of 400 degrees, said Lancaster.

Lodge Seasoned Cast Iron Pie Pan Vs Emile Henry Ruffled Pie Dish
I’ve loved the large ruffles on the Emile Henry Ruffled Pie Dish for a long time. It looks impressive, and the pan comes in a variety of colors to match tableware, kitchen décor, or holiday themes. Its also breakable and more expensive than the Lodge pan I tested. The Emile Henry is the pie dish that comes out for special holidays, events, and special celebrations, then is carefully stored to keep it safe. The Lodge is the pan for family dinners, quiche lunches with mom, and for all kinds of everyday events. If theres only room for one pie pan, the Lodge is my choice for family meals and as a family heirloom for generations to come.
Two rolling pins up!
While the Lodge 9-Inch Seasoned Cast Iron Pie Pan might not be the prettiest for serving at an elegant table, it works well, its virtually nonstick, and it is incredibly durable.
