New to the table are seven vegan flavors such as strawberry cream, caramel swirl, and peanut butter fudge, which are also around 300 calories per pint.

I went ahead and tried the birthday cake, cookie dough, cookies and cream, and chocolate flavors of Nicks light ice cream from Ralphs, and I can say that they are definitely worth a try. As an ice cream lover, I have to admit that the swedish ice cream makers at Nicks are doing Gods work. In comparison to another popular light ice cream brand, Halo Top, Nicks ice cream is much more dense and creamy. It does not freeze as hard or get an icy texture like Halo Top and is not as fluffy as many Halo Top flavors tend to be. As for the taste, Nicks is on the sweeter side but captures the flavors they market. The birthday cake is my favorite, and Ill admit that the cookie dough and cookies and cream flavors taste very similar. Although I am a vanilla girl, the swedish chocolate is rich and hits the spot for chocolate cravings.

Nicks Mint Chokladchip Chocolate Chip

At first glance, youll notice this ice cream is light in color, not bright green like many mint-flavored products. The mint flavor is prominent and refreshing, but not overpowering.

You do have to dig a bit to find the larger chocolate mix-ins, but this is common with light ice creams.

Fortunately, I did not detect any strange aftertaste from the sugar alternatives.

Overall, I really like this flavor. I would definitely have this again.

I was happy to see that this pint has a peanut butter-flavored ice cream . This smart choice helps keep the mild peanut butter flavor the star of the show.

The description mentions tiny peanut butter cups, but the mix-ins I encountered seem more like little chocolate chunks.

As with the other flavors, there was no aftertaste and the ice cream had a creamy, pleasant mouthfeel.

Swedish ice cream. I didn’t know it was a “thing”, but given my love of ice cream, I was excited to discover a new brand, Nick’s.

There are two things you might notice when you first look up Nick’s ice cream. It might be the “funny” spelling of things, like “Mint Chokladchip”, “Peanöt Butter Cup”, or “Birthdäg Cake”. Or it might be the nutrition stats, that hover under 300 calories … per pint. At least one of these things is certainly part of what makes the ice cream “Swedish” … at least in name.

“Sweet Natural Science. All our sweeteners are carefully crafted from plants selected for their specific flavor. But it’ll probably just taste like delicious ice cream to you.”

So what makes Nick’s so low calorie? It is the use of interesting sweeteners, in part. Not just Stevia, but also soluble corn fiber , and erythritol . Add this up, and you get a pint for the usual calorie load of a single scoop. Of course, there are many low-cal ice creams on the market these days, and, well, most really aren’t very good.

I was eager to try some flavors, and selected a few pints fairly randomly when I saw them at the grocery store, without doing research first.
