Can I Freeze Gluten

Yes, you can freeze this gluten free bread loaf. After it has completely cooled, slice the loaf into equal slices. We like to place a piece of parchment paper or in between each slice, so it’s easy to pull it out of the freezer.

You can either defrost the bread in the microwave or you can let it sit at room temperature until it has thawed.

An Honest Disclaimer About This Gluten Free Bread

I’m not going to make any absurd claims: this is not to the standard of some of the master gluten free bread makers, such as Naomi Devlin or The Loopy Whisk.

But while their recipes are EXCELLENT, they use a lot of different flour blends and at the moment, getting hold of gluten free flours like this is just not realistic.

In fact, a lot of gluten free products are difficult to source so I have had to rely on my storecupboard at home.

So while this is not some gluten free artisan loaf recipe, what this IS, is a basic gluten free bread recipe which will suit your needs for a sandwich or slice of toast in the morning.

The best thing you can do is bake this gluten free bread recipe with enough time to give it 30 minutes to an hour to cool before you eat it.

This way you’ll still enjoy the warm dough and freshness from the oven.

If you can’t eat this within a few hours of baking it, I recommend using it for toast. I personally prefer all gluten free bread as toast, but this is where this loaf really comes into its own.

I had always wanted to try making it in a Pullman loaf pan. That was the only way to see if I could get those perfect, no-dome slices that are truly made for sandwiches.

Baking in a Pullman pan also tends to make softer bread. The moisture in the bread is trapped inside the pan during baking, and the bread absorbs it as it bakes.

The photo below is a loaf baked in a 2 pound Pullman loaf pan. The photo above is the bread rising in a 1-pound Chefmade brand Pullman loaf pan .

You can make a 1-pound Pullman loaf, or a 2-pound Pullman loaf. The baking time is nearly the same, as the pans are much longer but also considerably more narrow.

Why Is Kims Gluten Free Bread Flour Blend In Grams And Not Cups

I developed my blends in grams because its so much more precise AND unbelievably easy to weigh ingredients than to measure by volume. My blends dont translate very well to cups. I sure dont have an 18th of a cup measurement, do you? I strongly suggest you invest in a scale and weigh your ingredientsyoud be surprised at how easy it is and youll most likely never switch back.

How Do You Make Gluten

  • Activate the yeast. Combine the yeast with the sweetener and warm water. Let it hang out to activate for about 10 minutes.
  • Make the psyllium gel. Mix together the psyllium, olive oil, and water. Whisk and let it set for a few minutes until thickened and gel-like.
  • Mix together your dry ingredients. In a large mixing bowl or the bowl of a stand mixer, mix all of your flours, starches, and salt. Whisk to combine.
  • Combine everything and form into a dough. I mix everything in my stand mixer with the dough hook, but you can also do this by hand. If mixing by hand, I like to use a dough whisk to get it combined. Then, turn it out onto the countertop and use my hands to knead the rest of the flour in.
  • Bulk ferment the dough for 1 hour. I leave it in the mixing bowl, covered with a clean tea towel, to rise for one hour. It should double in size and before light and fluffy.
  • Re-knead and shape the dough. After the bulk ferment, youll knock the air out of the dough and knead it into your desired shape/shapes. Then, youll place it in the banneton or loaf pan for the final proof.
  • Rise, score, andbake! Let the loaf rise for one more hour, and preheat the oven to 425 while it rises. Once the bread has risen, score it with a knife or lame . Then, place into your baking vessel. Bake for 1 hour and 15 minutes, removing the lid for the last 15 if baking in a Dutch oven.
  • Slice and eat! Definitely the best part 🙂

    What Size Of A Pan Do I Use To Make Gluten Free Bread

    This gluten free bread recipe was developed using a 9 x 4 inch metal loaf pan. You can use a different size loaf pan but you’ll want to watch the cook time. Also, it won’t have the same rise, depending on the size.

    You can also make this bread recipe in a glass loaf pan lined with parchment paper. Metal and glass pans transfer heat differently and gluten free bread loaves typically have a thicker crust when baked in a glass pan.

    Gluten Free Bread Ingredients & Substitutions:

    Millet Flour: Millet flour is such a wonderful gluten-free flour to bake with. Its high in protein, which actually helps to yield a really tall and fluffy gluten-free sandwich bread. This is why I tend to prefer to bake gluten-free bread with millet flour . If you dont have millet flour, you can also substitute in sorghum flour. However, I prefer millet!

    Tapioca Flour: Sometimes, tapioca flour is referred to as tapioca starch. Bobs Red Mill has both, and they are identical, so you can use either interchangeably. This helps our gluten free bread to have a soft texture its really quite amazing! You can substitute in arrowroot starch if you cant find tapioca, but the best results will be with tapioca.

    Buckwheat Flour: This helps to not only provide a bit more structure to our gluten free sandwich bread recipe, but to also add a depth of flavor. Buckwheat has a slightly nutty flavor without containing any nuts, and the result tastes almost like a hearty rustic sandwich bread. You can also substitute in more millet flour this would be especially good for making vegan French toast!

    Instant Dry Yeast: I strongly recommend using instant dry yeast over dry active yeast. The reason being is that your gluten free dough will rise so much faster than using dry active yeast. Not only will you be able to make your gluten-free bread recipe faster, but youll also know whether or not the yeast is actually working with the gluten free flour blend!

    Salt: You can use salt or sea salt.

    What Is The Best Type Of Yeast To Use In This Gluten

    How to Make Gluten-Free Bread | Dear Test Kitchen

    This recipe uses instant yeast or rapid rise yeast. I use Fleshmans Rapid Rise Yeast. It is important to use the rapid yeast and to make sure it is at room temperature.

    Rapid rise yeast does not need to be proofed and can be added directly to the flour. It is still important to use warm water because yeast is a live organism and thrives in a warm environment.

    Heat the water just until it feels warm to the touch. Or use a thermometer to check the waters temperature. The ideal temperature for instant yeast is 100°110°F. If the water is any hotter than that, it could kill the yeast and your bread will not rise.

    If you want to make sure that your instant yeast is still active, you can proof the yeast before adding it to the flour mixture. Add the honey to the warm water and stir until it dissolves.

    Then add the yeast to the water mixture and allow to sit for 5 minutes until bubbly. This is not a necessary step. This is only needed if your yeast is not new or fresh.

    I have not tried active dried yeast in this recipe. Active dried yeast requires a proofing step. Active dried yeast also requires a longer rising time.

    How I Came Up With Gluten Free Artisan Bread

    I wish I could say that the whole idea behind this bread was mine and solely mine. But that would be a lie. A while ago I came across the cookbook from Jeff Hertzberg, M.D. and Zoe Francois called Gluten Free Artisan Bread in Five Minutes a Day. Their idea for artisan bread taking only five minutes a day was absolutely revolutionary!!

    I decided to use my gluten free pizza crust dough in place of their recipe for gluten free bread dough. WOW!!! The bread was GLORIOUS!! And they were so right about the 5 minutes-a-day thing. It literally takes only FIVE minutes of hands-on time!!

    Ingredients In Vegan Gluten

    Water – Use warm water.

    Syrup – I used maple syrup, but you can use coconut sugar or organic granulated sugar.

    Yeast – Use instant yeast.

    Aquafaba – Use aquafaba. This is the water in which chickpeas or other pulses are soaked in.

    Lime juice – Use a lime for freshly squeezed lime juice.

    Flour – I used gluten-free all-purpose flour and oat flour. I have not tested it, but if you have an oat flour intolerance, try using buckwheat flour or more sorghum flour.

    Baking powder – 2 tsp. baking powder. Make sure it’s gluten-free.

    Salt & oil – 1 tsp. salt and ¼ cup canola oil.

    Vinegar – 2 tsp. apple cider vinegar.
