Whats the first step to making chicken pot pie? The chicken of course! You have a few options here you can cook your own chicken or buy a rotisserie chicken. I simply cooked one pound of chicken breast in boiling water for this recipe. After the chicken is cooked and diced it gets combined with the frozen vegetables, mushroom soup, chicken broth and green onions. For the veggies, I use a mixture of carrots, corn, green beans and peas, but you could also add other vegetables like celery and onion if you prefer.

Next, make a simple bisquick dough for the top layer. In a small bowl, mix the bisquick with milk and an egg. Spread the bisquick layer on top of the pie, using a spatula to cover the entire thing.

The whole thing goes into the oven until the crust is golden brown . Allow the pie to cool for 10 minutes before serving. Dinner perfection!

  • Vegetables: If youve got leftover cooked vegetables, use them instead of the frozen vegetables. Feel free to swap out for a different variety. To bulk this recipe up I often increase the amount of vegetables I use to 2 to 2.5 cups.
  • Milk: To keep this pot pie lower in Weight Watchers points opt for low fat or skim milk. If you’d like to make this recipe dairy-free, replace the milk with your favorite dairy free alternative such as almond, oat or cashew milk. They have a neutral flavor but similar texture, so they won’t affect the filling consistency.
  • Original Bisquik baking mix is a staple in my pantry. If you prefer, here is a recipe for making DIY Bisquick from scratch.
  • Soup: The recipe calls for a can of cream of chicken soup. I always opt for the Healthy Request soups which are lower in sodium and fat. If you are not a fan of canned soups you could always make your sauce from scratch using butter, flour, milk and chicken broth.

  • Prep the crust. Follow the directions on the pie crust package. I use the rolled Pillsbury crusts so they need to sit out for a bit to soften first. Then grab your favorite pie plate and form the crust in the bottom. It doesnt have to be perfect chicken pot pie it totally homey and rustic. If youre really itching to try homemade pie crust you can totally do that too.
  • Make the sauce. There are a few ways you can go about this, but my preference is to make a thickened sauce from scratch. It tastes so much better than canned and doesnt have all of the preservatives and other junk they put in there. The sauce starts with a roux, which is just flour cooked in melted butter. I also cook some diced onion and garlic with the butter to add flavor to the sauce. The roux will thicken chicken broth and half and half .
  • The filling. Cook up some chicken and dice it or shred it. Use your own pre-cooked or a rotisserie chicken you just need 2-3 cups. If you need to cook some quickly, boil water in a large pot and add a couple tablespoons of salt. Add a pound of chicken and boil for about 20-30 minutes. Stir the shredded chicken and frozen veggies into the sauce. Be sure to taste the sauce and season with salt and pepper as needed.

    First, measure out all your ingredients and chop up your chicken.

    Your dairy ingredients need to be cold, especially for the crust, so take those out of the refrigerator right before you get started.
