The dish was slightly harder to clean than my number one pick and had some stickage issues with the graham cracker crust, but it was nothing a little scrub couldn’t take care of.

There are a lot of different opinions about whether or not you should grease a pie pan, but generally speaking, a quick spritz of cooking spray on the bottom of a pie dish will help keep your pie from sticking to the bottom of the panbut there’s no need to overdo it. Many people believe that greasing a pie dish will change the texture of your pie crust, making it less flaky. So if you’re more concerned with a flaky crunch than easily removing slices of pie, feel free to skip the cooking spray. Preheat, preheat, preheat. You wont be able to reap the benefits of a baking steel if it isnt hot. Ron Silver, chef and owner of Bubbys in New York City, recommends preheating your baking steel for at least an hour before placing your pie on top. For pie, Id preheat the baking steel 50 degrees higher than the baking temperature, he said. If your recipe calls for preheating the oven to 425 degrees Fahrenheit, set the oven to 475 and let the baking steel heat up with the oven, then turn the oven down to 425 when its time to put the pie in.

Baldwin also stresses the importance of a good, long preheating when using a baking steel. I keep an infrared thermometer in my kitchen and check the temperature of the surface of the steel after about 30 minutes, she said. When in doubt, let it preheat a bit longer to be sure, since an under-heated baking steel will do nothing for you. Baldwin preheats her baking steel to the baking temperature of the pie, not higher. A baking steel is a heavy piece of steel that holds and conducts the ovens heat directly to whatever is placed on top of it . Its effective because steel is a better conductor of heat than air and when youre baking pie crust, getting that direct heat on the bottom crust will help it to brown and bake through faster, which is key to preventing soggy bottoms. It works similarly to the concept of a ceramic pizza stone, but baking steels have a higher thermal conductivity than ceramic.

Baking steels are helpful, especially in a non-convection home oven, because most ovens have hot and cold spots and a steel will help even out the heat once the oven is preheated, Kierin Baldwin, a pastry chef-instructor at the Institute of Culinary Education, told HuffPost. Where they really shine is when you are baking items that do best with a lot of heat being conducted from below. Placing your pie plate directly on the steel to send a lot of heat directly to the bottom of your pie crust will help it bake through before the juices in your pie have a chance to make it soggy.

Beyond pie, baking steels are a great tool for cooking foods like pizza and cookies, which are thin and bake quickly. Baldwin pointed out that larger foods with longer bake times, like bread, can end up a little too dark on the bottom if you arent careful.

Other Pie Plates I Tested

USA Pan Aluminized Steel Pie Pan, 9 Inch

The USA Pan Aluminized Steel Pie Pan was also a favorite. Pies baked beautifully in this metal plate. It has a ridged bottom meant to facilitate air circulation and add warp resistance and it did a wonderful job browning the bottom crust of the berry pie. The BPA-free silicone coating helped slices slide right out, but scratched after using metal utensils. USA recommends hand washing the pan which could be a turn off for folks whod prefer to use a dishwasher.

OXO makes a solid borosilicate glass pie dish which is thermal shock resistant, meaning that it can go from the freezer to the oven safely, but its 2-inch depth made the crust of the berry pie shrink down into to the pan and I imagine most recipes not specifically written for a deep-dish pie pan would suffer the same fate. The rim was also a bit trickier to hold onto than the Pyrex, which is why this was my second favorite glass dish. However, if you like to take your pies to go, this dish comes with a very handy cover.

The Anchor Hocking 9.5 Deep Dish Pie Plate also proved to be a bit too large to handle the recipes I tested it with, and the crust on the blueberry pie slumped down into the dish which made the slices tricky to remove. However, the two little handles on this glass dish made it easy to move in and out of the oven without disturbing the crust and made me wish the Pyrex had that little feature as well.
