This chicken pot pie recipe is loaded with flavor. Its got flaky pie crust and a buttery creamy chicken pot pie filling with chicken breast, a mix of fresh and frozen vegetables, and a mix of dried and fresh herbs.

I initially wanted to make an easy chicken pot pie. So, I started out using refrigerated pie dough, all frozen vegetables, and all dried herbs. That was easy, but it really needed some bright fresh flavors.

So, instead of making the easiest recipe, I decided to make the BEST chicken pot pie recipe.

Using fresh vegetables and some fresh herbs in the filling gives this pot pie so much flavor that its ok to take a short-cut with the crust and use a pre-made refrigerated pie crust.

Of course, if you have the time to make your own homemade pie crust, that would be amazing too.

Making The Pie Filling

To make the filling, we toss blueberries with a mixture of sugar, cornstarch, allspice, cinnamon, salt, and a little lemon zest. When everything is well tossed, we tumble the filling into a prepared crust.

As far as the crust goes, we prefer to use this recipe for all-butter pie crust. Its delicious and bakes up to be very flaky.

Can I Put A Frozen Pie In The Oven

Preheat the oven to 425 °F and place the pie on a foil-lined baking sheet. However, its best to play it safe and use a disposable metal pie pan when baking a frozen pie. Some people suggest thawing the pie for about 25 minutes before you place it in the oven because it helps the pastry flour cook better.

    Its been so long since Ive eaten chicken pot pie, and Im pretty sure the last time I did the experience was underwhelming. I really had no intention of making it, but my daughter requested it, and seeing that I had all of the ingredients on hand in my kitchen, I took that as a sign. So, I went on a journey to create the most excellent chicken pot pie possible.

    For such a simple and comforting meal, it involves many key fundamental culinary techniques, and they all need to be executed properly to achieve a fantastic end result.

    There are many ways to go about chicken pot pie, but I found this way to be the most approachable for my busy lifestyle. And, I wouldnt change a thing about it! Seeing as how we devoured the entire thing in one sitting, my family was obviously more than pleased with the end result, which was so satisfying.

    Lets break the recipe down into the different steps:

    The Chicken

    I had some random pieces of chicken in my freezer, so I ended up using a couple of boneless skinless chicken thighs as well as a few airline breasts . I personally prefer to use all dark meat because of the richer flavor, but I was happy to utilize the chicken from my freezer. As you can see, you can use any cut of chicken you like in this recipe. Anything works!

    I roasted the chicken at a high heat in order to develop some color and most of all, flavor. Once the chicken was cool enough to handle, I used my hands to shred the meat into large bite-sized pieces.

    The Crust

    You can make this easy chicken pot pie gluten-free or dairy-free, swap out the vegetables, or save this recipe for Thanksgiving and use up leftover turkey in place of chicken. I use a basic medley of peas, carrots, onions, and celery in this chicken pot pie, but feel free to add things like sliced mushrooms, small diced potatoes , or your favorite root vegetables.

    In a pinch, this recipe will work with a store-bought double pie crust, but we highly recommend using a homemade all-butter Pie Crust. It is 5 ingredients and takes just minutes to make. You can also make it a couple of days ahead.

    Our homemade crust rolls out easily and it never gets soggy when baked. The bottom stays crisp without needing to pre-bake. We use this same pie crust for savory and sweet pies like Apple Pie, our juicy Cherry Pie and Blueberry Pie.

    Can you refrigerate Chicken Pot Pie before baking?Yes! Simply make as directed including adding the pie crust. Cover with plastic wrap or foil and store in the fridge for up to 5 days. When you are ready to bake it, preheat your oven, remove from the fridge, and add the egg wash . Bake at 400°F for 20 minutes covered with foil, then remove foil and bake an additional 35-40 minutes until crust is golden brown and sauce bubbling inside.

    Make Chicken Pot Pie Ahead Of Time

    One thing I love about this recipe is that its so make-ahead friendly. Prepare the filling and top it with the dough as early as a day ahead. Wait until youre ready to bake the pie to brush the egg wash on. The egg wash will dry out and crack as the pie bakes if you brush it on too early.

    To freeze this pie, assemble the pot pie, but dont brush the egg wash on or bake it. Cover the unbaked pot pie with foil and freeze for up to three months.

    Thaw the pot pie in the fridge overnight. Thirty minutes prior to baking, remove the dish from the fridge to give it time to warm upremember, shattered dishes are no bueno. Brush the egg wash on the dough and bake for 30 minutes in a 400°F oven.

    Our homemade chicken pot pie calls for a double crust, which means crust on both the bottom and top. My recipe for Millies Perfect Pie Crust hasnt failed me yet and includes instructions for making it by hand, with a stand mixer, or with a food processor. It comes together quickly, but its best to make the crust first and let it chill while you make the filling.

I like to fold both edges inward to create a more rustic looking edge on my chicken pot pie. Alternatively, you can crimp them with a fork or pinch them with your fingers if you prefer.

    While not necessary, Im partial to decorating the top crust with leaf shaped cutouts, done freehand with a knife. If you dont have a steady hand, a cookie cutter works too, or you can skip them all together. The egg wash gives you the shiny, golden finish so dont skip it! Whats more important is to cut four one inch slits in the top crust to allow the pie to vent. Do this after the egg wash to prevent tearing or resealing of the crust.
