The foundation paste took me about 10 minutes to make, and then it rests in the fridge for about 15 minutes.

Once it rested, you roll it out , line the pie pan and make some sort of decorative edge.

In Ranhofers words, you raise up the edges, pinch all around, and leave stand in a cool place for twenty minutes in a cool place.

While the dough was standing in a cool place , I mixed up the custard, which literally took maybe 5 minutes.

I let it sit until the 20 minutes were up , spread a thick layer of desiccated coconut on the bottom, and then slowly strained the custard into it.

It baked about 45 minutes at 350F, and then it took awhile to cool. But I think serving it warmnot hotis an excellent plan.

So, from start to finish without breaks , plan on about 1 1/2-2 hours from no dough to pie out of the oven. Then add on cooling time.

The same for holidays that innocently glorify different ethnicities and national origins.

The only holiday that ranks with Thanksgiving as an inspiration, were we had better be immersed in the lessons derived from it, is Martin Luther King Jr. Day.

Choose A Sweetness Level

Traditional Coconut Custard Pie is very sweet. Most recipes call for a full cup of sugar. The pie from the cider mill was much less sweet, so my tastebuds expect less sugar.

I like my pie lightly-sweetened with 1/2 cup of sugar . Its just enough for me. If you like a sweeter pie, 3/4 cups of sugar is a nice step up, without being cloyingly sweet. If you love a very sweet pie, go for it with the full cup!

    You will probably want to read the rules through a couple of times. And note that everything is expressed in weights, so you will need an accurate kitchen scale . You will also have to trust the feel, especially of the dough.

    I ended up only using about 3/4 of the flour and maybe half the water, and it worked out perfectly.

    But, if you are not really familiar with making pie crust, you may be better off using a recipe that is written out conventionally and has been exhaustively tested, just to make sure you are successful.

    The pie is ready to leave the oven when the top looks puffed and golden, and the tip of a knife inserted into the center comes out clean. I say nearly because youll often get a bit of coconut clinging to the knife.

    • 1Soak coconut in milk for several hours to make coconut very moist. Set in refrigerator until ready to use.
    • 2Stir together sugar, flour, and salt. Set aside.
    • 3Beat the 2 whole eggs plus the additional egg yolk slightly. Add coconut/milk mixture and vanilla to these eggs.
    • 4Combine dry ingredients with milk mixture. Mix well. Add butter. Mix.
    • 5Beat remaining egg white until frothy. Brush this on unbaked pie shell.
    • 6Then carefully pour the custard into an unbaked pie shell. If you like shake a bit of nutmeg on top of the custard. Bake at 375 degrees for 25-30 minutes.
