Ingredients For Deviled Eggs:

- 6 large hard boiled eggs
- 3 Tablespoons mayonaise
- 1-2 teaspoons dill pickle juice
- 1/8 teaspoon ground black pepper
I always start with 1 teaspoon of pickle juice. Then, I taste the filling. If it needs a little extra saltiness and tanginess, I add another teaspoon of pickle juice.
If you dont have or dont like pickle juice, white vinegar or red wine vinegar are good substitutes. However, you may want to add a pinch of salt to the filling if you use vinegar instead of pickle juice.
Then Make The Filling
In a large skillet, brown the ground meat, breaking it up with a spoon or spatula until crumbled and cooked through. Remove it to a bowl.
Add the onion, celery, carrots and garlic to the skillet and cook them in the remaining grease from the ground meat until the vegetables are softened.
Sprinkle the flour over the veggies and stir to coat the vegetables. Add the tomato paste and stir, then add the red wine, stirring to scrape up any browned bits from the skillet.
Add the stock or broth, bay leaf, dried thyme and rosemary and stir until well combined. Let it simmer for 5 10 minutes, then remove the bay leaf.
Stir in the frozen peas. They will defrost quickly in the hot mixture. If you add them too early, they lose their bright green colour.
Add the ground meat back into the skillet and stir.

Can I Prepare Shepherds Pie In Advance
Yes, this is a great make ahead dish! You cook it, assemble and leave it ready to bake, or freeze it to make another night.
To Make Ahead: This is a great dish to prep and make ahead a few days in advance. Assemble and cover with foil. Refrigerate up to 2 days ahead, then bake in a preheated oven 400F about 30 minutes, or until heated through.
Leftovers: Store cooled leftovers in an airtight container in the refrigerator for up to 3 days. To freeze, transfer to a freezer safe containers for up to 1 month.

Preheat oven to 400°F, with rack at center.
Cover cubed potatoes with water and bring to boil, then salt water liberally and cook until tender.Warm milk and butter in small pot over low heat.Use a food mill to process the potatoes and add milk and butter, sour cream, chipotle paste, salt and pepper, or mash by hand, then beat with hand mixer.
Fill casserole with beef and chorizo, then top with potatoes and cheese. Bake until brown and bubbly.
Serve with chopped scallions and pickled jalapenos.
How To Make The Meat Filling
In a large skillet, heat oil over medium heat then add in the onions, carrots, garlic, rosemary, and thyme.
Cook this mixture for 2-3 minutes stirring regularly.
Now, add the meat and stir to combine. Cook the meat and vegetable mixture for another 5-7 minutes stirring regularly to break up the meat. Cook until there is no pink left in the meat.
To the skillet and meat mixture, add the Worcestershire sauce, green peas, corn, and tomato paste then stir to combine.
Season with salt and pepper.
Sprinkle the flour into the meat mixture and stir until it has dissolved.
Pour in the chicken broth and stir to combine, then reduce the heat to low and let simmer for 4-5 minutes or until thickened.
Set the meat mixture aside and preheat the oven to 400°F.

Keep it covered with foil, and bake for about one hour at 350F, or until heated all the way through. You can remove the foil for the last 10-15 minutes to crisp the potatoes up.
This shepherds pie will last for about 2 months stored in your freezer.

The sandwich version just has steak and onions, but I decided to boost it a bit for this casserole. I use ground beef instead of steak just because sliced steak can dry out when baked. Also, beef and onions wouldnt really fill out a casserole dish, so I added green bell peppers and mushrooms to the mix as well.
