CRAZY Milk Bar Pumpkin Pie Cake from Christina Tosi

makes 1 quarter sheet pan

55 g butter 4 tablespoons 40 g brown butter 2 tablespoons250 g granulated sugar 1 ¼ cups60 g light brown sugar ¼ cup tightly packed3 eggs110 g buttermilk ½ cup65 g grapeseed oil 1/3 cup2 g vanilla extract ½ teaspoon185 g cake flour 1 ½ cups4 g baking powder 1 teaspoon4 g kosher salt 1 teaspoonpam or other nonstickcooking spray

1. heat the oven to 350°f.2. combine the butter and sugar in the bowl of a stand mixer fitted with the paddle attachment and cream together on medium-high for 2 to 3 minutes. scrape down the sides of the bowl, add the eggs, and mix on medium-high for 2 to 3 minutes. scrape down the sides of the bowl once more.3. stream in the buttermilk, oil, and vanilla while the paddle swirls on low speed. increase the speed to medium-high and paddle 5 to 6 minutes, until the mixture is practically white, twice the size of your originally fluffy butter-and-sugar mixture, and completely homogenous. youre basically forcing too much liquid into an already fatty mixture that doesnt want to make room for it, so if it doesnt look right after 6 minutes, keep mixing. stop the mixer and scrape down the sides of the bowl.4. on very low speed, add the cake flour, baking powder, and salt. mix for 45 to 60 seconds, just until your batter comes together and any remnants of dry ingredients have been incorporated. scrape down the sides of the bowl. mix on low speed for another 45 seconds to ensure that any little lumps of cake flour are incorporated.

For my last big birthday, I ordered myself a birthday cake. I was 40.I was doing things my way. And since we were going to Manhattan for the weekend I figured I would get something I always wanted but never felt like a bazillion dollars just for shipping was worth it. Milk Bar Birthday Cake is the bees knees. Seriously. It is my all-time favorite cake everon the entire planetfor reals. I think about it all the time. I want it all the time. I live to far away but sometimes a bazillion dollars just for shipping seems fair and reasonable. I just need to come up with a bazillion dollars and then the price of the cake.

I love that this Apple Pie Layer Cake leaves all its secrets unveiled, theres no frosting covering up all the magic thats happening between the buttery layers of cake. Thats the way it should be. Let it all hang out, my cake friend. You have nothing to hide.

Attempt At Milk Bar Apple Cider Donut Cake

I wanted to share a recap of this attempt and maybe get some feedback as well.

I used the recipe from Rachel Rays site which I believe came straight from Tosi. recipe here

First step was to get some of the more commercial-grade things the recipe called for . I was not able to find clear vanilla extract but I dont think it impacted the finished product much. The quantities needed of the citric acid and yogurt powder were so small I nearly skipped but I really wanted to see how close I could get it to the real thing.

One ingredient I had to prep was used fry oil. I looked up a recipe for basic funnel cakes like you get at the fair and pulled that dough together and cut into 8 little fry cakes. I fried those and ate one with powdered sugar before tossing the rest but I figure that was the closest thing to infuse the fry oil with the right flavor.

The batter was the fluffiest cake batter Ive ever seen. Things I read online suggested that getting all the fats to incorporate was a delicate balance but I just made sure to pour the oil/buttermilk in slowly and wait for it to incorporate before adding more.

The donut crumb and frosting were straightforward. Assembly was easy. Getting the donut crumbs into the cute little donut shapes is not in the instructions but I just set aside some of the bigger crumbs and used those for decor.

Apple pie cake milk bar. If i could tell you one fall dessert to make this would be it. Caramel apple sheet cake this delicious apple cake is perfectly moist and has caramel frosting infused in each and every bite. A hearty 1 bowl vegan apple cake infused with gingerbread flavors and rolled oats.

I was very disappointed with this recipe as it was so highly rated by others. I had to add at least 12 tbs milk to get the ingredients to bind together at all and even then it was still so thick that i thought it was going to break my mixer the beaters of which were totally bound solid with the mixture. When i walk into the grocery store in the middle of september and see bushels upon bushels of every type of apple you can imagine im inspired to go through my huge stack of recipes and make every single one that includes apples.

Milk Bar’s Apple Pie Cake

As many of you know by now, my love for Milk Bar’s collection of cakes runs deep. I’ve made nearly half a dozen of their cakes, as well as their Crack Pie and Compost Cookies. I’ve also tasted tested their cake truffles and Cornflake Chocolate Chip Cookie at their store fronts. I’m basically a super fan.

If you’ve never heard of Milk Bar or never made a Milk Bar cake before, here’s what you need to know. First, there are a lot of elements that go into each cake. I certainly don’t say that to scare you off. I just want to prepare you. I usually take two to three days to make this cake. I know that sounds like a lot, and you can certainly make this cake in a day if you wanted to. However long you take to make it, just give yourself enough time to let the cake set in the freezer before serving it. These cakes don’t cut well at room temperature.

Second, it’s absolutely, 100% worth your time to make one of these cakes. Each one is full of flavor and texture, and will be a guaranteed crowd pleaser. Take a look at the picture below: you’ve got a layer of barely brown butter cake with an apple cider soak, topped with liquid cheesecake, pie crumbs and apple pie filling. All those layers are repeated a second time and then the cake is topped off with a pie crumb frosting. What’s a pie crumb frosting, you ask? This frosting is made by blending actual pie crumbs with milk and adding it to your butter and powdered sugar base. This cake literally tastes like apple pie!

To Assemble The Layer Cake

1. Put a piece of parchment or a silicone baking mat on the worktop. Invert the cake onto it and peel off the parchment or silicone from the bottom of the cake. Use the cake ring to stamp out 2 circles from the cake. These are your top 2 cake layers. The remaining cake “scrap” will come together to make the bottom layer of the cake.

2. Clean the cake ring and place it in the centre of a baking tray lined with clean parchment or a silicone baking mat. Use 1 strip of acetate to line the inside of the cake ring.

3. Put the cake scraps inside the ring and use the back of your hand to tamp the scraps together into a flat even layer.

4. Dunk a pastry brush in the apple juice soak and give the layer of cake a good, healthy bath of half of the soak.

5. Use the back of a spoon to spread half of the liquid cheesecake in an even layer over the cake.

6. Sprinkle one-third of the pie crumbs evenly over the liquid cheesecake. Use the back of your hand to anchor them in place.

7. Use the back of a spoon to spread one-half of the apple pie filling as evenly as possible over the crumbs.

8. With your index finger, gently tuck the second strip of acetate between the cake ring and the top 5 mm of the first strip of acetate, so that you have a clear ring of acetate 12.5 to 15 cm tallhigh enough to support the height of the finished cake. Set a cake round on top of the filling and repeat the process for layer 1 .

Milk Bar Apple Cider Doughnut Cake from Christina Tosi

So last year, I was at pub trivia night in Brooklyn and one of the questions was: Name all four members of the band, The Black Eyed Peas.

Ok well Fergie, obviously. Um, Alright, we got this. Uh, gosh whats his name the one with the, you know, I and thats as far as we got. Because NOBODY could remember what the other two even looked like. Answer: Fergie, Taboo and Ohhhhhh yah, I totally didnt know that.

What I do know is that it makes for a nice segue into this apple-de-app dessert, Apple Pie Layer Cake aka Momofuku Milk Bar Exam no.3! no.1 was cookies, no.2 pie, and now CAKE. But Momofuku Milk Bar cakes are unlike any other cake Ive ever seen or made. Christina Tosi is like the Betty Crocker of the future, so of course her cakes are assembled in a cake ring, wrapped in acetate sheets, and presented with their sides unfrosted.

Although I usually like a perfectly frosted cake, Im marveled by this presentation. It reminds me of a trifle in which you see each layer of the individual components of the dessert. But let me tell you, I had a bit of a doozy tracking down the equipment.

All in all, it took me about 4.5 hours of work not that bad. Just turn on a nice album and go to cake-town. It goes without saying that this cake is totally worth it. Each component is delicious on its own but together they are just heaven.

Apple Pie Cake Truffles

I think its pretty funny how non-committal we seem to be about desserts these days. The cupcake was one thing, but for many grown ups I sometimes just want a bite. One bite. You know- on those days when you have a horrible sweet tooth but a whole slice of cake feels like over-kill. There is even a cupcake shop in the city that sells teeny itty-bitty quarter sized cupcakes.for $1.00 each thats a pretty amazing business idea huh?

Anyway, back to the subject. Apple Pie Cake Truffles. All the flavor of Apple Pie in a bite sized little morsel. Funny maybebut also 100% delicious. I know these pictures may not do them justice, but these really and truly taste like a bite of Apple-Pie heaven.

We start with a brown butter cake which provides a nice neutral backdrop for all the other flavors. After crumbling it up, A cinnamon-y apple cider soak and actual apple pie filling are added and combined together. Each truffle is coated in white chocolate and a healthy dose of buttery, salty pie crust crumb which adds the perfect finishing touch.

Ive been adding a bundle of these to all my holiday gift boxes and I think theyre the perfect addition to a holiday cookie spread. I for one think that cookies hog all the attention this time of year, when really any bite-sized no-fork-needed dessert seems welcome on the dessert tray as far as Im concerned. A little cellophane bag and twine bow are perfect for packing these up as cute as can be dont you think?
