What Makes This Dairy Free Gluten Free Chocolate Cake So Special

Gluten, Egg & Dairy-Free Chocolate Cake with Chocolate Frosting!

The secret ingredient that replaces eggs and butter in this cake is mayonnaise. Mayonnaise is a stable emulsion made of eggs and oil.

I promise it doesnt make the cake taste like mayo. Im not a mayo person for the sake of it I just love this cake.

I dont generally like to bake with neutral oils like canola and vegetable oil, since they tend to create an oily-tasting cake. Baking with mayonnaise allows us to bake without any dairy substitutes, but still bake a moist and tender, super decadent chocolate cake that is also dairy-free.

If you love mayonnaise, you wont taste it in this cake. If you cant stand mayonnaise, you still wont taste it in this cake.

This isnt a dense cake at all. Its really a snacking cake, like the kind you might have hanging around in the refrigerator or on the counter, and its also the perfect recipe for an allergy friendly chocolate cake.

You might even do what my grandmother used to do, which is to slice little pieces off the edge as a service to others. That helps to even the edges so it looks more appetizing.

Can I Freeze This Gluten And Dairy Free Cake

For longer storage, wrap this cake tightly in freezer-safe wrap like Glad Press n Seal. You can freeze it frosted or unfrosted, but its easiest to store the uncut cake unfrosted.

If you have leftover cake thats already been frosted, slice it into squares and wrap each frosted square tightly on its own, then freeze. Defrost at room temperature, or even in the refrigerator, for a dairy free, gluten free treat any time.

Carefully Select And Measure Your Gluten Free Flour

As always, choose your all purpose gluten free flour blend carefully, and measure by weight. Here, I usually use Better Batter since I always have it on hand in bulk, and it works so well. But my Better Than Cup4Cup blend works perhaps even better .

You must measure flour, especially, using a digital kitchen scale for reliable baking results. Dry measurement cup sizes are not standardized, and its impossible to measure accurately using them, anyway.

Types Of Sponge Cakes

  • This cake is technically a gluten-free chiffon cake since it uses oil instead of butter and baking powder for lift.
  • Genoise is another type of sponge cake that uses melted butter instead of oil, and only whipped egg whites to lift the batter, no baking powder.
  • Angel food cake uses only egg whites and no yolks for an even lighter texture that makes it too delicate to layer. This is usually baked in a tube pan rather than made into a layer cake.

I’ve made loads of sponge cakes since my stint at pastry school back in 2006 and chiffon cake always wins by a landslide. The baking powder helps to make it foolproof, and the oil gives it a tender texture even when chilled. It has a sturdier crumb that makes it perfect for layer cakes. You can also cut it up and layer it into a trifle or tiramisù. It makes a perfect base for tres leches cake, albeit less traditional, since its open crumb soaks up liquid without becoming soggy.

Do You Need Special Equipment To Make This Simple Gluten

The short answer is no. You could make this cake with just a bowl, a whisk, some elbow grease and some round cake tins. And of course an oven.

I personally prefer making cakes the easy way with a bit of equipment. I always used to make cakes with a handheld electric whisk like this one.

However, I was gifted a Sage stand mixer a few years ago and have never looked back. Its a brilliant machine with various attachments for whisking, beating and more. It makes light work of cake making and it means you can get on with tidying up while it does the job of mixing.

Since this simple gluten-free cake is a one-bowl recipe, you just load the ingredients into the bowl and set it beating with the K beater attachment.

The best thing about this machine is that the beater has a scraper edge to it meaning you dont have to stop so often to scrape the mixture off the sides of the bowl.

Once the mixture has combined its a simple case of dividing it between two 18cm cake tins and putting them in the oven.

What You Need To Make This Recipe:

  • Gluten Free Flour Blend – I have tested this recipe with King Arthur Measure for Measure GF, and Bob’s Red Mill 1 to 1 GF blend. That doesn’t mean others will not work, I just have not tested other flours.
  • Xanthan Gum – If your gluten free flour blend doesnt contain Xanthan Gum or Guar Gum, please add 1 teaspoon.
  • Baking Powder – Use aluminum-free baking powder, it makes a difference in flavor.
  • Light Oil – I like to use either avocado or canola oil. I don’t recommend strong-flavored oils like olive oil.
  • Milk – I use almond milk as my non-dairy milk to keep my cake dairy-free, but any milk will work.
  • Eggs – Size large.
  • Vanilla Extract – In a cake where the vanilla flavor is important, I really recommend that you use pure vanilla extract to make this homemade cake.
  • Cream Cheese – Any brand will work, you can check to see what cream cheese is gluten free. If you are dairy-free, Kite Hill makes a good dairy-free cream cheese.

Is There Gluten In Cake

Unfortunately for us cake lovers, yes, there is gluten in traditional cake recipes. However, by swapping out all-purpose flour for a gluten-free flour blend, you can easily make just about any cake gluten-free.

You can also use naturally gluten-free flours, like almond flour or coconut flour as called for in many recipes to enjoy a gluten-free cake.

How To Frost Your Gf Df Cake

I include a dairy-free ganache frosting recipe, including instructions on how to make it into a whipped ganache frosting for this cake. Its super decadent, and not overly sweet, as the only sugar in the frosting comes from the chocolate.

You can also use your favorite dairy free buttercream frosting, or serve this cake without any frosting at all. A light dusting of confectioners sugar on a completely cooled cake would make a nice touch.

I always make my Victoria sponge with just a simple jam filling. You can of course use buttercream or whipped cream as well.

Recipe Step By Step Directions:

Making a homemade gluten free vanilla cake is easy. Be sure to read all of my tips and instructions for the best results!

Step 1: Add the dry ingredients to a large bowl. The best way to blend the flours is with a wire whisk to blend.

To measure your gluten free flour, I recommend using the spoon method or leveling method. In a perfect world, people weigh their flour, but most do not own a kitchen scale. To make a scale even trickier, every gluten free flour blend has a different weight.

Put the measuring scoop into the flour and fill. Do not pack the flour. Use a knife to scrape along the top to remove the extra flour.

You can also use a spoon to fill the measuring cup. Use a knife to level along the top to remove the extra flour.

Step 2: In a smaller mixing bowl, add the oil, eggs, vanilla extract, and non-dairy milk. Whisk to blend the wet ingredients together.

Pour the wet ingredients into the dry ingredients and mix until the two are just barely mixed. This is the secret to getting the fluffiest cake! Overmixing is really bad for gluten free cakes.

Do not use a standing mixer to make this cake recipe! Your cake batter can get overmixed very easily and your cake will not turn out fluffy.

NOTE: If you are making a white cake, see the FAQ below for specific directions. They are a little different!

Step 3: Your gluten free cake batter will be creamy like in this photo. Scrape down the sides to get all of the batter for the cake.

How To Store Pound Cake

  • Room-temperature pound cake can be wrapped well with plastic wrap or stored in an airtight container. It should be consumed within a few days.
  • To freeze, wrap the cake in plastic wrap or foil, and then put it in a freezer bag. Pound cake can be stored in the freezer for up to three months.

    How To Make Gluten Free Cake Layers

    Easy Almond Cake Recipe (Gluten Free Cake)

    Using my go-to reverse creaming method, I modified my basic vanilla cake recipe to suit this gluten-free version. The trick to fluffy, and not crumbly, gluten-free cake layers is xanthan gum. Xanthan gum is the proverbial glue in gluten-free baking. It keeps everything together and light and fluffy.

    Start by combining all wet ingredients into a small mixing bowl and whisk together. Set this aside as you begin to prepare the batter. In the bowl of a stand mixer with the paddle attachment combine all of the dry ingredients and mix together to break up any clumps. Slowly add the dairy-free butter, piece by piece, and allow to mix on low until a coarse sand-like texture is achieved.

    Adding half the liquid mixture into the dry ingredients comes next. With the mixer running slowly pour in approximately half and allow to mix on low for 2 minutes. After two minutes add in the remaining wet mixture and turn the mixer up to medium. Allow to mix for 30 seconds or so and then stop to scrape down the sides. Turn back to medium and allow to mix for 2 minutes.

    After the last 2 minutes of mixing is up, turn off the mixer and give the bowl a gentle scrape with a spatula. The batter should be fluffy, smooth, and look almost like frosting.

    Can You Make This Dairy Free Chocolate Cake Without Mayonnaise And/or Eggs

    This cake is made with mayonnaise, which contains eggs and oil in perfect emulsion. I havent tested it with vegan mayonnaise. I am very curious to see if it would work, but I cant give any guidance.

    If you cant have eggs, I recommend making our gluten free chocolate crazy cake, which is vegan. It descends from a Depression-era special that doesnt call for eggs at all.

    You must use regular, full-fat mayonnaise. Not a light version, or one made with olive oil .

    Avoid mayonnaise with added flavors, too. If possible, use Hellmanns, since I think anything else tastes quite different.

    How To Know When A Cake Is Baked Properly

    Divide this glorious gluten-free vanilla cake batter between the four prepared six-inch round cake pans and bake for approximately 20-25 minutes or until a toothpick inserted in the center comes out clean.

    Other signs of a cake being fully baked are golden edges that pull ever so slightly away from the cake pan. When you remove the cake pans from the oven place them on a cooling rack to cool for 10 minutes. After 10 minutes invert the pans on the rack and allow the cake layers to fully cool.
