  • 1 pound boneless, skinless chicken thighs
  • Kosher salt and freshly ground black pepper, to taste
  • 1 pound red potatoes, diced
  • 1 onion, diced
  • 2 carrots, peeled and diced
  • 2 stalks celery, diced
  • 1 cup corn kernels, frozen, canned or roasted
  • 1 cup frozen peas
  • 1 tube refrigerated buttermilk biscuits
  • 2 tablespoons chopped fresh parsley leaves

For the sauce

  • Kosher salt and freshly ground black pepper, to taste

  • Chicken Thighs: These are easy to work with, full of flavor, and usually cheap. You can also use chicken breasts if youre not a fan of dark meat.
  • Low Sodium Broth: Use low sodium broth to avoid an overly salty broth. You can always add more salt to taste, but you cant take it away.
  • Veggies: Other yummy vegetable ideas are onion, celery, potatoes, green beans, or even broccoli Use your favorites, and leave out the ones you dont like.
  • Spices: I like onion/garlic powder, and thyme. Other spices to consider are oregano, rosemary, and marjoram. Just be sure to add a little at a time as dried herbs can be potent! Dont be afraid to make it your own.
  • Heavy Cream: This adds a touch of richness. You can use milk instead just be aware the mouthfeel wont be the same.
  • Crescent Dough Sheets: These are essentially crescent roll dough without the score marks that show you where to separate. Look for them near the refrigerated biscuits. Crescent roll dough will do in a pinch!

If your chicken pot pie recipe is not as thick as you would prefer after the cooking time, you can easily thicken the sauce right in your crock pot.

My favorite way to thicken sauces in my recipes is by creating a corn starch slurry and adding it to my crock pot.

To make this cornstarch slurry, I mix ¼ cup of corn starch with 1 cup of cold water or chicken broth until the corn starch is completely dissolved. Then I add this mixture to the crock pot and cook on high for 30 minutes until the sauce is the consistency that I want for this recipe.

You can also follow this same process with flour instead of corn starch if you prefer.

Also, if you love creamy chicken pot pie, you can mix in heavy cream instead of the milk. I would not add it in the crock pot until the last hour of the cook time.

Another quick variation to this recipe is to use vegetables that you love. If you do not love carrots, celery, corn or peas then you can definitely leave them out and add in your favorite instead. I have made this recipe with green beans before and it was delicious!

To make it even better, this can be thrown together in a snap! I did make a few changes from the original recipe to make the broth/gravy for the pot pie a little thickerand the results were fabulous!

I already had exactly 3 chicken breasts cooked up and in the fridge waiting for a recipe, so this worked out perfectly for me. If the stars dont align to where you already have the exact amount of chicken waiting in the fridge, cook up your chicken breasts and cut them into cubes.
