Ice Cream Swiss Roll Cake

Ice Cream Swiss Roll Cake consists of your favorite ice cream rolled in a fluffy sponge cake that can be made ahead and stored in the freezer for weeks. The Arctic Roll is a popular British frozen dessert from my childhood. Ice cream fans, from kids to adults will find it hard to pass up this treat.

This British retro cake from the 1950s was made famous by a retailer that sold only frozen food. They have recently resurrected it, along with other ice cream treats, that are now popular once again.

Popularly known in the U.S as an Ice Cream Cake Roll, you can see the ice cream is the main star of the show with the sponge cake providing a cozy, sponge blanket around the ice cream.

The Ice Cream

Any of your favorite ice cream will work in this Arctic Roll recipe. I swirled pureed strawberries and blueberries into vanilla ice cream. I also want to make this with my favorite ice cream, mint chocolate chip.

Unless youre able to make this Ice Cream Swiss Roll Cake in a giant freezer , when it comes to working with ice cream you must work quickly to avoid a melted ice cream mess.

Filling The Cooled Cake

Take a box of ice cream out of the freezer and open it completely so it looks like a square of ice cream.

Start slicing the ice cream in 1/4 to 1/2 inch slices with a large knife. You really want to be able to cut through it in one motion.

You can also allow the ice cream to soften slightly and just spread it on. I prefer to slice and place.

Once the Cake is full, stop slicing. You may have ice cream leftover, just pop it back in the freezer and eat it later.

I usually start by filling the tight curl at the end of the cake.

This part has never wanted to unroll for me, so I just go with the flow and stuff some ice cream in there. I cut one of the ice cream slices into smaller pieces and pack it in.

Once that is filled, start lining up the ice cream slices along with the cake.

Lay the pieces as close together as possible. You can start at either end.

You can leave an inch or so on the sides empty, ice cream will fill that area as you roll it back up.

Some of your pieces may be thicker than the others, this is OK too. We are going to let this sit for 10 to 15 minutes until it is slightly softened.

Do not walk away during this waiting period, if you forget you have sliced ice cream sitting on the cake, it will begin to absorb and melt over the edges running onto the towel and the countertop.

If you arent quick enough to remember you left it on the counter you may find yourself mopping the floor. Ive done this.

What Is An Ice Cream Roll Cake

An ice cream roll cake is basically a jelly roll or Swiss roll cake, but instead of using jelly or buttercream in the roll, you use ice cream.

In our family, we like to use one flavor of ice cream in the middle and then another on the outside, so that you get double the ice cream fun. But, if you prefer, you can also just use ice cream inside the roll and then top it with powdered sugar, just like you would use on a traditional jelly roll cake.

How To Separate An Egg

The goal of separating an egg is to separate the egg white from the yolk. There are a number of different ways to do this, but the method that I have always found the most manageable is to do the following:

  • Pull out two bowls
  • Crack the egg over the bowl that you would like the egg white to go into
  • Using the two halves of the egg shell, gently move the yolk from one half of the shell to the other, allowing the egg white to fall down into the bowl

    Ice Cream Ice Cream, oh how we love some ice cream all year long. We used close too 4 cups and were plenty satisfied. Allow the ice cream to sit out and soften but not too far before trying this step. It will truly be a time saver.

    For an added touch, serve with some hot fudge on the plate.

    For The Ganache Glaze:

  • Add the cream and syrup to a small saucepan set over medium heat and stir to combine. When the cream mixture is hot, but not boiling, remove from the heat and add the chopped chocolate. Let the mixture sit for 5 minutes to melt the chocolate.
  • Remove the cover and stir with a spoon or rubber spatula until the melted chocolate is completely incorporated. Do not use a whisk.
  • Transfer the ice cream cake roll from the freezer and remove the paper and foil. With a serrated knife, trim off 1/2-inch from each end of the roll, . Place the roll on a wire rack set over a sheet of parchment paper.
  • Pour the ganache over the top of the cake roll allowing it to gently drizzle down the sides.
  • Sprinkle the top of the roll with the chopped pistachios.
  • Place the cake roll back in the freezer until the glaze is firm, about 1 hour.

    What Size Is A Jelly Roll Pan

    A typical jelly roll pan is 10 by 15. Jelly roll pans resemble standard baking sheet pans, but sheet pans generally run a few inches wider and longer. Still, in a pinch, you could use a standard-sized sheet pan, but the cake will be much thinner, and therefore you will need to adjust the baking time. Both sheet pans and jelly roll pans possess depths ranging from a 1/2 inch to about 2 inches.

    Certain recipes will call for you to beat eggs and sugar together until they form ribbons. But what does this even mean and why is it necessary?

    When you are using eggs as your leavening agent , you want to help the eggs along by adding air. This will allow the cake to be fluffy and light in structure.

    So how do you do it and when do you know they are done? Using either an electric beater or the whisk attachment on your standing mixer, you are going to beat the eggs and sugar until the mixture has gone lighter in color, tripled in volume, and ribbons form. What that means is that when you stop the beating of the eggs and lift your beater or the whisk attachment up, when the mixture drips down it will maintain a thick, steady stream and build up in a little pile in the bowl .

    You can also beat eggs to form ribbons by hand, but it will take some considerable elbow grease!

    It is also important to note that while it is possible to beat cold eggs until ribbons form, it is much easier with room temperature eggs.

    Bonus Tip: If you forgot to take your eggs out to get them to room temperature in time, place the cold eggs in a bowl of very hot water for 5 minutes .

    Unroll The Cooled Cake

    Once the cake is completely cooled unroll the cake, but leave it on the towel.

    You will use the towel later to assist you with rolling it back up.

    The end may stay a bit curled and it is OK. I tell you what to do with that part in a minute.

    There are a few cracks in the uncurled piece. No worries, it is going to be right in the middle of the cake.

    The cake will crack some after it has cooled and you unroll it.

    The best you can do is minimize the cracking.

    Cover the cracks with some sort of topping and it will be delicious no matter what.

    Chocolate Ice Cream Cake Roll

    • Makes: 8 to 10 servings

    Ingredients:

    Chocolate sponge cake

    1 quart good-quality ice cream

    Chocolate glaze

    4 large eggs, room temperature

    1 large egg yolk

    1/3 cup unsweetened cocoa powder

    For chocolate glaze:

    ¾ cup heavy whipping cream

    4 ounces semi-sweet chocolate, chopped

    1 tablespoon maple syrup

    Preparation:

    Prepare chocolate sponge cake. When sponge is cool, remove parchment and place cake on clean side of parchment. Slightly soften ice cream so it is spreadable but not melting and quickly spread an even ¼- to ½-inch thick layer over flattened cake, leaving a 1-inch border on long end. Roll up jelly roll-style toward uncovered border and quickly place in freezer. Just prior to serving make chocolate glaze.

    To serve, cut into slices and pour glaze evenly over slices.

    Chocolate sponge cake:

    Preheat oven to 400 degrees. Line a 17 ½-by-11-inch jellyroll pan with parchment.

    Using an electric mixer, beat eggs, yolk, sugar and salt at medium speed until stiff peaks form this will take 10 to 12 minutes. Gently sift in flour and cocoa. Spread batter evenly in prepared pan and bake in preheated oven until cake is springy to the touch and just begins to pull away from the sides of the pan, about 7 minutes. Immediately cut around edges to free cake and transfer cake and parchment to another baking pan or work surface to cool.

    Making ice cream cake rolls is much easier with a jelly roll cake pan to bake the cake. With that, you make the job much simpler. Because a uniform layer of cake provides a simple mat to roll up the ice cream with.

    Also, if you like, then you have the option of adding a layer of jelly too. Jelly cake rolls, and some Swiss Cake Rolls, feature a jelly layer, too.

    By Step How To Make A Cake Roll

    Step One: Grease the parchment paper before lining the jelly roll pan. I like to use a paper towel.

    Step Two: Using an electric mixer, beat eggs for 5 minutes until they are thick and lemon-colored. Then, turn the mixer to low and beat in sugar, water, and vanilla.

    Step Three: Sift dry ingredients into the egg mixture and mix until smooth and combined.

    Step Four: Spread the cake batter evenly into the prepared jelly roll pan. Bake for 12-15 minutes. Do not overbake!

    When the cake comes out of the oven, dust it generously with powdered sugar. Carefully lay a tea towel over the top and invert the cake onto the towel. Carefully peel the parchment from the cake bottom. If you have rough edges, trim them while the cake is still hot.

    Tip: My Mom dusts her cake roll with cocoa powder. That works great, too! Choose whichever method you prefer.

    Step Five: While the cake is still hot, roll it up jelly-roll style in the tea towel. Cool completely.

    Step Six: Make sure your ice cream is soft enough to spread easily. The cake will squish out a little so dont put in too much ice cream.

    Step Seven: Roll the cake back up, and wrap it tightly in plastic wrap. Place the cake roll in the freezer until its frozen.

    Step Eight: Slice and serve. There is no need for topping, but of course, I think the cherries and mint make the cake so festive! Especially if you are serving it for a holiday like Valentines Day, Christmas, or even the Fourth of July!

    Roll the cake while it is hot! I know that sounds crazy, but using a towel helps absorb some excess moisture. At the same time, the cake stays moist enough to roll. When you unroll it, then it will still hold the curve for easy re-rolling with the ice cream, jelly, or whatever filling you choose.

    Make sure your towel is clean and big enough for the cake. I have always used a flour sack towel or tea towel as I have always called them.

    Also, be careful not to overbake your cake! A nice moist cake makes all the difference too. Bake it too long and you might just as well call it cookies instead. Because a hard cake will not roll up!

    Also, before spreading the ice cream, make sure the ice cream is nice and soft. To firm and cold risks breaking the cake.

    Youll need to work quickly, as the ice cream gets melty in no time. But dont worry, the ice cream cake roll goes back into the freezer to set up.

    Rolling The Filled Cake

    Start rolling the cake up, starting with the end that didnt want to lay flat. Roll it as tight as you can. This is when the ice cream will work its way to edges.

    Wrap the cake roll in plastic wrap and place in the freezer until the ice cream roll is solid.

    It takes at least 3 hours for ice cream to become solid again.

    If your freezer is full or set at a lower temperature, it may take overnight. This really isnt a dessert you can make and enjoy immediately.

    How To Make Chocolate Ice Cream Cake Roll

    The chocolate cake in this recipe is a homemade separated sponge cake. The separated part refers to separated eggs. Youll whisk the egg whites with sugar in one bowl and the yolks in a separate bowl.     Neapolitan Ice Cream Cake Roll, the perfect hot summers day dessert. No need to buy an ice cream cake with this easy recipe that requires very little effort. Make a simple vanilla sponge, fill with Neapolitan ice cream and roll!

    My husbands nonna was known for her delicious ice cream cake! She made this simple cake during the summer and was known for brushing the sponge with peach schnapps for extra flavor and moisture. This is a recipe Ive been wanting to recreate for years!
