Well a step, followed by a trip, followed by me falling face first into the bowl like Ive never seen food before. In college my roommates and I were irrationally obsessed with this ultra processed, additive-filled parmesan herb bread dip seasoning mix that they sold at Club Pub. Im pretty sure it became a makeshift hangover cure of sorts until we discovered brunch. Anywho! I always vowed to make a healthier version at home and, as is tradition, always forgot.

While I used Pompeian Olive oil for this recipe, you can use what you already have on hand, just be sure it is extra virgin olive oil. Extra virgin olive oil has a deeper flavor that is more robust and can handle the seasoning and the garlic. Light olive oil will be way overpowered by the seasoning blend whereas extra virgin olive adds not only holds the seasoning blend but adds in flavor as well.

Yes! The simple olive oil bread dip can be made 1-2 days in advance. But it all depends on whether you use dried or fresh herbs.
Dried Version: Mix all the ingredients together in a bowl, except the garlic*, lemon juice and cheese. On the day you are going to serve, mix in the remaining ingredients and enjoy!

You can dip almost any bread in garlic infused olive oil! I prefer to dip a crusty ciabatta bread or a soft and seeded Italian bread with my infused olive oil dips. Theyre both super absorbent and full of big, fluffy holes to soak up more oil.

Im not going to pretend that for many meals, I wouldnt be content to simply sit with some warm and crusty bread, this Italian butter dip, some charcuterie meats and cheeses, and a glass of wine. Who needs an actual meal?

In fact, Im willing to bet that youve got all, if not most of the 6 ingredients in your house right now. Heres what youll need aside from some salt and pepper:
- Fresh minced or crushed garlic, and
- Extra virgin olive oil
For the herbs, I go with dried, except for the rosemary. Dried rosemary is pretty tough and it takes a long time to soften in liquid, so I always use fresh rosemary in this dip. If you dont have dried oregano or basil, fresh is great!

If you eat cheese, or have vegan parmesan, feel free to add it. I think this recipe is more than delicious without, but its your call.

To start, youll need 1 cup of extra virgin olive oil. The first seasoning well use will be 4 cloves of minced garlic. From there, use 1 teaspoon each of lemon juice and dried basil, ½ teaspoon each of dried thyme, oregano, rosemary, and parsley, and ¼ teaspoon of crushed red pepper flakes. Finish it off with a pinch of salt and pepper, added to taste!
If you dont have fresh garlic cloves, you can substitute each clove with ¼ teaspoon. That will put you at 1 whole teaspoon for this dip!
