  • Bake: Move oven rack about 5-inches below broiler and preheat broiler to high. Transfer to oven and let broil until golden brown on top about 4 6 minutes .

What’s The Difference Between A Shepherd’s Pie And Cottage Pie

A true shepherd’s pie is made with lamb while a cottage pie is made with beef. In the US, I notice that it is often called a shepherd’s pie when it really is just a cottage pie.

Since the type of meat used is the only real difference in this dish, I find most have a version using beef that they call shepherd’s pie even if it technically isn’t. Our family often grabs beef for this since lamb isn’t as readily available in our grocery stores. That said, I much prefer the truly authentic version using lamb.

If you are watching your red meat intake, you can use ground turkey, ground chicken, or even ground pork in place of lamb or beef. While that will keep it from being truly authentic, the flavors can still be fantastic.

How To Make Shepherds Pie:

To make this Irish shepherds pie recipe, simply:

  • Cook the mashed potatoes. Cook the large potatoes in a large stockpot until tender. Then drain, mash, and stir in the remaining mashed potato ingredients until combined. Set aside for later.
  • Brown the meat. Meanwhile, in a large sauté pan, cook the ground beef or lamb in a bit of oil until browned, crumbling it with a wooden spoon as it cooks. Then transfer it to a separate plate with a wooden spoon, reserving any grease that it has left behind.
  • Sauté the veggies. Cook the onion, carrots, celery, mushrooms and garlic in the leftover grease until they are softened as well.
  • Add in the flour and wine. Stir in the flour to help thicken the sauce. Then add the wine, and scrape the bottom of the pan with your wooden spoon to loosen any of those tasty brown bits.
  • Add the remaining sauce ingredients. Stock, tomato paste, Worcestershire sauce, bay leaf, herbs and frozen peas. Then give everything a good stir, and cook the mixture until it reaches a simmer. Reduce the heat to let it simmer for a few more minutes, so that those herbs can really season the sauce. Then remove the herbs , stir in the cooked meat, give the mixture a taste, and season with salt and pepper as needed.
  • Layer it all up. Transfer the filling mixture to a 9 x 13-inch baking dish, and spread it out in an even layer. Then spoon the mashed potatoes on top and carefully spread them out in an even layer as well.

    • Assemble the pie in a baking dish or casserole dish.
    • Cover and refrigerate.
    • The following day remove from the fridge while the oven preheats to 350 degrees.
    • Bake covered with foil about 25 30 minutes until heated through, then broil closer to broiler element to brown the topping.

    There are a few stages to making Shepherds Pie, but its a straightforward recipe. Theres just two little things that you dont see in most recipes, little things that bugged me:

  • Cool the filling before topping with potato: It thickens and makes it easier to spread the potato across the top and it stops the potato weeping into the filling

  • Creamier mashed potato = easier to spread and just an all round better eating experience. I just dont like dry, very firm mash. When I break through the mash, I want it to be borderline collapsing, rather than being able to cut cleanly through it like cake.

    Do you love Shepherds Pie as much as I do? We didnt have the traditional version growing up. My mom made Meat and Potato Stuff. No, Im not kidding. Meat and Potato Stuff had tomato sauce and was basically Sloppy Joe Casserole.

    THIS Shepherds Pie however, is anything but sloppy. You make a flavorful gravy with beef broth and ground beef, add some peas and carrots, and cover it up with All The Potatoes.     How To Make Mashed Potato Topping

    While the meat mixture is cooking, you will place your peeled potatoes into a pot of salted water and bring to a boil.

    Cook the potatoes for 20 minutes or until fork-tender.

    Drain the potatoes reserving ¼ cup of the water.

    Pour the potatoes back into the pan and add in the water then begin mashing.

    When the potatoes are mostly mashed, add in the melted butter, heavy cream, and sour cream.

    Stir and mash to combine.

    Prep This Ahead Of Time

    If you plan to make this ahead of time, I suggest keeping the mashed potatoes and filing separate at first. Store them away in the fridge in sealed containers. When youre ready to bake, let the potatoes and filling sit at room temperature to soften before assembling. Then, pop it right into the oven for baking.

    When it comes time to freeze leftovers, just place them in freezer safe containers for up to 3 months. This could be a great option if you also plan to meal prep this on a Sunday night. Just bake it, divide it into 6 sections, and freeze it!

    Take a cast iron pan and melt butter in it. I am using a cast-iron so that I can save dishes and bake the pie in it. You can make the filling in a regular pan and bake the pie in a baking pan. Add the diced onions, carrot, and zucchini to the pan and cook them for 6-8 minutes. After that, add the beef to the pan and cook it until it browns completely.

    Now, add the beef stock and the flour to the pan. Stir and cook them until the mixture thickens. When it has thickened, add the frozen peas and stir. Remove the pan from heat. Your filling is ready.
