  • Make oatmeal cookie crust: Bake an oatmeal cookie dough on a sheet, let it cool and then crumble it up. At this stage, its hard not to break off a piece of cookie for yourself! Mix the crumbs with butter and brown sugar, then press the mixture into a pie dish for the crust. The crust is the perfect cookie consistency to hold the gooey buttery filling.
  • Prepare the filling: The filling is a mixture of sugar, milk powder, egg yolk, heavy cream, butter and vanilla. This can be mixed together with a whisk by hand or by using the whisk attachment for your stand mixer. Pour this liquid filling into the cookie crust and bake.
  • Bake the pie: The baking process can be finicky. Ive made this pie a few times and I have learned to let the pie bubble and use the full baking time. The pie will still jiggle in the center and it may still be bubbling when time is up. Thats okay! Remove the pie from the oven and it will solidify as it cools.

    Milk Bar Debuts 4 New Ice Cream Pints At Whole Foods

    Milk Bar, the dessert company founded by award-winning chef Christina Tosi in New York Citys East Village in 2008, announces the launch of a new line of ice cream pints available at all Whole Foods locations starting June 1st.

    Milk Bar treats are available in bakery locations across the country, through their eCommerce site that ships care packages nationwide, and most recently in grocery stores. The brand entered grocery in April 2020, launching with soft-baked Cookies followed by Truffle Crumb Cakes which developed a quick cult following. Milk Bar has since expanded their grocery presence to thousands of retail locations nationwide, and now launch ice cream as their third grocery category offering.

    The launch also marks the first time Milk Bar will offer ice cream outside of their bakeries, which have long been known for experimenting with with other frozen treats, from freshly spun, silky-smooth soft serve to milkshakes and more, including their iconic, familiar-yet-unexpected soft serve flavor Cereal Milk.

    Birthday Cake: A love letter to Milk Bars signature sprinkle flecked layer cake with unfrosted sides, this flavor brings the same delicious layering effect with birthday cake flavored ice cream, birthday crumbs and ribbons of birthday frosting. All the celebration, any day of the week.

    Milk Bar Pie: Deep vanilla ice cream swirled with a gooey butter filling and toasted oat crumble reimagines Milk Bars signature pie in ice cream form.

    Do I Have To Use Corn Powder

    Because I was halving the Momofuku crack pie recipe, this meant 1/8th cup or 2 tablespoons corn powder and rather than ordering or sourcing it at Whole Paycheck, I simply used 1 1/2 tablespoon King Arthur all-purpose flour and things turned out just fine.

    It must be all the sugar and fat in this pie that kept me from missing those two tablespoons of corn powder because there is so much going on already. Butter in the cookie to make the crust, then more butter adding when crumbling and packing the crust down into the pie plate, more butter in the filling.

    And I sure wasnt complaining.

    How To Make Crack Pie

    Ive given very detailed instructions in the recipe card below on how to make this Milk Bar crack pie recipe. Below is just a brief overview of the process:

  • Make the oat cookie crust. Make it like you would a normal cookie dough, spread it out onto a baking tray, then bake.
  • Let the oat cookie cool completely, then pulse in a food processor with a little butter and salt.
  • Press the oat cookie mixture into a pie plate.
  • Make the pie filling. Whisk together the filling ingredients. Pour into the prepared pie shell.
  • Bake the pie. Bake at 350F for 15 minutes, then open the oven door and reduce the baking temperature to 325F . When the oven temperature reads 325°, close the door and finish baking the pies for 5 minutes.
  • Let the pie cool. Let the crack pie cool completely before slicing .

    As a lover of cereal, this was great and I would come again for sure. Definitely get the cereal milk ice cream + crack pie, avoid candybarpie unless you love eating pure caramel syrup. Compost cookie + pretzel ice cream is good, but not the best on the menu for your first time. Clearly I spend too much time here.

    Since this crack pie recipe takes a bit of time to make you can do a few of the steps in advance to save on time as needed.

    • Store: Keep the pie wrapped in plastic wrap for up to 5 days in the refrigerator.
    • Freeze: Wrap the pie in plastic wrap and store for up to 1 month in the freezer. Transfer to the refrigerator at least 1 hour before you plan to serve it.

    Milk Bar Pie Recipe – Crack Pie Momofuku/Milk Bar

    Cereal Milk: Best sampled either as cool soft serve or as actual sweet-salty milk the latter is off-menu but available.

    Peppermint snaps: A chocolate wafer layered with caramel and pretzels, dipped in white chocolate peppermint bark each flavor comes through clearly without devolving into heavy sweetness .

    Birthday cake or corn truffles: Small snacky bites flavored like vanilla cake or vegetal corn and caramel. Eat them cold .

    Apple pie soft serve : The texture is a bit thin, but it packs a wallop of cider flavor .

    Cerealsies: Try the spicy cinnamon-sugar spheres or the Andes-like mint variety . Avoid the birthday flavor.

    Momofuku Milk Bar Exam No 15

    In the Momofuku Milk Bar cookbook, Christina Tosi describes this pie as being a little bit of a bitch to make. So of course, I had to try it!

    And I have to say, she was not lying. This is certainly the most difficult recipe Ive made from this cookbook, if not ever. There are a lot of moving parts and everything has to be well orchestrated before you begin. So please please please read the directions carefully and then reread them. Picture them in your mind. Carve them into your soul. Because trust me, this pie may be a bit of a bitch to make but it is so unbelievably worth it.

    If this pie was a story, itd be an epic saga so before I go any further you should go grab a drink and perhaps even a snack Ok, ready? Alright well, I suppose as Julie Andrews would say, lets start from the very beginning. In this case, the beginning is a chocolate crust. Did you know that not all cocoa powders are created equal? In general, cocoa powders fall under two categories: Dutch-process cocoa powder, a much darker powder which has undergone an acid-neutralization process and natural cocoa powder, in which the cacao beans are simply roasted and pulverized.     Dutch-process vs. natural

    So I paused the button on the salty caramel and decided to make something that looked a little simpler, the peanut brittle.

    First Make The Oat Cookie

    • Prepare for baking: Preheat the oven to 350°F and line a cookie sheet with parchment paper or a silicone baking mat.
    • Cream butter and sugars in a stand mixer with a paddle attachment on medium-high for 2 to 3 minutes, until fluffy and pale yellow.
    • Mix in egg yolk : Scrape down the sides and switch to low speed. Add the egg yolk then increase the speed to medium-high. Beat 1 to 2 minutes until the mixture is pale white.
    • Add dry ingredients: Scrape down the sides and switch speed to low. Add flour, oats, baking powder, and baking soda. Mix until the dough comes together and there are no remnants of dry ingredients, about 1 minute.
    • Spread the dough : Turn the dough out onto the baking sheet and, using an offset spatula, spread to a ¼-inch thickness .
    • Bake 15 minutes, or until the middle of the cookie is puffed, but the edges are firmly set. Cool completely before using.

    The original candy bar pie recipe calls for Hersheys chocolate bars with almonds, but I goofed and bought the regular Hersheys chocolate bar without almonds. It was delicious anyway. Use either.
