How To Make A Gluten Free Peach Dump Cake

Gluten, Egg & Dairy-Free Chocolate Cake with Chocolate Frosting!

To make this easy peach dump cake, first you will preheat the oven to 350F and grease a baking pan with cooking spray.

Next youll combine your peaches, sugar, cornstarch, lemon juice, and cinnamon in one of the mixing bowls and pour it into your prepared baking pan.

In the other bowl, youll measure out your cake mix and combine it with the cinnamon.

Sprinkle this mixture over your peach mixture and spread out until fairly even.

Next, thinly slice your butter sticks and space the squares evenly over the top of the cake mix.

Bake for 20 minutes. Rotate the pan and look for dry spots on top.

If any spots seem dry, add a bit more butter to those spots.

Cook for another 20-25 minutes until golden. Let cool before serving.

What Is Xanthan Gum And Why Do I Need To Use It

Wheat flour contains gluten and gluten is the binder, it holds the mixture together creating that soft fluffy texture we all love. When you are not baking with gluten that binder needs to be replaced. Typically xanthan gum is used as the binder. It works very well and has become the staple for gluten free baking.

Other binders that work well are guar gum and psyllium husk. Psyllium husk is a grain free alternative and it works, but not as well as xanthan gum.

In this recipe you can use your favorite nuts, but I have found that pecans or walnuts are my favorite for this. Feel free to use either, or blend both, but make sure to chop them up fine.

Why Did My Gluten And Dairy Free Chocolate Cake Sink

A cake that rises and then falls as it cools is usually not baked all the way through, even though it may have looked done on the top. If the center isnt as firm as the rest of the cake, it will cave in on itself as it cools and the air created during the baking process escapes.

Always follow a recipes doneness test, which here is to insert a cake tester in the center and make sure it comes away with no more than a few moist crumbs attached. If the cake tester is wet, the center isnt fully baked.

Whisk The Wet Ingredients Add The Dry

Set out a medium mixing bowl and add in all of the wet ingredients: the heated water and milk, melted coconut oil, coconut sugar, maple syrup and vanilla. Whisk all the wet ingredients together until its well mixed. Now, pour the wet ingredients into the dry ingredients bowl. Make sure to use a rubber spatula to scrape the wet ingredient bowl clean. Now, whisk the wet and dry ingredients together just until no flour patches remain. Youve just made your vegan gluten free cake batter!

Do You Need Special Equipment To Make This Simple Gluten

The short answer is no. You could make this cake with just a bowl, a whisk, some elbow grease and some round cake tins. And of course an oven.

I personally prefer making cakes the easy way with a bit of equipment. I always used to make cakes with a handheld electric whisk like this one.

However, I was gifted a Sage stand mixer a few years ago and have never looked back. Its a brilliant machine with various attachments for whisking, beating and more. It makes light work of cake making and it means you can get on with tidying up while it does the job of mixing.

Since this simple gluten-free cake is a one-bowl recipe, you just load the ingredients into the bowl and set it beating with the K beater attachment.

The best thing about this machine is that the beater has a scraper edge to it meaning you dont have to stop so often to scrape the mixture off the sides of the bowl.

Once the mixture has combined its a simple case of dividing it between two 18cm cake tins and putting them in the oven.

How To Know When A Cake Is Baked Properly

Divide this glorious gluten-free vanilla cake batter between the four prepared six-inch round cake pans and bake for approximately 20-25 minutes or until a toothpick inserted in the center comes out clean.

Other signs of a cake being fully baked are golden edges that pull ever so slightly away from the cake pan. When you remove the cake pans from the oven place them on a cooling rack to cool for 10 minutes. After 10 minutes invert the pans on the rack and allow the cake layers to fully cool.

When it comes to vanilla cake, I dont know where to start. Ugh. Since going gluten and dairy free I had not enjoyed vanilla cake. After trial and error of soooo many recipes I had found, and none of them working out.

Then I was wasting money on every box brand I could find I could find at the store. As a result of this frustration I knew I needed to take matters into my own hands. All I wanted was a gluten free birthday cake for crying out loud!

To Flour Pans With Cocoa Powder

  • Use a sifter to evenly drop cocoa powder over pan
  • Then, tap the pan around to get the cocoa powder to spread.
  • For the sides, you have to aggressively tap and hold the pan on its side, getting the cocoa powder to fall down onto the opposite side. Rotate as you tap so the cocoa powder will fall and coat more and more of the side of the cake pan.

Vanilla Cupcakes With Buttercream Frosting

This classic vanilla cake is a wonderful new take on an old favorite. With gluten-free flour, you can be sure to stick with your dietary needs.

Just note that youll need to swap out the butter for vegan butter or coconut oil, and make your own dairy-free buttermilk using coconut milk and a bit of apple cider vinegar.

This can easily be made dairy free or vegan with a few substitutions!

  • Substitute 1 egg with 1/4 cup of unsweetened applesauce.
  • Replace the milk with a milk substitute, like unsweetened almond milk .
  • Replace the butter with vegan or dairy free butter or vegetable oil .
  • For the cinnamon streusel topping, use a few tablespoons of vegan butter or add vegetable oil until just wet.

What Causes A Gluten

You might see cracks if your temperature is too high, or your cake is placed in the oven too high. The heat of baking activates the baking powder and causes it to release carbon dioxide, which forms bubbles and raises the cake.

If your oven is too hot, that process is sped up. Make sure to place your cake in the center, and regularly check your ovenâs temperature.

Another reason is if you are at a high altitude. If you are baking this gluten-free vanilla cake at a high altitude consider cutting the baking powder in half.

They Are So Easy To Make

It took me less than five minutes to prep the ingredients, even making these muffins three ways! The longest part was waiting for the coconut oil to go from solid to liquid form and getting everything out of the cupboards! I follow the instructions exactly and time in the oven and they are on the money.

I have tried many recipes and although good, none delivery on flavor, ease of making and consistency like these Simple Mills, Banana Muffins. There is no contest. Honestly, well done Simple Mills, I cannot rave about their products enough.

My son had a birthday yesterday and these banana muffins with chocolate chips were his request for a snack to bring to his classroom to celebrate. A mini chocolate chip banana muffin and a little fruit cup and the kids loved it. Better yet the kids in the classroom that usually feel excluded from eating the treats brought into the classroom were able to have these as well. Bonus!

What Chocolate Is Gluten Free And Dairy Free

My favorite dairy-free and gluten free chocolate chips are from Enjoy Life brand. Theyre super rich and high quality. All of Enjoy Lifes products are free of the top 8 most common allergens, which include gluten and dairy, making them safe for most people to enjoy .

If you need baking chocolate bars to chop, I really like Hu Kitchen brand, which is dairy free and gluten free. Scharffen Berger brand is the higher-quality baking chocolate that I usually turn to, and some varieties dont contain any dairy ingredients.

Some other brands of gluten free dairy free chocolate bars are some varieties from Alter Eco, Green & Blacks, and Endangered Speciesbut theyre all quite expensive.

How To Make Gluten Free Coffee Cake

Gluten Free Alchemist: Angel Cake (gluten free, dairy free)
  • Preheat oven to 350°F and grease a 9×13 baking dish with butter or cooking spray. In a stand mixer, cream together the butter and white sugar until just combined. On medium-low speed, add the brown sugar and vanilla extract. Add one egg at a time until just combined. Be careful not to over-mix the wet ingredients.
  • In a separate medium bowl, whisk together the dry ingredients until evenly combined.
  • Set the mixer on medium and add the dry ingredients and sour cream. Then slowly pour in the milk. Stop the mixer and use a spatula to scrape the sides and bottom of the bowl, then mix again until combined. Add the cake batter to the prepared baking dish, using a spatula to spread it evenly.
  • In a separate bowl, mix together all of the topping dry ingredients with the melted butter until everything looks wet, then evenly sprinkle topping over the cake batter.
  • Bake uncovered for 30-35 minutes, or until a toothpick comes out clean.
