Harvey Parker opened the ornate, five-story Parkers Hotel and Restaurant in 1855. During this time, chocolate was primarily consumed as a beverage or in puddings. When Harvey Parker hired creative French Chef Sanzian to create and serve a versatile menu in his restaurant, his bake staff decided to drizzle chocolate icing onto a sponge cake filled with vanilla custard. Instantly, the Boston Cream Pie was born and became an immediate and perennial hit. The original Parker House recipe for the pie was so popular, that in 1958 it became a Betty Crocker boxed mix. On Dec. 12, 1996, the Boston Cream Pie was proclaimed the official Massachusetts State Dessert. The bill was signed into law in the Omni Parker Houses historic Press Room. To help celebrate the hotels 150th anniversary, in September of 2005, the Worlds Largest Boston Cream Pie was displayed at Faneuil Hall Marketplace. The pie was sixteen feet in diameter and topped with another Boston Cream Pie resembling the Parker House structure from 1855. The monstrous dessert included 1,300 pounds of cake, 800 pounds of filling and 500 pounds of chocolate frosting.

Does anyone know if we can just get a serving of Boston Cream Pie at the Parker House without having to do the fine-dining in the restaurant? We will only be in Boston for a few days and there are so many food places on our list that we’re trying to avoid having to eat a big meal at Parker House and stuffing ourselves silly. Does just going for dessert look ridiculous? I thought of the Last Hurrah Bar that’s at Parker House but we don’t drink so I was trying to avoid ordering only pie and water there. Such a dilemma. 🙂
The Last Hurrah does serve food and there is no requirement that you consume alcohol there so you do not have to indulge or drink water. Many people look ridiculous in bars and it isn’t usually because of ordering pie. i don’t drink either and have never had a problem in a bar. If all else fails, the Parker House has the recipe on their web site.

You can have the pie in parkers or the last hurrah, no problem. My wife and I have done that a couple of times on different trips. Nice way to relax for a short time between shopping, sightseeing etc.
I went searching because I thought I had read that you could get it to go. I found a few reviews that say the person bought the pie in the gift shop at the Parker House. I may just stop by this weekend and get one. I haven’t had their version in many years.

Make Ahead Boston Cream Pie
This Boston Cream Pie can be made ahead in stages and then assembled or the finished cake can be made ahead and stored:
- Pastry cream: can be covered and chilled in the refrigerator for up to 2 days before assembling.
- Hot milk sponge cake: the cooled cakes can be wrapped in plastic wrap and stored at room temperature for up to 24 hours or frozen for up to two months then thawed before assembling.
- Finished cake: can be fully assembled, including the chocolate glaze, and stored in the refrigerator for 1 day. Make sure the cake is covered completely so the cake does not dry out. Use a cake container or loosely tented with foil as to not damage the glaze. Let the cake come to room temperature before serving.
How Do You Make Boston Cream Pie From Scratch
First start with the small sponge cakes.
Beat together melted butter, sugar, egg, and vanilla until pale and yellow.
Starting with the dry ingredients, add the flour mixture alternately with the milk, adding the flour in 3 additions and the milk in 2 additions.
Transfer the batter to two 4-inch springform pans then bake at 350F for 20-23 minutes.

The desserts name comes from an era when cakes and pies were pretty much prepared in the same pans, and the words cake and pie were used interchangeably. In the late 19th century, sweets like this one were called cream pies, or custard cakes. Back in 1856, the then-newly-opened Parker House Hotel in Boston had a chef from France, Augustine Francois Anezin, who developed what we now know as Boston Cream Pie. This cake was probably called a pie because in the mid-nineteenth century, pie tins were more common than cake pans. The first versions might have been baked in pie tins. Boston Cream Pie is a remake of the early AmericanPudding-cake pie.
1856 The Parker House Hotel , claims to have served Boston cream pies since their opening in 1856. French chef Sanzian, who was hired for the opening of the hotel, is credited with creating Boston cream pie. This cake was originally served at the hotel with the names Chocolate Cream Pie or Parker House Chocolate Cream Pie. This was the first hotel in Boston to have hot-and-cold running water, and the first to have an elevator.
1879 In the cookbook, Housekeeping in Old Virginia, by Marion Cabell Tyree, has the following recipe for Boston Cream Cakes:Boston Cream Cakes:1 1/2 cups of water1 cup butter5 eggs
Boil the butter and water together, stir in the flour while boiling after it is cool, add the eggs, well beaten. Put a large spoonful in muffin rings, and bake twenty minutes in a hot oven.
The cream for them is made as follows: Put over the fire one cup of milk and not quite a cup of sugar, one egg, mixed with three teaspoonfuls of corn starch and one tablespoonful of butter. Boil a few moments only. When cool, add vanilla to the taste.
Open the cakes and fill them with this cream.

- Lightly grease two 9″ round pans or line with parchment paper rounds., Beat the sugar and eggs together until they’re light and fluffy, about 2 minutes at medium-high speed using an electric or stand mixer.
- Slowly beat in the vegetable oil., Weigh your flour or measure it by gently spooning it into a cup, then sweeping off any excess. , Add the flour, salt, and baking powder to the egg mixture in the bowl, beating just enough to combine.
- Scrape the bottom and sides of the bowl, then beat again, to fully incorporate any sticky bits., In a saucepan set over medium heat, bring the butter and milk just to a boil.
BOSTON CREAM PIE RECIPE – SUGAR AND SOUL
- Bring the milk, vanilla bean, and vanilla bean paste to a boil over medium heat in a small saucepan, whisking occasionally. Once it starts to boil, immediately remove it from heat and set aside for 15 minutes to infuse.
- Add heavy cream to a small saucepan and bring to a simmer. Add chocolate chips to a small bowl and pour hot cream over them, let sit for 5 minutes. Then stir until a rich chocolate ganache forms, let sit for 5 minutes.
- Gently cut the tops off of 2 of the 3 cakes with a bread knife or cake wire, place one cake layer on a cake stand or plate. Use a spoon to add half of the pastry cream on top of the cake and use the back of the spoon to spread it out evenly. Repeat for the next layer.
