Here Are Some Tips For Making A Sugar Free Low Carb Chocolate Cake

This is an oil-free recipe that uses butter as the fat and for flavor. Feel free to sub in vegetable oil if you prefer too.

Here are some more helpful tips for you.

  • I mentioned that this recipe uses both almond flour and coconut flour. Almond flour can be substituted for 1:1 with anything that measures 1:1 with flour. However, the coconut flour is not proportionality equal and should not be substituted as this is a cake recipe and balance of ingredients in important.
  • Monk fruit is used as the sugar alternative in this recipe. If you are wanting to substitute another sugar, find something that measures 1:1 with monk fruit, can be baked with, and is granular.
  • This chocolate cake is topped with a chocolate mousse frosting . It is important that your cake is fully cooled down before adding the mousse frosting.

    How To Make The Best Gluten

    Preheat oven to 350°F. Grease two 8-inch cake pans, line with parchment paper, then grease the parchment paper too.

    Mix the coconut milk and vinegar together in a mixing bowl and set aside for 10 minutes. Add the Instant Coffee granules to a measuring cup and fill with 1 cup boiling water to make 1 cup of coffee . Set aside

    Add the gluten-free flour, cocoa powder, coconut sugar, baking soda, baking powder, and sea salt to a large bowl and whisk well until combined. Set aside.

    If using chocolate chips, add them to a measuring cup with 2 teaspoons of flour and stir well to coat the chocolate chips in flour .

    Add the avocado oil, eggs, and vanilla to the mixing bowl with the coconut milk and use an electric hand whisk to mix together wet ingredients on medium-high speed until combined.

    Pour the wet ingredients into the mixing bowl with the dry ingredients, add the hot water/coffee, and whisk or beat on low speed until the batter is completely combined. Stir in the chocolate chips until well combined.

    Divide batter evenly between the two cake pans. Bake for 23-26 minutes or until a toothpick inserted in the center comes out clean.

    Remove the cakes from the oven and set on a wire rack. Allow to cool completely in the spring form pans.

    While the cakes are baking or cooling, prepare the chocolate buttercream .

    Use the remaining buttercream to spread all over the cake you can go as liberal or conservative as youd like here depending on how much you love buttercream.

    This chocolate cake is moist and chocolatey. It is just 4 ingredients and doesnt contain any flour, added sugar, butter or oil. The cake texture is just like regular chocolate cake and will satisfy your chocolate cravings.

    After a few weeks of indulgent desserts, I wanted to make something a little healthier. This cake is still rich and chocolatey but it doesnt contain any added sugar, flour, butter or oil. It only takes about 15 minutes to prepare and then its ready to go in the oven.

    How To Make Keto Chocolate Cake

    1.) Whisk the eggs with a hand mixer in a large mixing bowl until they have doubled in size and are frothy.

    You want to make sure that the eggs are ROOM TEMPERATURE. If you forgot to take them our 30 minutes before starting on the cake, you can always warm them up in a bowl with hot water.

    Keeping the eggs at room temperature prevents the mix from splitting and becoming lumpy once you add the warm chocolate and butter.

    2.) Add the powdered erythritol and whisk again until well-combined.

    Tip: If you only have granulated sweetener, blitz it in a food processor or with the attachment of a stick blender to turn it into a powder. You don’t want any crunchy bits in your gooey, moist chocolate cake!

    TASTE the cake batter and add more sweetener if necessary. I don’t have much of a sweet tooth, so you may prefer it a little sweeter than I do.

    3.) Melt butter and chocolate and stir until combined. You can do this in a microwave or on the stove – but slowly and gently. TAKE YOUR TIME!!! If the chocolate gets too hot too quickly, it can seize or separate.

    Then add the mix to the bowl and fold it in with a spatula or spoon.

    4.) See how it’s slowly coming together?

    5. And this is how it should look like – gooey, creamy goodness!

    6.) Lastly, you add the almond flour / ground almonds and stir until they are evenly distributed.

    Let the cake cool completely before cutting.

    How To Store This Sugar

    In the rare even that there are leftovers, they should be kept refrigerated in an air tight container for up to four days.Freezing is another option and one that I often use.

    How to make Sugar Free Low Carb Chocolate Cake.

    • Preheat your oven to 325 and grease a round cake pan well for nonstick.
    • In a medium mixing bowl, use a whisk or a fork to mix together the almond flour coconut flour, baking powder, and salt. Set this bowl aside.
    • Next, in a mixing bowl, beat together the butter and monk fruit until creamy. Add the melted chocolate, whisked eggs, vanilla extract, and apple cider vinegar and mix until just combined.

You can spread the mousse frosting on the top and sides of the cake. The easiest way is to use a spoon but if youre after a fancy look, use a bag and a piping tip.

    I am actually quite excited about this vegan chocolate cake because I was so shocked that it actually tasted good. I know not all vegan stuff is bad, but I just thought hmmm.

    A lot of fellow bloggers I follow have posted vegan or healthy recipes lately and I thought, what the heck, lets give it a try. Along with that, all of the special ingredients I needed from the store happened to be on sale or I had a coupon.

    The Right Way To Melt Chocolate

    Which brings me to my second recommendation: Take your time melting the chocolate!

    When you melt the butter and chocolate in the microwave, do so in 30 second bursts. Mine was mostly melted after 90 seconds in total. I then left the bowl on the kitchen counter and stirred it from time to time. This caused the rest of the chocolate to melt slowly.

    If you don’t have a microwave, you can melt chocolate in a water bath. For this, you either place the bowl with your chocolate and butter in a heat proof bowl over a pot with boiling water. Once the chocolate is half-melted, remove the bowl and let it fully melt by stirring occasionally.

    Storing And Freezing Tips

    • To store: Leftover cake can be stored in a sealable container, at room temperature. It will keep well for up to 7 days. To ensure it remains moist, place paper towel over the tops of it, before sealing. Refrigerate the cake if youd like it to keep longer than 7 days.
    • To freeze: Place pieces of cake in a freezer friendly container and store in the freezer for up to 6 months. Thaw in the microwave for 30 seconds, or in the refrigerator overnight.
