In general, birthday cake flavors lean on the sweeter side. What matters to me is how powerful the sweetness is. This ice cream was definitely sweet, but the almond milk helped keep the sweetness balanced without taking away from that classic birthday cake flavor. Inside the ice cream, you get pieces of birthday cake blondies from Greyston Bakery. This was my main disappointment because the blondie bits were not quite as substantial and/or firm. They were more underbaked and gooey in my pint. But, that is a personal blondie preference.

Since ice cream scoopability is an important factor to consider , Id like to note that this did well. I dislike pints because scooping can be challenging, but this ice cream is very scoopable. In fact, its so scoopable that when I first tried to get some out, I over-estimated my strength and a scoop went flying across the floor. It was TRAGIC.

To freeze a frosted cake, place your cake in the freezer for about 2 hours to set. Then wrap the cake in plastic wrap, then in aluminum foil. The cake will last in the freezer for up to 2 months.

  • Line your cake pans with parchment paper .
  • Twist open enough of the sandwich cookies to cover the bottom of the cake pan with a single layer of cookies. Break some into smaller pieces to fill the gaps as best you can. For cupcakes, one cookie fills the bottom perfectly.
  • After lining the bottoms of your pans with both parchment and cookies, it’s time to prepare the cake batter.

    Is This Cake Vegan

    I call this cake vegan because many people I know personally who follow a vegan diet will eat it, however Oreo cookies are not technically vegan due to potential contaminants within the factory despite not actually containing any animal products themselves.

    Also if you are wanting to make it vegan, double check your ingredients particularly the chocolate to make sure you are using one that is certified vegan. Most good quality dark chocolate doesnt contain dairy but it doesnt hurt to get into the habit of reading the labels.

    For the buttercream the quality of vegan butter that you use is everything, so try and find one that resembles the texture and flavour of real butter . In Australia I only use Nuttelex products , and in the US the alternative is Earth Balance.

    Finally a note on the milk. I like to use vanilla flavoured almond milk when making this cake as I like the results, however I understand that almond milk may not be the best ethical dairy alternative for some people, so soy or oat would work as a substitute here as well.

    • In the photos I had used a baking dish that was a bit too small, so the butter cookie cake turned out quite high. Therefore, your baking pan should not be smaller than mentioned in the recipe. It can be a little larger, however, the cake may then be ready a little sooner.
    • If you want to bake a large deep tray for a birthday, you can also double the recipe.
    • Feel free to line the baking pan with parchment paper or cling film beforehand. Then you can lift out the butter cookie cake more easily later.
    • If there is some whipped cream left over, you can put it in a piping bag and use it for decorating.

    To make this eggless Vegan Oreo Cake you will need:

    Flour: Just regular old all purpose for this recipe.

    Baking Soda and Baking Powder: A combination of baking soda and baking powder give the cake a nice lift.

    Salt: For balance.

    Cocoa Powder: My favorite cocoa powder is the Whole Foods 365 brand. It lends a dark, rich flavor to this Vegan Oreo Cake.

    Sugar: just regular granulated sugar, here.

    Non Dairy Milk: I used So Delicious Coconut Milk, as I do for most of my baking.

    Instant Espresso: Instant espresso helps round out the cocoa flavor, making it more intense. But, you can sub instant coffee here if you cant fins instant espresso.

    Vinegar: I use vinegar to make a kind of vegan buttermilk. This will activate the baking soda and help the cake rise. This is how we are able to keep this Vegan Oreo Cake totally eggless.

    Vanilla: Vanilla also helps round out the cocoa flavor.

    Canola Oil: Canola oil keeps this cake nice and moist.

    Oreos: It wouldnt be a Vegan Oreo Cake without Oreos. So, the Oreos are chopped up and mixed with buttercream to fill the cake and then placed on top as decoration.

    Ganache: The ganache is optional here. But I recommend it. Its an extra step, but the payoff is big in look and taste.

    Vegan Vanilla Frosting: You will need one and a half recipes of my Vegan Vanilla Frosting to fill and frost this cake. But, if you like, you could just buy store bough and skip the step.

    What I love about this recipe is that the cake batter comes together in ONE BOWL.

    First, add all your dry ingredients to a large mixing bowl and mix until combined. Add your wet ingredients and mix until just combined. Add your crushed Oreo cookies and fold through!

    How To Make Chocolate Ganache

    The final, and maybe a little extra, part of this cake is the decorative chocolate ganache drip. Making ganache may sound difficult but it comes down to two ingredients chocolate and cream.

    Because there are only two ingredients, the quality is important here so make sure you get the best quality chocolate that you like/meets the dietary requirements you need. I also use my favourite coconut milk from the can because its super thick and creamy. Either coconut milk or cream will work here, just make sure its from the can.

    To make the ganache, chop up the chocolate into small pieces and place it in a bowl. Next heat up your coconut milk until warm. Add ¼ cup to the chocolate pieces and let sit for a couple of minutes. The heat from the milk will melt the chocolate. Mix together using a spoon or whisk until glossy and all the chocolate has melted.

    If your chocolate isnt melting, sit the bowl in another bowl of warm water. Continue to add more warm coconut milk a tablespoon at a time until you reach the desired consistency for your drip.

    How To Fill The Vegan Oreo Cake

    First things first, make the vegan cookies and cream filling for the cake. To do this, simply combine one cup of frosting with a half cup of chopped Oreos and stir.

    Second is the most important step. Pipe a boarder around the outside of the cake layer with vanilla buttercream. This will keep the exterior of the cake clean.

    Then, dollop half of the cookies and cream mixture onto the center of the cake and spread it evenly.

    Next, top that with a handful of chopped Oreos.

    Finally, top with the next cake layer and repeat!

    Once the cake is stacked, frost the exterior with Vanilla Frosting as you would with any other cake. My favorite tool is a mini offset spatula.
