Can I Use Frozen Bananas For These Cookies

Yes, you can use frozen ripe bananas for these banana chocolate oats cookies. Just make sure that the frozen bananas have thawed completely before using and are at room temperature. Discard any liquids that may be in the bag of thawed banana and if needed, you can add 1-2 tablespoons of water or milk into the cookie dough to help get the dough wetter if its too dry and crumbly to combine while mixing.

Tips To Make The Best 5 Ingredient Banana Bread

  • Do not overbake the bread. As this recipe uses oatmeal instead of flour, it is prone to drying out very easily.
  • While milk isnt included in the ingredient list, you may need to add some of it if your batter is too thick . Alternatively, you can add an extra banana or two.
  • This bread is not overly sweet, relying on the banana and maple syrup for sweetness. If youd like a sweeter bread, add 1/4 cup of your favorite granulated sweetener or sugar.

To ripen bananas quickly, preheat your oven to 300F and place bananas in their peel on a baking sheet. Bake for 10-20 minutes at 300F and remove from the oven as soon as the peel turns black.

Allow the bananas to cool slightly. Then, peel the bananas and use them in your recipe!

When making this bread I like to use either semi sweet chocolate chips or dark chocolate chips. It really is up to you on what type of chocolate to use. If you like it a little sweeter you can try milk chocolate chips or if you want no added sugar, use bittersweet chocolate chips.

You can also choose to use either regular sized chocolate chips or the miniature chocolate chips.

Keep these cookies stored in an airtight container in the fridge for up to a couple of days For best results, these cookies will last about 3-4 days. If desired you can reheat the cookies in the oven of a microwave to get that warm and fresh from oven taste back into the cookie as these cookies do taste the best when they are warm.

  • Use frozen bananas. If you are using bananas from the freezer, just be sure to pull the bananas out of the freezer the night before so that they can thaw. Have them come up to room temperature before using.

I love freezing loaves of oatmeal chocolate chip bread! How you prepare the bread for freezing really depends on how long you intent to keep it frozen. If you just want to freeze it for a week or two, Id wrap it in plastic wrap or foil and place the loaf in a large freezer ziplock bag. Most often, when I bake bread to freeze it, Ill bake mini loaves so that they fit in the ziplock bag easier. If you want to freeze it for 2-6 months, Id wrap it more securely, making sure its airtight and wrapping it in a double layer of foil or plastic wrap, then place it in a ziplock bag.

Substitution Notes For Vegan Oatmeal Banana Bread

  • Bananas: say what?! You want to sub the bananas?! Lol. If you prefer pumpkin, try my reader-loved Gluten Free Vegan Pumpkin Bread.
  • RemovingOats: If you prefer a moist banana bread without any whole oats in it, try my Best Moist Chocolate Chip Banana Bread Recipe or my Moist Banana Chocolate Chip Muffins.
  • Coconut Oil: sub with melted vegan butter or your favorite flavorless oil.
  • Coconut Sugar: sub with organic cane sugar or organic brown sugar.
  • Maple Syrup: sub with another liquid sweetener, like date syrup, agave or honey .
  • Flax Eggs: sub with chia eggs.
  • Almond Milk: sub with your favorite milk.
  • GF Oat Flour: you can try subbing with gluten free all purpose flour. However, keep in mind that all gluten free all purpose flour brands are different. Some are super grainy, some are gummy, some are overly chewy. The best option is gluten free oat flour. Do not sub with coconut flour or almond flour.
  • Note: Baking is fun, but can be super tricky if youre changing up the recipe. Keep in mind that the more changes you make, the less likely youll get desirable results. Each ingredient interacts differently within this banana oat bread recipe. Good luck!

How To Make Chocolate Chip Oatmeal Bread

Mix the oats, buttermilk, egg, brown sugar and oil together in a large bowl. You can use a large spoon for this and mix just until everything is well combined. Let the mixture sit for about 10-15 minutes so that the oats can soften up a bit.

Add the flour, salt, baking soda and baking powder and stir until fully combined but make sure not to over mix. If you mix too much at this point or use an electric mixer, you will likely have a more flat/dense bread than you want. Less is more when it comes to mixing quick breads! Gently fold in the chocolate chips.

Pour the batter into a well greased bread pan and bake at 325° for about 50-55 minutes or until a toothpick inserted in the center comes out clean. Cool in the pan for about 15-20 minutes and then remove from pan and transfer to a wire rack to cool completely. Slice, serve and enjoy!

Store the banana bread in an airtight container on the kitchen counter for 2-3 days. You can also store the bread in an airtight container in the fridge for about 4 days. Lastly, individually wrap slices of the bread and freeze for up to 3 months. This works great for meal prep. Pop a slice in the microwave whenever you want!

How Do You Make Oat Flour

  • First weigh out the exact amount of flour you need in the recipe in oats. So if you’re recipe calls for 250g of flour, weigh out 250g of oats.
  • If you use cup measures whizz up the flour first then measure out in cups to get an exact measurements.
  • Place your oats in a food processor or blender and whizz them until they turn into a fine flour.

    These cookies are best served still warm! I love serving them with almond milk for dunking or a smear of nut butter!

    • Preheat oven: Start by preheating the oven to 350 degrees F.
    • Begin making dough: Add banana, both sugars, butter and vanilla to a stand mixer with the paddle attachment. Mix until combined. Stir in egg and vanilla. Combine oats, flour, baking soda, cinnamon, nutmeg and salt in a medium bowl.
    • Dry ingredients: On low speed add in dry ingredients to the banana mixture just until combined. Fold in chocolate chips.
    • On a baking sheet lined with a silicon baking mat scoop heaping 1 tablespoon cookies.
    • Bake: Put baking tray in the oven for 10-12 minutes or until golden brown and set.
    • Cool: Allow cookies to cool on pans for 5 minutes then transfer to a wire rack to cool completely.
