Use this recipe from our Test Kitchen when you need pastry for a double-crust or lattice-topped pie.

Yield Pastry for 1 double-crusted or lattice-topped pie .
Number Of Ingredients 4
| 6 to 7 tablespoons cold water |
Steps:
- In a bowl, combine flour and salt cut in shortening until crumbly. Gradually add water, tossing with a fork until dough forms a ball. Divide dough in half so one ball is slightly larger than the other., Roll out the larger ball to fit a 9-in. or 10-in. pie plate. Transfer pastry to pie plate. Trim pastry with even with edge of plate. Pour desired filling into crust. , Roll out second ball cut slits in pastry. Position over filling. Trim pastry to 1 in. beyond edge of pie plate. Fold top crust over bottom crust. Flute edges. Bake according to recipe directions.

I got this from my mother. She has used it for as long as she has been baking. It is very easy to make and tastes wonderful. I use heaping tablespoons of shortening because I like a very short crust.

After immigrating to America in 2009, a home-sick South African family was craving their favorite comfort food from home. One night over dinner a family pie franchise was concocted.The concept was there all that was missing was the chef. Lauren was finishing up her degree in Art History in Charleston, SC, when she stumbled upon a fellow South African expat flipping crepes at the Charleston Farmers Market. Adam turned out to be a self-taught chef and food enthusiast. After completing his Masters in Neuroscience he ditched his plans for a future in medicine to pursue a career in the culinary arts. With much guidance and inspiration from Lauren’s father, Lauren and Adam opened the first Panburys pie shop in 2014, at the Sweet Auburn Curb Market in Downtown Atlanta.
