  • In a small bowl add powdered sugar, lemon zest, and lemon juice. Using a fork or whisk, mix until the glaze has no clumps.

This can cause the cake to sink when pulled out of the oven. Pound cakes are not meant to be dense! You can take the following steps to make sure this doesnt happen to you: Beat the batter by hand like I do, or on medium speed with a mixer. When you add flour, mix gently until just blended. Dont over mix.

Some people might think that because its a franchised coffee shop that the food wont be that good. But honestly, you need to try it before you knock it.     This lemon loaf cake recipe has been beyond a long time in the making. Ive been trying to make this copycat Starbucks lemon loaf on and off for years. I cant even tell you how much I have obsessed, tried, trialed, and failed at it. Until now.

    If youve ever had Starbucks Lemon Loaf, you know how good it is. Full of lemon flavor, moist, dense, and rich. Anything that good I shouldnt want to learn how to make at home, but I couldnt leave well enough alone.

    Ive tried countless internet recipes for lemon bread and some were fine but not quite perfect, while others were total fails. And I definitely didnt want to go the cake mix route.

    Ive tried using butter creamed with sugar versus oil whisked with sugar. Ive tried various combinations of whole eggs and yolks, cake flour and all-purpose flour, and endless variations of lemon juice, lemon zest, and lemon extract.

    I even sent one almost-a-possibility-but-not-quite to my mom to have her trial it.

    Something as simple as a lemon loaf cake eluded me for ages until I rediscovered and slightly adapted my own 2012 recipe for Blueberry Yogurt Cake with Lemon Vanilla Glaze. Its an easy, no-mixer, one-bowl, whisk-together batter.

    From my existing recipe, I added an extra egg, omitted the blueberries and incorporated lemon zest and lemon extract into the batter, and baked it in a loaf pan rather than a cake pan. Love it when the answer to my lemon pound cake prayers was right under my nose!

Some lemon bread recipes use lemon cake mix or pudding mixbut were going full-on homemade here. Other lemon pound cake recipes also use a simple syrup, which you could totally make to make it even moister, but Im all for ease and thats just an extra step Im not going to do, ha!

    • Infuse the sugar with lemon flavour to get the most out of your lemons, you can rub the sugar with the lemon zest first before mixing with the liquid ingredients. The essential oils in the yellow zest will coat sugar crystals and carry all of that wonderful flavour through the batter!
    • Do not reduce the sugar the right amount of sugar will keep this loaf soft.
    • Sift the dry ingredients! In order to get a smooth batter and soft, light texture, it is important to break up any lumps in the flour.

    So I wanted to find the perfect Starbucks copycat lemon loaf recipe so that I could make a delicious lemon loaf at home and eat 3 slices without the embarrassment of ordering all 3 from the Barista.

    Dont sleep on the lemon zest! Lemon zest will provide just as much lemon flavor as the lemon juice, so its important not to skip out on it in your lemon poppyseed loaf.

    So, how do you zest a lemon? No, it is NOT a stupid question! Its actual super, super simple. Just wash your fruit and whip out your zester. If you dont have a zester I would highly recommend investing in one, but you can also use a microplane. In desperate times I have even used a fine cheese grater and it does the trick. Hold the zester at an angle and pull your lemon across until you reach the white of the rind. Rotate your lemon, repeating until youve gone all the way around your fruit. All of the zest will gather on the back side, where you can just scrape it into your batter!

    • Get all the ingredients together.Soften the butter or let it come to room temperature. Preheat the oven to 350 degrees F.
    • Using a stand mixer or hand mixer, cream the butter and sugar together until it is light and fluffy. Add the eggs one at a time, and beat into the mixture. Add the lemon zest and vanilla extract and beat well.
    • In a mix the dry ingredients – flour, salt, and baking soda. Then mix carefully until combined.
    • Using a LOW setting on the mixer, slowly add about one third of the dry ingredients into the butter mixture, then mix, then add half the sour cream, mix, then one third of the dry, mix, then the rest of the sour cream, mix, then the rest of the dry ingredients and mix until combined. Scrape down the edges of the bowl, then mix again and set aside.
    • Add the mixture into a greased or parchment lined loaf pan , then place into the preheated oven. Set timer for 50 minutes. Check doneness of the copycat Starbucks lemon loaf with a toothpick after 50 minutes. Cook additional 5-10 minutes if needed.

    This recipe is simple to prepare and you can make it with just a whisk and a large bowl!

    • STEP 1). Infuse the sugar. Add sugar to a large bowl with the lemon zest and rub it together until the sugar is fragrant and takes on a hint of yellow.
    • STEP 2). Mix in eggs. Add eggs and whisk until blended and smooth. This should dissolve the sugar a bit for an even more moist loaf.
    • STEP 3). Add wet ingredients. Add melted butter, oil, milk, sour cream and vanilla and whisk until pale and creamy.
