After attending the Celiac Foundations gluten free Food Faire back in June, I blogged about Udis bread. Seriously, really, really good stuff. The fine folks at Udis read that post, and decided to send me a wonderful package of goodies. Seriously, it was like Christmas. SO GOOD! The package contained pizza crust, Double Chocolate muffins, a loaf of Whole Grain bread, and Lemon Struesel muffins. They asked if I could post a few recipes using these goodies in the recipes. I had contemplated using the muffins in recipes, but then was afraid those recipes would fail, and I would be out muffins. So, the muffins I put in the freezer to enjoy as time went on.

This is my favorite muffin. The double chocolate muffin. It is FANTASTIC! Such a great texture & flavour. Warmed up in the microwave, it is amazing. Mmm

Everyone brags about how you dont have to toast Udis bread. And thats true. Very true. You can have a fantastic sandwich without having to toast it. However, if you do decide to toast it, you will be amazed! This bread toasts up fantastically. There is no need to double toast it , and it browns up just like regular toast. So, I made myself a grilled cheese sandwich. Nothing fancy here, just some margarine spread on the outside of the bread, and some cheese slices in the middle. But, I havent had a grilled cheese sandwich in over 2 years, since going gluten free. This was such a delight to have for lunch. So simple, but so good!

Can Those With Celiac Disease Eat Store Bought Gluten Free Bread

Yes, if you suffer from celiac disease, you can eat store bought gluten free breads.

However, I would caution you to be extra diligent about reading labels

Remember, just because something isnt made with gluten-containing ingredients doesnt mean that it cant be contaminated somewhere during the manufacturing process.

Gluten can hide in the soil of farms and on the machinery at plants, plus countless places in between. For this reason, you should always look for certified gluten free breads.

If youre on my email list, I asked you what your favorite brands are, and you poured your gluten-avoiding hearts out! Ive been through many loaves of bread. If it was a total dud , Im not reviewing it here.

My intention in publishing these reviews is not to stir up controversy, harm anyones business or even support anyones business to be honest. When I posted something on my Facebook page about how Udis bread is hard to separate, someone angrily accused me of endangering their business.

Clearly, that isnt my purposebut I also have no obligation to pretend that reality isnt what it is. My intention is simple. I want to help you, the consumer, spend your money wisely.

Packaged gluten free products are more expensive than conventional products, and always will be. The market for these products is smaller, and the ingredients are more expensive .

But weve come a long way since 2004 when my family first went gluten free. Back then, we ordered some bizarre gluten free packaged bread from Canada that not only couldnt be eaten untoasted but lost its toast within minutes. And the cost was insane. Well, weve come a long, long way since then.

Everyone knows that I love baking fresh homemade gluten free bread. My children adore it when they have it for their school lunches, and my husband loves it because its cheaper.

That isnt the stuff really of my dreams, but it is of theirs. But its just not realistic.

Mock Udis Gluten Free Whole Grain Bread Recipe

If you havent heard of Udis gluten free bread, youre missing out on a great textured gluten free bread that is also dairy-free. However, if youre into gluten free baking or avoiding processed food, this recipe may help you. It is the softest gluten free bread I have made thus far, and works wonderful for sandwich bread, as well as kid-friendly. It turns out a decent sized slice, and when the crust cools it softens like gluten sliced sandwich bread.

My first attempt at creating bread like Udis Gluten Free Whole Grain Bread turned out delicious, but I had to cut off the ends of the bread to allow the steam to escape so it would not continue to cave in on the sides and bottom. I continued to improve upon this recipe and finally achieved a good result.

Udis gluten free bread contains evaporated cane juice in addition to the natural sweeteners. Sugar makes gluten free bread soft, especially when rewarmed. In addition, it feeds the yeast. You may skip the evaporated cane juice, if desired, as the the molasses and brown rice syrup were enough to proof the yeast, but feel free to add some, as the more sugar you use, the softer the bread. When viewing the order of the Udis ingredients the evaporated cane juice is pretty high on the list, meaning the quantity is pretty high, though I only suggest 2 teaspoons.

As I try different methods that turn out well, I will update this recipe.

There are many options for buying gluten free sandwich bread at the store. In addition to national brands that you can now find throughout the country, like Udis and Schar, there are also numerous small manufacturers that sell to only certain regions.

Why Is Gluten Free Bread So Bad

From my experience, a lot of wheat alternative bread is usually dry, crumbly, and tastes extremely bland. This might be because most brands contain flours that don’t rise as well, like rice flour.

Or they might taste bland because they don’t include yeast as a rising agent at all.

But no matter the reason, most wheat alternative bread is usually best kept for sandwiches and not eaten alone.

Final Thoughts On Jersey Mikes Gluten Free Subs

To summarize, we really enjoyed our Jersey Mikes gluten free sub sandwich. We have a variety of options to eat, as all except two of the meat options are gluten-free. They took many good precautions in making our sandwich. I would prefer that separate toppings be set aside for those needing gluten-free. This is because any crumb of gluten is problematic for one with Celiac Disease. As Jersey Mikes continues their certification process, I imagine that the process will become even better. While the bread is $3 more for the large sandwich, I believe this is totally reasonable as they continue to talk precautions to keep us safe.
