How To Make Fried Apple Pies With Dried Apples

Frances Davis: Fried Dried Apple Pies

This recipe for Fried Apple Pies is made using dried apples and homemade crusts. They are either deep fried or fried in a skillet like my Mama used to make years ago. The only difference is I did not dry the apples and she dried her own apples. There is a recipe for Easy Fried Apple Pies using canned biscuits and Lucks apples on the site, too. They are both good but this one reminds me of the times I watched Mama frying these pies in a kitchen with no air conditioning or on a cold winter day using the dried apples from summer.

Fried Apple Pie Recipe

My Granny would make these pies for no special reason other than to have something sweet in the house. I can see the plate on the end of the kitchen table, covered with a towel, where we could nab one whenever we happened by.

They never lasted more than a day or so, and although best when hot from the skillet, they are also delicious at room temperature.

A few years ago, I decided to make Granny’s fried apple pies and when I called her to find out how, she said, “Just mix up your dough and stew your apples with a little sugar, then roll out each ball of dough and put a spoonful of apples inside and then fry it.”

Uh, ok. Could you be a little more specific please?

I thought maybe lessons were in order, so when Granny came to visit we had Fried Pies Day. Those turned out perfectly because she did most of the work.

After she left, I tried them on my own and realized I hadn’t written anything down. I had to have another Fried Apple Pies Day with Granny in which I did the work and remembered to write things down.

This is the thing about old recipes and old ways, a heritage which could easily slip away. Most dishes that our grandmothers or mothers or great-grandmothers prepared didn’t have written instructions or ingredient lists. Instead, they existed as integral parts of daily life.

You got up, made biscuits for breakfast, maybe fried chicken for dinner , and maybe pot roast for supper.

How To Make Fried Apple Or Peach Pies

1. In saucepan, combine together apples and water then bring to a boil. Make sure to cover, reduce heat, and simmer until tender, about 30 minutes. Once done, remove from heat and let cool, mashing slightly if pieces are large. Then you may stir in sugar and butter set mixture aside.

2. For the filling: If using fresh apples, you should add 2 TBS of butter to a large saute pan and melt. Immediately add 4 peeled, cored and chopped apples, sugar, cinnamon, and 1 tsp lemon juice together and cook over medium heat for 15 minutes, or until the apples are soft. Next, remove from the heat, mash slightly and cool.

3. Now please roll each biscuit into a 5-inch circle on a lightly floured surface, then place about 1 tablespoon apple mixture on half of each biscuit circle. Make sure to dip fingers in water and moisten edges of circles to seal pies. Remember to, fold in half, making sure edges are even, then press edges firmly together with a fork dipped in flour to seal.

4. When finished, pour oil to a depth of 1/2 inch into a heavy skillet, or use deep fryer. Then immediately fry pies in hot oil over medium-high heat until golden, turning once. Make sure not to rush it because you want the biscuit cooked completely through.

5. Finally, drain well on paper towels. This should make 10 pies.

RECIPE NOTES :

Amazing Homemade Apple Jacks

“Jacks”, or Fried Pies, are something of a southern tradition. You can find them in several varieties ranging from sweet potato to peach , however apple is the original. They’re often found in country stores, small gas stations, and from time even mom and pop restaurants.

Being a northern transplant, the first time I had ever heard of them, was actually from my mother-in-law. She happened to stop at a small country gas station that had some locally made treats on the counter and one of them was Apple Jacks. She picked one up for me to check out and wow, the apples, the hint of cinnamon, the flaky crust, and yes…the taste of the lard it was cooked in, pulled together to create a spectacular flavor profile, which totally blew my mind. It was love at first bite.

When the next craving arose, I decided to have a go at making a batch and I figured why not try to make them 100% from scratch .

I did a fair amount of research, not just on the pies, but also on which apples to use, how to dry them, and how to prepare them for the pie making process.

After a few attempts, I got it. The pies were tasty, flaky, and mouth watering .

I’ve since made them many times over, with nothing but fantastic results. In fact, they have become quite the favorite treat around our house.

I hope you enjoy this very simple, super tasty receipt!

Pies With Dried Apples

For early settlers, drying apples was the only way to preserve them for an extensive amount of time. Their method of drying was simple and required about 2 weeks. Today, we have more drying options and quicker drying methods. Two things that havent changed are the popularity of using dried apples to make pie and the irresistible urge to chew on a dried apple ring.

Traditional Fried Apple Pies

OLD TIMEY FRIED APPLE PIES

Traditional fried apple pies usually come wrapped in foil and heaped in a basket, youll have a hard time finding one southerner who doesnt know what these little jewels are. Traditional fried apple pies are crispy, sweet and a true indulgence.

Go to a cookout in the south and if these are on the table, youll soon see people stuffing them in their pockets and purses. It may be a long time before the dessert table is open but that never matters around here. People lose all their composure over a fried pie.

But I wont lie. Theres a reason. Good ones are made by 80 year old women named Ethel or Edna. They are old-school southern to the coreand they are frustrating.

Most people run from making pie. I dont, and even an experienced pie pro like myself gets a little flustered with these. The key is to cook those apples dry, not overfill them, and make sure your oil is the right temperature so you dont get them soggy.

Heres my best shot of my apples cooked down very thick. Do your best to get yours to this point:

As long as you do that, youll be fine. I hope.

Good thing Im feeling positive today!
