Why Arent There Potatoes In This Pot Pie Recipe

You can see from the ratings and comments on this post over the years that it is a very popular and delicious recipe! Sometimes people will share their own variations and that often includes adding potatoes.

Since the original recipe never included potatoes, I left them out of my modified version. I think its just a matter of preference. If you want to include diced potatoes, go for it! Id probably add one to two cups. I would also suggest using frozen potatoes such as diced hash brown potatoes that can be found in the frozen section of the grocery store.

Potatoes can be kind of finicky when it comes to freezing them and its best to use a parboiled potato. Since the other vegetables in this chicken pot pie recipe are also sautéed, stirring in frozen potatoes just before filling the pie crust would work best.

Years ago when I had my second baby I was surrounded by good cooks who spoiled me once the baby was born. This Chicken Pot Pie was one of those dishes that was dropped on our doorstep by a fellow mom-in-arms, ready to sneak a peek at our new bundle of joy.

It was the best chicken pot pie Id ever had, so good that it prompted me to get over my fear of double pie crusts.

It was the first homemade chicken pot pie Id ever had. And personally, I think this recipe is the gold standard by which all Chicken Pot Pies must be measured.

  • Stock up on ingredients when they are on sale. Chicken is your big ticket items here. Stock up when you see a good sale.
  • Shop at Costco. When I did my big grocery store showdown, I learned that Costco has the best price for a lot of the things I buy, plus they sell all the ingredients needed for this recipe. I love their rotisserie chickens and their cheapest-price-in-town for butter.

How To Make Frozen Chicken Pot Pie In The Air Fryer

Making this chicken pot pie in the air fryer is so fast and easy that anyone can do it!

All you have to do is first remove your frozen pie from the plastic packaging. Then, place your pie on a baking pan that fits in your air fryer. If you dont have one, you can make a makeshift pan out of a few layers of foil.

Put the baking pan and pie into the fryer at 360F and cook for 20 minutes. This will create a perfectly cooked center and crust. But, if you want the crust to be crispy, cook it for 5 more minutes.

Remove from the fryer and allow to cook down for 10 to 15 minutes.

Serve hot and enjoy!

You can leave it in its aluminum pie pan. Im cooking a pot pie with a top crust only thats in an aluminum pan. Keep in mind that your pot pie may cook differently if there is a bottom crust and if its in a paper pie plate.

Theres no need to slice vent holes in crust of the pot pie. Just put it on your hot air fryer tray or basket, and cover the top with foil.

I prefer to completely cover the top of the pot pie with foil, not just the edges of the crust. IMVHO, the finished cooked pot pie looks nicer when the whole pie is wrapped, with more even browning.

Put the pot pie in the air fryer. If you have an air fryer oven, position the pot pie in the middle of the oven.

Why We Love This Recipe

When I was younger, I used to LOVE a frozen pot pie. You know, the kind that comes in a little red box in the frozen food section? Loved them.

But as I got older, I realized they were full of extra calories and fat! Yikes! And some preservatives I didnt really want either.

So, years ago I went searching for a frozen chicken pot pie recipe that I could make at home. I found this one in the 30 Day Gourmet Big Book of Freezer Cooking cookbook and I knew it would be a winner since everything Id ever made from that book we always loved. A Pot Pie in Every Freezer. Hearty pot pies prepared and frozen can be future timesavers for busy moms. While you can freeze either baked or unbaked chicken pot pies, the unbaked dish promises more cooking success. A frozen baked crust turns soggy once you bake the pie because ice crystals leave moisture in the crust.

QUESTION: When freezing chicken pot pie, should you make and freeze or make, bake and freeze? Catherine McQuade, Canton

ANSWER: Chicken pot pie is one of those true comfort foods. The flaky crust paired with the creamy chicken and vegetable filling is one hearty meal. And most people I know agree: When it comes to pot pie, the crust is the best part.

If you want to make your own chicken pot pie, there are several ways to make and freeze so you dont end up with a soggy crust or too thin a filling.

When you want to make it and freeze, think of it like lasagna. You can make, bake, cool and freeze. Or you can make, assemble and freeze. Either way when youre ready to cook, theres no need to thaw just add a good 15-20 minutes of extra baking time.

Another way is to just make the filling, cool it and store in freezer-quality bags. This way, you can make several batches of filling and place the bags flat in the freezer. And if you make your own dough for the crust, you can make it, shape it into a disk and freeze it, too. Thaw the filling and dough overnight. You can roll out the dough for the bottom crust, add the filling and then the top crust in the time it takes to preheat the oven.
