How To Make Our Easy Biscuit Chicken Pot Pie Recipe:

Begin by preheating the oven to 400 degrees.

Then in a large pan, heat the vegetable oil on medium-high heat.

After the oil is hot, throw in the onions, broccoli, cauliflower, and thawed peas to saute them until they become tender. This should take about 5-7 minutes.

Then season the vegetables with salt and pepper to your liking.

When you are done sauting the vegetables, put them in a large bowl with the shredded chicken and set it aside.

Using the same pan, reduce the heat and add the butter to the pot.

Once the butter has melted, stir in the flour and cook it while stirring it constantly to make the roux.

Then carefully whisk in the milk, chicken broth, cream of chicken soup, and the dried thyme.

When that has all been added, allow the sauce to come to a simmer and let it simmer for about 1 minute to let the sauce thicken up and then add salt and pepper to your liking.

Once the sauce is thick, turn off the heat and put the vegetables and chicken in the pot with the sauce.

Stir everything together until the filling is well combined. If the filling is too thick, stir in a little extra chicken broth or milk until you get the right consistency.

Then pour the filling into a 9×13 inch baking dish and bake it for 18 minutes.

After 18 minutes, remove the dish from the oven and top it off with the 8 biscuits and put it back in the oven for another 10-12 minutes or until the biscuits are golden brown and the filling is bubbly.

When I get a craving for seafood I know my slow cooker seafood boil need to be on the meal plan. These beef ribs are also a nice change of pace and come out so tender in the Crockpot.

How To Make It

First the chicken and veggies are cooked in stock for about 15 minutes:

Then we fry up some onions with butter. Coat in flour and cook for a minute before gradually stirring in the liquid from the chicken and veg pan. Then we add milk and lemon juice too .

The chicken and veggies are added into the now-thick sauce. This is the point where I usually start eating the pie filling! If you have leftover pie filling, just save it as soup.

When I do make it past the soup stage, I like to wrap it in puff pastry. Not a puff pastry lid , a full-on pastry chicken pot pie.

I did go for the convenience of using ready-made puff pastry as I’m generally too lazy to make pastry from scratch.

It might sound a little strange using puff pastry for the base of the pie , but it works, and it saves the effort of using a different type of pastry for the base.

How To Make Chicken Pot Pie With Biscuit Topping:

STEP 1: Preheat oven to 400 degrees F

STEP 2: In a large dutch oven, melt butter over medium heat. Add chopped onion and cook, stirring occasionally until onions start to soften. Then add garlic and cook for 1 minute while stirring. Next, add flour and cook for 1 minute while stirring. Then whisk in broth and milk until smooth. Cook stirring frequently until mixture starts to thicken .

STEP 3: Add potatoes, carrots, and celery to thesauce. Reduce to a simmer, cover and cook for 10-15 minutes or until vegetables are tender.

STEP 4: While the vegetables are cooking start making the biscuits. In a large bowl combine the flour, sugar, baking powder, baking soda, and salt. Cut in the butter using a pastry blender until it resembles coarse crumbs. Or use a box grater and grate the butter, then mix into the flour. Then stir in the buttermilk .

STEP 6: Place the dough on a work surface and knead gently about 10 times just to finish combining the ingredients. Roll or pat into a 10×6 rectangle and cut the dough into 1 cubes.

STEP 7: When vegetables are tender stir in the chicken or turkey, peas, herbs, salt and pepper. Spoon the sauce into a 13×9 baking dish, then top with biscuit pieces.

STEP 8: Bake for 20-25 minutes or until bubbly and golden.

Chicken Pot Pie Ingredients

Shredded chicken breast or rotisserie chicken

Frozen mixed vegetable, my mixed veggies contains carrots, green peas, sweetcorn and garden peas

Unsalted butter

Bay leaf and fresh thyme

Red pepper flakes

Half and half: also known as single cream, substitute with semi-skimmed milk or dairy-free milk of choice

Chicken broth

Salt and freshly ground black pepper

Other Pie Filling Ideas

  • Add some fried pancetta or bacon to the filling.
  • Swap the chicken for leftover cooked turkey (cook the veggies without the meat, then stir the cooked shredded turkey into the creamy sauce before it’s poured into the pie dish.
  • Add mushrooms and/or leeks
  • Add a good dollop of Thai green curry paste to the sauce, swap the lemon juice for lime, and a splash of fish sauce to make a spicy Thai version. You could also swap out the veggies for green beans, brocolli and peppers if you like.

These days, Im looking for ways to not only get the most bang for my buck at the grocery store but also to maximize my efficiency in the kitchen.

Thats why when I make chicken pot pie with biscuits I go one of two routes

BISCUITS: If Ive got some time on my hands and want a totally homemade meal, Ill make my own biscuits from scratch. But, if Im on more of a time crunch Ill use refrigerated store-bought biscuits. They both taste great when used in chicken pot pie casserole, you cant go wrong!

CHICKEN: If I really want to save time, Ill but a rotisserie chicken at the store. I remove the skin, break the whole thing down, and chop up the chicken. Then I can pick up this recipe at cooking the veggies and go forward from there.

Chop And Saut The Vegetables

Dice the onions and celery, mince the garlic, and chop the carrots and thyme.

In a large cast-iron skillet, melt the butter over medium-low heat. Add the onions, garlic, celery, carrots, and thyme, and season with 1 teaspoon each salt and pepper. Sweat the mixture until the vegetables are soft and translucent, about 10 minutes.

Warm the chicken stock.
