  • Preheat the oven to 350 degrees F . Lightly coat the bottom and sides of two 8-inch round cake pans.

    Easy Ice Cream Cake Recipe

    1. Line an 8-inch cake pan with plastic wrap. Transfer all the ice cream to your lined cake pan and then cover with another layer of plastic. Press down into a flat layer and freeze.

    2. Prepare and cool an 8-inch chocolate cake and cover the top with the chocolate fudge sauce using an offset spatula.

    3. Sprinkle chopped cookies on top of the hot fudge.

    4. Remove the ice cream layer from the freezer, unwrap it, and place it on top of the fudge. Cover the whole thing in plastic and place in the freezer while you make the whipped cream.

    5. Combine cold whipping cream, sugar, and vanilla and mix starting on low. Gradually increase speed to high and mix until very soft peaks form. Finish off by whisking the whipped cream by hand until the peaks firm up. See my Whipped Cream Recipe for more instructions.

    6. Cover the cake with the whipped cream and transfer the rest to a piping bag fitted with a large closed star tip.

    7. Pipe a drip of chocolate onto the edge of the entire cake.

    Ice cream cakes were part of my childhood birthday party experience, but my first memorable ones werent until I was in my 30s, when I encountered the spectacular ones at Toscaninis, a renowned scoop shop in Cambridge, Mass., that happened to be down the street from the restaurant where I worked at the time. The triple-decker confections were how we celebrated staff birthdays, the layers of cold, rich ice cream strewn with crunchy cookies or candy gooey fudge and plush cake, all wrapped up in a smooth coat of vanilla-scented whipped cream, setting a festive tone.

    A decade or so later, when I decided to create my own version of the dessert, it felt only natural to seek out the advice of Gus and Mimi Rancatore, the brother-sister team behind Toscaninis. The pair emphasized that customization is key to the cakes universal appeal.

    You could colloquially say all Gods children eat ice cream cakes, but some want kulfi and some want cookies and cream, Gus told me.

    While the ganache cools, remove the vanilla ice cream from the freezer and let soften for 15-20 minutes on the counter. When the ice cream has softened, spoon about half of the vanilla ice cream into a gallon-size freezer bag. Snip the corner of the bag to create a half-inch round opening. Begin to pipe the vanilla ice cream around the inside edge of the springform pan, working your way almost to the top of the pan.

    Once the ice cream has been piped to the top of the pan, use an offset spatula to smooth the edges of the ice cream. You want to create a thin, smooth wall of vanilla ice cream around the edge of the pan leaving a hollow center to add the remaining ice cream, fudge and cookie crumbles. Freeze for 20-30 minutes until firm.

    Editors tip: If you dont have a means of piping the ice cream, you can also simply use an offset spatula to scoop and mold the ice cream around the inside edge of the springform pan. Its a bit messier but still works.

    How Do You Make A Homemade Ice Cream Cake

    You do have to think ahead of time because you will need to freeze each individual layer for the best results. Here is what the basic time frame looks like:

    Day 1:

  • Bake brownies and let cool. Pop in freezer for 30 minutes.
  • Combine hot fudge and crushed Oreos, and spread over the top of the brownies. Freeze for 1 hour.
  • Spread slightly softened ice cream on top of hot fudge/Oreo layer, and freeze for AT LEAST 6 hours, preferably overnight. You want it really firm.
  • Day 2 :

    • Spread salted caramel over the top of the frozen ice cream layer. Freeze for at least 30 minutes.
    • Prepare whipped cream. Spread over the top of the salted caramel layer when ready to serve.
    • with cookies, salted caramel and hot fudge drizzles if youd like. You can pop that back in the freezer for about 30 minutes if youd like the whipped cream to firm up. It doesnt take long!

    This cake may sound like a lot of work, but all in all, its about 20 minutes if youre going the store bought brownie route.

    I did make my own hot fudge sauce and salted caramel sauce. You could also make homemade brownies if youre into that sort of thing

    Pro Tips For Making This Recipe

    • Its best to slightly soften the ice cream before adding it to the cake pan so you can create a uniform layer, making it much easier to layer on top of the cake.
    • Be sure to press out any air pockets in the ice cream when adding it to the cake pan.
    • When lining the cake pan for the ice cream, be sure to leave some extra plastic wrap on the sides to make it easier to lift.
    • Try to have your kitchen as cold as possible to make sure the ice cream cake doesnt melt as you work with it. If your kitchen is on the warmer side, youll have to put your cake back into the freezer often in between steps.
    • To make cutting the cake easier, you can run your knife under hot water before slicing.

    Why Doesn’t The Ice Cream Melt In Baked Alaska

    This is the trick that makes this dessert so impressive! Just like fried ice cream, it boggles the mind that the outside of the dessert is warm and browned but the inside is still frozen.

    The easiest way to accomplish this is to use a kitchen torch to toast the meringue by hand. This method introduces the least heat to the ice cream and allows it to be unharmed by the fire.

    If you don’t have a torch, you can finish baked Alaska in the oven, but it’s trickier.

    Tips For The Best Ice Cream Sandwich Cake Recipe

    How To Make The Best Ice Cream Cake!
    • Use a very deep baking dish, if possible. Ive shown a deep lasagna pan here. If your dish is deep, you dont need to press down on the first layer of ice cream sandwiches just skip that step.
    • Thaw the whipped topping in the refrigerator overnight before you plan to assemble the cake. Do not thaw the whipped topping on the counter at room temperature, or the texture will be runny.
    • Allow the ice cream sandwiches to soften slightly so that you can gently press them down as youre creating the layers. This will help them fit in the pan!
    • Prepare the cake at least 1-2 hours in advance of when you plan to serve it. The cake needs adequate time to firm up in the freezer again before you slice into it.

    Remove the chocolate ice cream from the freezer and let soften for 15-20 minutes. Once the vanilla ice cream wall has firmed up in the pan, spoon the chocolate ice cream into the center of the cake pan lined with vanilla ice cream. Smooth and level the chocolate ice cream with an offset spatula.

    Types Of Ice Cream To Use

    My favorite flavors of ice cream to use here are cookies and cream or strawberry. But other great choices would be mint chocolate chip, cookie dough, chocolate, caramel, peanut butter, cherry, coffee, cheesecake, pistachio or vanilla bean.

    Then another variation here is to spread the whipped cream over the top and sides of the cake, or for a thicker layer only spread it over the top.
