    Pumpkin Pie With Spiced Whipped Cream

    Dress up pumpkin pie this holiday season with spiced whipped cream. When you add a dollop to each slice, this classic dessert will gather the yums around the table and be immediately elevated to fan-favorite.

    • 2 cups all-purpose flour, plus extra for rolling
    • 1 teaspoon kosher salt
    • ½ pound unsalted butter, cold
    • ½-¾ cup ice water
    • 1, 15-ounce can pumpkin puree
    • ½ cup sugar
    • ½ cup dark brown sugar
    • 2 eggs
    • 2 cups heavy whipping cream, cold
    • ¼ cup powdered sugar
  • Place flour, salt, and sugar in a large bowl and mix with a fork.
  • Cut butter into ½-inch cubes and add to the flour. Work butter into flour mixture until no large chunks remain.
  • Make a hole in the center of the mixture and add -cup ice water. Gently fold it into the flour and butter. Add more as needed, one tablespoon at a time, just until the dough comes together.
  • Turn the dough out onto a floured surface. Cut it into two equal pieces, shape dough into discs, and cover in plastic wrap. Let dough rest in the fridge for at least one hour.*
  • Preheat oven to 425 degrees F.
  • In a large mixing bowl, whisk together all filling ingredients until well combined.
  • Pour ingredients into a prepared 26.04 Cm Dual Cast Iron Pan. Bake for 15 minutes at 425 degrees F and then decrease the temperature to 375 degrees F. Continue to bake for 35-40 minutes or until a toothpick inserted in the center comes out clean.
  • Let pie cool at least one hour before slicing.
  • Use some extra cinnamon to sprinkle on top for garnish, if desired.

    S For Spring Cleaning The Pie Irons

    The steps are almost the same as cleaning the ones with burnt food bits, except I start with a bucket of soapy water and I usually do all of the pie irons at once.

  • Soak pie irons in bucket of hot, soapy water for 5-10 minutes. I do this outside, not in the kitchen or camper kitchen sink. The outside of pie irons are always sooty and make a huge mess! I use dish soap and a rag that gets thrown away when I am finished.
  • Scrub the inside and the outside of the pie irons, using a scrub brush or even steel wool when necessary to remove any rust. The outside soot will not come all the way off, so dont set it on your leg to scrub- you will end up with permanently sooty, camper jeans.
  • Rinse with hot water.
  • Dry thoroughly over coals or a fire.
  • Carefully!! Add a small, nickel size, amount of oil to each warm/hot pie iron half. I use canola or vegetable oil.
  • Wipe the inside of each pie iron half with a paper towel, so it is coated with oil-be careful, they are still hot and the oil is getting hot too.
  • Reheat over the coals or fire for a few minutes to set the oil coating. Dont super heat the pie irons or cause the oil to smoke. But, if it does start to smoke and form little dots of oil on the pie iron-take it off the fire, let it cool a bit and redistribute the oil by wiping it again with a paper towel-carefully, since its probably still hot!

    This recipe uses the Basic Pie Dough recipe, then adds cheddar cheese for a subtle savory element. A small, meditative practice of layering the apples in the pie pan makes for a classic apple pie, all grown up.

    • 2½ cups all-purpose flour
    • 1 teaspoon kosher salt
    • 2½ ounces grated cheddar cheese
    • ½ pound butter, cold
    • 1 tablespoon apple cider vinegar
    • ice
    • 2 pounds apples, peeled and sliced
    • 1 tablespoon lemon juice
    • ¼ teaspoon freshly grated nutmeg

    Grandmas Iron Skillet Apple Pie

    This three-layer apple pie is a Southern favorite!

    5 Granny Smith apples peeled, cored, quartered, and thinly sliced
    3 refrigerated prerolled pie crusts
    1 cup white sugar, divided
    2 teaspoons ground cinnamon, divided
    ¼ cup white sugar
    1 tablespoon butter, cut into small chunks

    Steps:

    • Preheat oven to 350 degrees F .
    • Place 1/2 cup butter into a heavy cast iron skillet, and melt butter in the oven. Remove skillet and sprinkle with brown sugar return to oven to heat while you prepare the apples.
    • Remove skillet, and place 1 refrigerated pie crust on top of the brown sugar. Top the pie crust with half the sliced apples. Sprinkle apples with 1/2 cup of sugar and 1 teaspoon of cinnamon place a second pie crust over the apples top the second crust with the remaining apples, and sprinkle with 1/2 cup sugar and 1 teaspoon cinnamon. Top with the third crust sprinkle the top crust with 1/4 cup sugar, and dot with 1 tablespoon of butter. Cut 4 slits into the top crust for steam.
    • Bake in the preheated oven until the apples are tender and the crust is golden brown, about 45 minutes. Serve warm.

    Apple Pie in Table Talk Pie Plates (plus cast iron skillets)

    Made from cast iron, this is an incredibly sturdy pan that will hold up to decades of use. The pan came pre-seasoned, so it was ready to use right away. Still, I had space in the oven and a little time, so I gave it a quick extra seasoning in the oven. Every time I used it and cleaned it, I gave it a light coating of oil. While I didnt cook greasy foods in the pan, pie crusts have oil in them that will continue seasoning the pan as its used.

    While I’ve made plenty of pies, I had never made one in a cast iron pan. I’ve used ceramic, glass, heavy-duty aluminum, and stainless steel pans, and even disposable aluminum pans, but until now, I’d never considered cast iron. Now that I have, it makes perfect sense. It holds heat well, it heats evenly, and it promotes browning. Its also nonstick, so slices of pie wont fight to stay in the pan.
