If Im being honest, chocolate and peanut butter is a combination that Ive always been kind of meh about. Its not that I dont like it, I just dont have the abiding love that some bloggers do for it. So there arent a lot of desserts here on IBIH that marry the two.
But thats OK, because frankly this keto chocolate peanut butter pie is the only recipe youll ever need to get the best of both, in my opinion. The rich and creamy peanut butter filling, combined with a crunchy chocolate cookie crust, and topped with a drizzle of dark chocolate and slightly sweetened peanut butter sauce AND toasted peanuts on top?!?! Be still my heart.
I cant decide if I like this keto chocolate peanut butter pie better frozen or simply chilled. I love the creaminess when its soft enough to melt in your mouth, but also the ice cream like quality of the peanut butter filling when mostly frozen.

You should know that this keto peanut butter & chocolate pie is pretty easy to make. Its a press in crust, no rolling required, and it only has to bake for about 10 minutes and thats all the cooking that is needed for this almost no bake keto peanut butter pie.
The filling consists of an ultra creamy combination of peanut butter, vanilla, sweetener, whipped cream and mascarpone cheese
Peanut Butter Pie Filling:
There are two steps to the filling: the peanut butter mixture and the whipped cream.
To make the peanut butter mixture, youll just beat together peanut butter with cream cheese and powdered sweetener.
The mixture will be very thick.
Set that aside and then whip up some whipped cream.
Fold the peanut butter mixture into the whipped cream until you have no streaks remaining.
The peanut butter mixture is thick, so itll take a bit of folding to really get it all mixed it. Just use a rubber spatula and keep on stirring until it mixes in.
Spread your filling into the chilled pie crust and then pop the whole thing in the fridge for an hour or so to set up.

Making your own low carb, keto-friendly whipped cream is as easy as pie. Chocolate Peanut Butter Pie, to be exact. Pour cup heavy whipping cream into a blender carafe. Add powdered erythritol to the desired level of sweetness I normally use about 2-3 teaspoons. Add a ½ tsp of pure vanilla extract. Blend until a thick cream forms, and spoon on top of or to the side of your keto dessert.

Dont skip toasting the almond flour for the crust layer. Sure, it is an extra step, but toasting the almond flour imparts a nicer flavor than simply using raw almonds. Since you are not baking the crust, leaving the almonds raw will not yield as tasty an end product. If youve ever mistakenly bought a jar of raw nuts, youll know exactly what I mean.
Toasting is so easy to do, and it elevates the flavor of the crust. Heat the almond flour in a large, dry skillet over medium low heat. Stir occasionally to prevent burning and allow the flour to toast to a slight golden brown color. This should only take 3-5 minutes, depending on how hot your pan is. Remove the flour from the hot pan, otherwise you may end up with burnt almond flour if you do not remove the pan from the heat source.
Freeze each layer during assembly. After making the crust layer, freeze the pie shell while you assemble the ingredients for the peanut butter mousse layer. Once you add the mousse, freeze again. You do not need to leave each layer in the freezer longer than 10-20 minutes, just enough to keep it very cold. This is especially important before adding the ganache, as you do not want your mousse to melt. I do not advise freezing after your ganache layer, however, as it will lose the nice sheen that comes from the melted chocolate.

Pie Dish Vs Springform Pan
Depending on what I making this dessert for, I use either a large pie dish or a 9 springform pan. I personally like the large 9.5 glass pie dish for this Keto Peanut Butter Pie. The pie dish is easy to store in my freezer and super easy to transport to a party.
A springform pan is equally as easy to use. I do think that the presentation from the springform pan gives more of a cheesecake look and a real show stopper.
Both pans are equally interchangeable when making your Keto Peanut Butter Pie. However, please note that smaller pie tins will be too small for the amount of filling called for in this recipe.
