Stabilized whipped cream is simply cream thats been fortified with a little gelatin before being whipped so that it holds its shape and doesnt weep.

Stabilized whipped cream will hold its shape for at least 24 hours. I generally pipe the whipped cream right before presenting the pie, but with the stabilized version you can do this well in advance.

How To Blind Bake A Pie Crust

Easy Homemade Banana Cream Pie Recipe

Roll your homemade or store-bought crust dough out on a lightly floured board until its about an 1/8-inch thick and large enough to fit your 9-inch pie plate, with about 1-inch of pastry going beyond the rim of the plate.

Press the pastry gently down into the plate and then evenly trim the edges to about 1/2-inch of the edge of the pan with a sharp knife. Tuck the top edge of crust over and under and crimp or flute the edges. Transfer the pie plate to the freezer for 30 minutes while you preheat the oven.

Line the pie pastry with foil. I like to use regular foil, not heavy duty foil or parchment paper, because it is more pliable and easier to shape into the unbaked pie crust. Press the foil down lightly and fill it with pie weights. Dont have pie weights? You can use dry beans instead and when youre done allow them to cool and then store them in an airtight container in your pantry to use as pie weights over and over again.

Bake the weighted pie crust for 20 minutes at 400 degrees F. Remove the dish from the oven and carefully lift and remove the foil and pie weights. Use a fork to prick the bottom surface of the crust all over. Reduce the oven temperature to 375 degrees F, and bake the crust for an additional 10 to 15 minutes or until entire crust is golden brown.

Remove from the oven and allow the crust to cool completely before filling.

Why Is My Banana Cream Custard Runny

Probably because it needed to cook a little bit longer. Here are a few tips for making the custard filling.

  • After the first boil, the custard should be about the consistency of gravy.
  • After the second minute boil, it should be the consistency of fresh-made pudding.

Make sure your custard is truly at a boil before you start your timer. My custard only takes a minute with each boil to thicken to the consistency that it needs to be. Every stove is different and yours may need an extra minute or so.

The custard will thicken as it cools in the refrigerator and as it sets up in the pie crust, but if your custard looks like soup then it may be undercooked.

I was shocked when I heard it was so simple to make! It not only tastes delicious around the holidays, but makes a great summer time pie to whip up since you dont have to warm up the kitchen with a hot oven.

If you love bananas, you are bound to love this pie too. Its light, fluffy and full of delicious banana flavor. Plus its made with just 5 simple ingredientsone being a box of instant banana pudding mix.

What If Your Pudding Isnt Thickening

If your pudding is cooking and just isnt thickening, resist the urge to crank up the heat. This could break the custard and make it chunky.

If its just not reaching pudding-level texture you can make a slurry. Simply whisk two tablespoons each of cornstarch and cold water together in a small bowl and you will have a slurry.

Next, remove the pudding from the heat, add the slurry one or two teaspoons at a time then return it to the heat to thicken until the pudding has reached the proper consistency.

What Is Blind Baking

Now that you have all of your ingredients, its time to layer this baby up. These are the basics, but be sure to read each instruction in the actual recipe at the bottom of the post very carefully to ensure success:

  • Prep your pan. Youll start by greasing a 9-inch springform pan or a deep dish pie pan.

  • Finish the filling. Place the pan over medium heat and keep whisking until the mixture gets warm, slightly boils, and starts to thicken. Pay attention as this can happen quickly. Once it has a custard-like texture, remove it from the heat and stir in the vanilla, bourbon & butter.
