If you’re making a one-crust pot pie, you can halve this recipe and use it only on the top of the pie. For a two-crust pie, use it as written for a top and bottom crust.

You can easily make a double or triple batch, and freeze these chicken pot pies for later
I usually freeze mine before baking so that the crust doesnt get overdone.
Once the pies are filled and topped, let them cool. Then they can be covered with a layer of foil and popped in the freezer.
Make sure to write the date, what it is, and how to cook it on the top with a permanent marker. Again, your future self will thank you!

How Do You Cook The Chicken For The Perfect Gf Pot Pie
You can cook the chicken in the same manner in which you sauté the onions in this recipe. Slice the raw chicken into a large dice, with pieces about 1-inch square. Cook the chicken in the butter and oil, after or even with the chopped onions, for about 5 minutes.
I prefer to cook the chicken separately, since you can make it ahead of time that wayand I make extra to use in other recipes. Any chicken that has been seasoned plainly, preferably with just salt, pepper, and a bit of olive oil, works for this recipeand for any recipe where you might use rotisserie chicken. Of course, you can use rotisserie chicken, but my family doesnt care for that.
What Vegetables Go In Chicken Pot Pie
You can use whatever you like, but my favorite vegetables to put in chicken pot pie are:Onion, garlic, carrot, celery, peas, corn, and potato.
You can also use green beans, parsnips, turnips, lima beans, mushrooms, or any favorite vegetable you want.
You can use frozen peas and carrots, frozen green beans, frozen corn, etc.
Helpful tip: I always freeze diced onion and use it in this recipe to have one less thing to chop.

My favorite way to cook it for a recipe like this is in a casserole dish with the meat covered completely with parchment paper. The parchment paper acts like the skin of the chicken would, and locks in moisture during cooking.
Place the breasts in a lined or greased dish, allowing for some space between the breasts. Drizzle the meat lightly with olive oil, sprinkle lightly with salt and freshly ground black pepper, and cover completely with parchment paper placed directly on top of it, covering the chicken completely.
Preheat your oven to 400°F. Place the dish in the hot oven and cook for about 20 minutes or until an instant-reader thermometer inserted into the thickest portion of each breast reads at least 165°F. Allow to rest outside the oven, still covered, for 10 minutes before chopping.
To make this chicken for later use, allow the chicken to cool completely while still covered with the parchment paper. Wrap the chicken tightly with freezer-safe wrap, and freeze until youre ready to use it. Defrost in the refrigerator overnight before using in this recipe, for chicken salad, or anywhere you might use cooked rotisserie chicken.

Any pie dish will work best, whether ceramic, glass or aluminum. If you are going to freeze your pie then opt for the aluminum tin.

Yes, you can freeze the chicken pot pie. You will need to make the pot pie in a freezer-safe pan . Wrap the entire pot pie, top, and the bottom of the pot or pie pan, with freezer plastic wrap. Then wrap the entire pot pie again from top to bottom with aluminum foil. Place the double wrapped pot pie in the freezer.
You do not have to thaw the pot pie. Add about 20 minutes to your baking time if you bake it frozen.
You can also thaw the pot pie in the refrigerator and then bake as directed. An unbaked or baked pot pie freezes for up to 2-3 months.

Making The Gluten Free Filling

Our gluten-free chicken pot pie casserole recipe is the perfect meal for a chilly fall or winter night. This easy-to-make recipe is not only delicious, but will fill up and warm everyones tummy after a day full of work, school, and activities. It is the perfect end to a busy day when you just want to relax and wind down!
Cooking Chicken For Pot Pie
Choose your preferred method for cooking the chicken breasts before starting the recipe. Cooking times may differ, depending on the thickness of the chicken breasts. Check to be sure the temperature of the chicken has reached 165ºF.
Or use rotisserie chicken or leftover chicken or turkey. You will need 4 cups cooked, chopped chicken or turkey for the filling.
Boil: Bring a large pot of water to a boil. Add chicken, cover, and reduce heat to low. Cook for 20-25 minutes, or until chicken is cooked through. Drain and chop.
Bake: Preheat the oven to 375ºF. Place chicken breasts on a greased baking sheet. Bake for 22-26 minutes, flipping halfway through. Cool slightly and chop.
Pressure Cooker: Place chicken breasts and 1 cup of water in an electric pressure cooker. Secure on lid and seal valve. Cook under high pressure for 10 minutes. Let pressure release naturally for 10 minutes. Let out any remaining pressure and remove chicken to chop.

A Flaky And Golden Paleo Crust
When I made my pumpkin pie last Thanksgiving I knew without a shadow of a doubt that my light and flakey crust would make a repeat appearance. When you have a recipe winner youll want to use it over and over and over.
The crust is a mix of almond flour and cassava flour but if you saw my first attempt on , youll notice that the crust was a bit drab looking. So I rectified that with a simple egg wash for golden goodness.
I have a few other tips when it comes to the crust though, as working with grain-free flours can often result in frustrating, crumbly dough. In fact, on my first attempt I thought, right, Ill just roll the dough and use a bowl to cut out a large circle and then transfer that circle with a spatula to the top of the pies. Umm, not so easy peasy and it broke apart every time.
So you want to hear my genius idea? My tortilla press! Which made perfect, round circles in seconds that were easily transferable between parchment paper. If you dont have a tortilla press, you could still roll them out.
The big takeaway is to divide your dough first and create mini, individual circles versus thinking you can cut circles out of one large piece of dough. Once I got that down bam! These mini chicken pot pies were good to go.
