Full-Fat Coconut Milk Make sure to use full-fat coconut milk in this vegan key lime pie recipe. The extra thickness from a can of full-fat coconut milk with make your pie oh-so creamy!
Sweetened Condensed Coconut Milk The only sugar in this recipe comes from the sweetened condensed coconut milk. Ive been able to find sweetened condensed coconut milk at most of my local grocery stores. If youre having a hard time locating it, try looking around baking supplies and/or canned coconut milk.
Key Lime Juice You can either purchase key limes from the store and juice them yourself, or buy key lime juice in a bottle. For ease, I used bottled key lime juice and made a delicious pie! And if you cant find key limes or key lime juice, you can use regular lime juice instead.
Cornstarch Since this recipe doesnt contain the typical dairy ingredients found in regular key lime pie, we need cornstarch to help this pie set. Make sure to stir your filling really well after youve added all ingredients to a saucepan. If you see any cornstarch lumps left behind, keep stirring and cooking, theyll eventually dissolve.

This creamy, tart and sweet Paleo Key Lime Pie has the perfect balance of flavors with a crisp and nutty coconut pecan crust. A great healthy yet decadent tasting dessert for spring and summer! Gluten free, dairy free, soy free, Paleo.
I think basically everything about this Paleo key lime pie tested my sanity last week when I decided to dive in head first and experiment. From deciding what type of crust to make, to the filling, to whether the darn pie would actually use key limes, or key lime juice, or regular limes. So much to consider.
Do I attempt to make it raw and vegan or do a custard and use eggs? Do I just do a lime version of my lemon bars and call it a day? Do I put whipped cream on it? Honey or maple? How much zest? And then back around to the beginning where I freak out about the crust. I was particularly indecisive last Friday and there was so much drama surrounding this pie that Im sort of surprised we came out alive on the other end. With, luckily, a really flipping awesome Paleo key lime pie to make again and again!
What wound up happening with this recipe was a whole lot of compromising! With me, myself, and the pie. To start, this pie wanted to be more than just a spinoff of its older-by-a-week sibling so the crust had to be something totally different.

Can I Use Regular Limes Instead Of Key Limes
Cool key lime flavors are perfect for summer!
But guess what? This particular cheesecake doesnt have key limes in it, just regular limes. I didnt have access to key limes at the time I made this, so I used regular limes for it.
So its perfectly fine to use regular limes instead of actual key limes!
I called this a key lime cheesecake instead of a regular lime cheesecake because that just sounds a bit weird, doesnt it? People are so used to hearing the words key lime for pies and cheesecakes, so I chose that name.
Key limes apparently have a more aromatic and less tart juice than regular store limes , so if you do use real key lime juice in this recipe, it might not be as tart.
If you want this cheesecake on the tart side, use regular limes. Youd likely have to use more key lime juice to get the same tartness and it likely wont set up properly if you add more lime juice than it calls for.
Helpful Tips To Get Started:
- Pack in the pie crust. The crust dough will be crumbly in texture, so youll need to firmly press it into the pan to keep it together.
- Save leftovers for later. This pie will last 4 to 5 days in the refrigerator or up to 2 months in the freezer .
- 2 T Key lime zest, for garnish
- Preheat the oven to 325°F.
- To Make the Crust: In a large mixing bowl, whisk together the almond flour, coconut sugar, cinnamon, ginger, and salt. Add the coconut oil last and stir until a crumbly dough forms.
- Transfer the mixture into a pie plate and press it firmly into the bottom and along the sides. Use a sharp knife to carefully poke holes throughout the bottom.
- Place the pie plate in the oven and let it bake for 15 minutes. When the crust is golden, remove and set it aside to cool for 10 minutes.
- To Make the Filling: In a large mixing bowl, combine the eggs, coconut sugar, coconut cream, Key lime juice, and arrowroot flour with an electric mixer. Beat for about 3 minutes or until smooth.
- Pour the mixture over the prepared crust and bake for 30 minutes. Youll know its ready when the edges are set and the middle is slightly loose.
- Let it cool for 1 hour at room temperature, then refrigerate for 1 hour to firm up.
- To Make the Whipped Cream: In a large mixing bowl, use an electric mixer to beat the coconut cream for 3 minutes, or until fluffy.
- Scoop the whipped cream onto the pie and sprinkle with key lime zest. Serve immediately and enjoy!

How To Make Dairy Free Key Lime Cheesecake
Our gluten free and dairy free key lime cheesecake is easy to make, no baking required! It just takes a bit of time for it to set up, but other than that, its really easy to make and so creamy, silky smooth, and delicious.
Here are the steps for making this recipe. Please note: the actual recipe card with the full ingredients and instructions is at the end of the post!
I added a little bit of natural food color powder to this key lime cheesecake to give it a light green color. We used just a pinch each of yellow and blue color powder and kept adding tiny bits at a time and mixing until we liked the color.
You can skip the food color powder though if you want though. Leaving out the food color powder wont affect the flavor, the cheesecake will just have white filling with flecks of green lime zest, and will have the same delicious lime flavor.
Because this key lime cheesecake has more liquid in it from the lime juice, this cheesecake doesnt set up quite as firm as some of our other cheesecakes. So its softer, but still delicious!
Gluten Free Cheesecake Crust
For this key lime cheesecake, I used a store bought MiDel graham crust thats gluten free and allergy friendly. I love these crusts and our local Walmart carries them so theyre easy to get, but they can be a little bit crumbly.
If you have some allergy friendly vanilla sandwich cookies, you can make your own cookie crust for this dairy free cheesecake. I like the Kinnikinnick sandwich cookies for crusts, they are gluten free, dairy free, and nut free.
To make your own cookie crust, just follow the crust directions in our vanilla cheesecake recipe post. Homemade cookie crusts are way better than the store bought ones, but the pre-made crusts are great in a pinch!
If you dont need to have this dairy free cheesecake gluten free, you can use vanilla Oreos to make your crust. Or even lemon Oreos for more citrus flavor.
Regular chocolate, vanilla, and lemon Oreos dont have dairy, but this may vary by country/region, so always check the labels for allergen information before buying them.

How To Make Vegan Key Lime Pie
As I mentioned, the whole vegan pie recipe comes down to three key steps : making the crust, the filling, and letting the pie set.
It’ll take you about 15 minutes total to make both the crust and the filling.
The long part of the recipe is that it takes a minimum of 5 hours to set in the fridge.
Although it will be tempting to eat right away, it is totally worth the wait.
Now, let’s make an entire pie from scratch!
