Cutting The Perfect Slice Of Pie
Once you’ve cooled and chilled your pie, it’s time to cut that first slice! Since this is a one-crust pie , you can simply use a sharp and sturdy chef’s knife. Don’t use a serrated knife. You want sleek straight lines! Start from the center and slowly cut down, all the way through the bottom crust, sliding the knife to one edge before cutting through the harder crust edge. repeat to finish the first slice. Use a pie server or the flat side of your knife to gently lift out the first slice.
Once you have the first slice out, you can more easily cut the rest of your slices, using your knife to cut the full width of your pie using the half-line you made from the first slice. This 9-inch pie should yield 8 standard pie slices.

Dairy Free Butter Vs Dairy Free Shortening
When it comes to the type of fat youre using, there are pros and cons to each.
A dairy free butter like Earth Balance will make for a more buttery, flaky crust. In my opinion, it makes the best tasting pie crust.
However, it also has more moisture than shortening and sticks more easily when rolling out. This makes it essential to flour the surface well. Lastly, a dairy-free butter has a lower melting point than shortening, so it wont hold its shape quite as well and can sometimes seem flimsier.
Heres the dairy free butter I used, and what the pie crust using this looked like in my pie plate. You can see its a bit softer and doesnt have a perfect rolled texture:
Shortening is easier to incorporate into a pie crust and holds its shape very well. If youre doing any kind of decorative stuff, like crimping the edges or doing a double crust where youre cutting out shapes or strips for the top youll probably want to use shortening.
However, shortening lacks the same flavor that youll get in a dairy-free butter, making the crust a bit blander.
Heres the shortening I used, and what the shortening version looked like in my pie plate. You can see its firmer and holds its texture better:
Theres no one right choice, and you can decide based on the type of pie youre making, your own personal preferences, and what you have on hand in your kitchen!
Can I Make Substitutions
Sure can! But, this is where I make that special note that you may not get the same consistent results, both in texture and flavor, with substitutions. If youre short on ingredients, here are swaps you can make:
- Sweetened condensed coconut milk: You can use any brand of sweetened condensed coconut milk, or make your own using two cans of coconut milk and ½ cup raw honey. Bring to a boil, then simmer over medium heat until reduced by a little less than half, about 30 minutes. Stir regularly. Then, measure out 1 ½ cups for the recipe.
- Key lime juice: If you dont have access to key limes or bottled key lime juice, use freshly squeezed lime juice. The pie will be a little less tart.

While working on creating the ultimate dairy free key lime pie recipe, I spent days researching classic key lime pie recipes. Baking the perfect key lime pie is actually an art, and getting the texture to be solid yet creamy can be a challenge.
Classic key lime pie filling include three basic ingredients: egg yolks, sweetened condensed milk, and key lime juice. Traditional recipes werent actually baked because the lime juice cooked the eggs, similar to how lime juice breaks down the proteins in the shrimp in ceviche. Now, most key lime pies are baked jusssst to be safe.
Oddly enough, baking isnt what helps key lime pie to firm up. Its the reaction between the milk and lime juice. For this reason, you cant just swap out sweetened condensed milk for coconut milk or even sweetened condensed coconut milk. Youll be left with a soupy, sloppy mess.
