You can use either vanilla or almond extract in this apple pie filling. Ive tried both and they are both excellent. In fact, I even do half almond and half vanilla sometimes. Vanilla is more of a traditional flavor, while the almond is a sweet twist.

The apple peeler corer slicer tool makes the apple prep super quick and easy!

  • CRUST. Make the dough for the pie crust , then press the dough into the bottom and sides of a 9 pie pan. Do not roll it out.
  • FILLING. To make the apple pie filling, mix together the sugar, flour, nutmeg and cinnamon. You can use regular sugar or brown sugar. I like to do 1/2 and 1/2. Gently toss the mixture with the sliced apples, then let them sit for about 10 minutes. Then pour the filling into the unbaked pie shell.
  • CRUMBLE. Add flour, butter and sugar to a bowl and use your fingers to mix together until crumbly. Then sprinkle the mixture on top of the apple filling.
  • BAKE. Place the pie in a brown paper bag and staple it shut. Then bake the pie in the oven at 350°F for about 1 1/2 hours. Remove from oven and slit the bag open with a knife. Then transfer to a cooling rack.

You should know straight up that I havent ever burned my house down baking an apple pie in a paper bag. Dont worry Im only kidding a 375°F oven is not going to get the paper bag hot enough to have it burst into flames.

Just dont even think about turning on the broiler with the paper grocery bag inside the oven. And keep the bag away from direct contact with the flame.

Baking your apple pie in a bag means that your apple filling is always always always perfectly tender. It also ensures that your crust is extra special flaky even without blind-baking the bottom crust.

Then, all thats left to do is to tear open the top of the bag and finish baking. The crust will be absolutely positively the most gorgeous golden brown color you have ever seen in your life.

This is my favorite way to make a classic gluten free apple pie. But its far from the only way to make apple pie. Remember that we have a recipe for gluten free Dutch apple pie and even a recipe for handheld gluten free apple pies. Both of those recipes will produce a filling with more of a bite to it, unlike the super soft filling here.

And if youre worried about rolling out pie crust, I have a how-to video for making extra flaky gluten free pie crust. The same techniques apply to the pie crust recipe here as they do in the extra flaky crust.

How do I keep the apples from turning brown?

We like Granny Smith apples best for apple galettes and apple pie recipes with fresh apples. Slice apples put them in a large non-metal mixing bowl with water and a squeeze of lemon juice. As a result, the apples won’t turn dark while you’re preparing the rest of the pie.

How to fit all the apples in the crust

Drain off the water, then cook the sliced apples in the microwave for about three minutes. The apples will shrink a bit and allow you to fit even more apples in the crust.

    Add sugar and spice

Next, mix the apples with spices, sugar and our secret ingredient the zest and juice of one lemon. Theres also some flour to thicken the juice. You won’t really notice the lemon, but it brightens the flavor of the pie.

After tossing the apples and other filling ingredients together, pour the apple mixture into the crust. They should fit into the crust nicely.

I Tried The Brown Bag Trick For Better Apple Pie

Maybe its happened to you, too: You pull your pie from the oven and its perfectly golden, but the fruit juices are still vigorously bubbling, indicating you need to bake it longer. So you pop it back in. When you return, the juices are still not reduced enough but the sugars on the crust are getting too dark. You scramble to cover the spots with foil, hoping it will buy you more time. But no matter how much you try, you still cant get that fruit juice reduced enough, and now your crust is borderline burnt.

As a self-taught pie maker, its been quite a journey learning all the techniques for making perfect fruit pies. Nailing the two most important qualities a perfectly golden crust and a filling that doesnt spill out when you slice it is truly a balancing act, because you have to bake the pie long enough to give the fruit and its juices time to reduce, but not so long that the crust burns. Its especially tricky for anyone who likes to sprinkle raw sugar on the crust, because those sugars can caramelize quickly and unevenly, creating dark spots.

But what if I told you that you could bake your pie as long as you need without ever having to worry about burning your crust? And that you likely already have the tool you need in your kitchen? I hereby introduce you to the Paper Bag Apple Pie.
