Buying Guide For Best Pie Pans

Theres nothing quite like cutting through a golden, flaky pastry crust to reveal a delicious filling inside, whether youre baking a classic fruit pie or something more unusual, like a curried chickpea pie. Of course, to bake the perfect pie, you need the perfect pie pan.

Before you buy, you should carefully consider which pie pan is right for you. Material is more important than many people realize, with different materials giving a range of results. You also need to choose a pie dish of the correct size and shape to meet your needs, as well as consider other features, such as fluted edges and whether your pie pan is dishwasher safe.

It might seem like too much to think about, but we have you covered. This buying guide contains all the information you need to choose the right pie pan, or you can check out our top five pie pans, plus our selection of close runners-up.

The Best Round Cake Pan

Williams Sonoma Goldtouch® Nonstick Pie Pan

*At the time of publishing, the price was $12.

If youre an ambitious baker, you may want to tackle tiered cakes, and youll need a wider variety of sizes than just 8, 9, and 10 inches . Or maybe you dream of making enormous cakes, or tiny, 4-inch cakes for two. For that kind of variety, Id recommend Parrish Magic Line, which makes pans in every size between 3 inches and 16 inches, at prices low enough that you can afford to expand your options. We saw Magic Line pans recommended many times in forums like Cake Central, and the 9-inch pan is well-reviewed on Amazon with 4.8 stars out of more than 250 reviews. Though we found they baked cakes paler than other pans, this can be remedied by an extra few minutes in the oven. Magic Line pans arent completely nonstick, but they do release cakes better than Fat Daddios, the only other brand to come in so many sizes. Its safest to line the pan with parchment, but its good to know that im a pinch it should work just fine without.

Can You Use A Pie Pan To Bake A Cake

Yes, you can use a pie pan to bake a cake, but you should be aware that pie pans typically have angled sides and cake pans have straight sides. Because of this difference, if you’re making a layered cake, the edges of the cake will be harder to frost. The cakes can be trimmed to get rid of the angled edges but may still be difficult to frost. Generally, cake pans should be used for baking cakes, but in a pinch, a pie pan will do if you aren’t interested in how good the final product looks.

Other Pie Dishes We Tested

The ceramic Le Creuset Heritage Pie Dish is both beautiful and functional. Even if you start with ready-made dough and filling, itll deliver a pie with a crisp crust that you can proudly bring to the table. As the Le Creuset can withstand temps up to 500°F, you can use it to brown off a streusel-topped fruit pie. Theres a bit of room to hold it under the rim but for a really good grip, grab it along the sides. While this dish is only 8 ¼-inches wide, its 2-inches deep so it can accommodate five cups or the recipe on the back of Libbys canned pumpkin. Like all ceramicware, its heavy but microwave and dishwasher safe. Choose from a full array of the brands colors from the classic flame to trendy matte sugar pink.

Pros

Rectangular And Square Pans

Goldtouch Springform Pan | Williams Sonoma

Based on their performance in the round cake pan test, we skipped a few pans we would have otherwise tested: Williams-Sonomas Goldtouch Nonstick Square and Rectangular are made by USA, and they were the top choice of Cooks Illustrated, but were too expensive at almost twice the price of the USA pans.

Williams-Sonomas Traditionaltouch uncoated pans are less expensive, but they bake a paler cake and dont come with the ease of nonstick.

Fat Daddios makes pans with perfectly straight sides in many, many sizes, but a big chunk of cake got stuck to the round pan we tested.

And the Cuisinart Easy Grip 9-Inch Square Baking Pan, recommended by Tish Boyle, has the same dark sides that over-browned a round cake, and also doesnt come in an 8-inch size.

As mentioned, we liked the Calphalon Nonstick Bakeware rectangular and square pans, but the nonstick coating is darker than on the USA pans and yields a darker cake.

Wiltons Perfect Results square and oblong cake pans could have been a nice option because they were the only pans with handles, plus theyre super affordable. But unfortunately that low price translates to a pan made of much thinner metal than the USA or any of the other pans. It was thin enough to overbake the outside of the cake, and to be at risk of denting.

How Do You Put A Pie Crust Into A Pie Pan

After you’ve rolled out a pie crust, you will need to transport it to your pie pan quickly and smoothly to keep the rolled dough from tearing. If the dough is relatively small, you can move it by sliding your hands and arms underneath the dough, lifting it, and quickly transferring it to the pie plate. If the dough is larger or you’d like more support while moving the dough, you can loosely roll the dough over your rolling pin to move it, then unroll the dough over your pie dish.

Once the pie dough is resting on the pie pan, you begin shaping it by smoothing the dough across the bottom surface of the pan and then fitting the dough into the crease of the pan. Next, you’ll press the dough against the sides of the dish, allowing any extra dough to hang over the lip. Trim the dough about half an inch past the lip of the dish, and crimp the edge of your pie crust as you like.

The Best Rectangular And Square Cake Pans

May be out of stock

*At the time of publishing, the price was $0.

The sides of the USA pan are slightly flared out, and if you want to make a really perfect square layer cake, its better to have a pan with perfectly straight sides. For that, Parrish Magic Line is one of the few brands that makes 8-inch square pans and 9- by 13-inch pans with sides and corners all at sharp right angles. It also makes square and rectangular pans in numerous other sizes, which are great for playing around with tiered cakes. Plus the wide lip jutting out from the rim of these pans makes them easy to pick up and flip over. Just keep in mind that Magic Line pans are uncoated, and its best to line them with parchment. The reflective aluminum sides will deflect heat, meaning your cakes may need a few extra minutes in the oven.

Our Pick: Oxo Good Grips Glass 9 Pie Plate With Lid

The OXO Good Grips Glass 9 Pie Plate With Lid conducts heat very well, and in our tests it baked some of the most evenly browned crusts. At 2 inches deep, its one of the few glass dishes we found that qualify as deep-dish plates. It fits thick fruit pies better than shallower glass plates but isnt so deep that custard pies look skimpy. The rim is wider than most, which makes shaping a pretty crust easy, while the clear glass lets you see when your pie is done. And unlike with some other glass plates, you can transfer this one directly from freezer to oven since its made of borosilicate glass.

Among the 19 pie plates weve tested over the years, the OXO dish produced some of the most evenly browned crusts. In every test crusts baked up golden from edge to edge, with no pale spots as we saw on the bottoms and sides of pies baked in other plates. The pumpkin pie we baked in the OXO plate set into a smooth custard with a few small crinkles around the edges, while the peach pie emerged jammy and juicy with a neatly crimped edge and a crisp, golden-brown crust on top and bottom. Both pies cut neatly and didnt stick to the pan.

The generous -inch rim on the OXO is one of the widest among the plates we tested . It gives you plenty of room to crimp or to add some other decorative edge to your pies, and we found that it helped crusts stay in place as they baked. The rim also makes it easier to grasp the hot pie plate with oven mitts.

Who Should Get This

If you like to bake pies even just once or twice a year, having a pie plate in your kitchen is worth it. Sure, you have ways to get around using onemaking a slab pie or galette on a baking sheet, for instance, or just using a disposable aluminum tin. But you cant make things like deep-dish fruit pies or towering lemon meringue pies on a baking sheet. And although a disposable tin can bake evenly, its flimsy and small, and it doesnt look so nice on the table. Plus, a good pie plate can come in handy for more than just sweets: If the dish is deep enough, you can use it to make things like frittatas and pot pies. You can also use it for recipes associated with specialty tart or springform pans, such as quiche and cheesecake.

If you have a pie plate you like, one that is durable and has served you well, keep it. But if you cant seem to achieve golden crusts or evenly cooked filling, you may want to upgrade to a better plate. A high-quality pie plate can survive many years of use, so whether youre an experienced baker or an occasional one, a good plate is worth the investment .
