So we reached out to food editors and pastry chefs across the U.S. to find out the best pies that can be ordered from the comfort of your couch. How To Make Pecan Pie

As far as Thanksgiving pies go, this is one of the easiest. Theres no pre-baking the crust or pre-cooking the filling. Grandma, though no longer with us, always knows whats best! Heres an overview of the process.

  • Make the pie crust. As always, use my favorite homemade pie crust.
  • Roll out the pie crust. Youre aiming for a pie dough circle 12 inches in diameter. Carefully place the dough into a 9×2 inch pie dish.
  • Spread the pecans inside pie crust.
  • Whisk together remaining ingredients. Pour over pecans.
  • Bake. I like to place a pie crust shield on top of the pie edges to prevent them from browning too quickly. If you find the whole pie is browning too quickly, tent a piece of aluminum foil over the whole pie.
  • Slice and serve. The pie is delicious warm or at room temperature. Top with whipped cream, ice cream, and/or a sprinkle of cinnamon-sugar.

    My mother in law, Jeanette, makes the best pecan pie. I asked her once how she does it, and she said, Well, I just use the recipe on the back of the Karo Syrup bottle. Then after giving it some thought, she added that she did a few things differently. First, she roughly chops most all of the pecans, leaving just enough pecan halves to form a pretty top layer. Then, she roasts the pecans in a dry cast iron skillet. Oh, and she also uses a full stick of butter instead of the two tablespoons called for in the traditional recipe, and she uses half dark syrup and half light. To me, that constitutes a whole new recipe and one thats undoubtedly worth sharing. What makes her pie all the more special is the homemade crust she makes. She says its the one from the Betty Crocker cookbook, but knowing her Id bet she adds her own touch to that too. Ill leave the crust up to you. A store-bought frozen crust might work best for you if, like me, youre not versed in dough making.

    What Makes This My Best Pecan Pie Recipe

    This is my tried-and-true recipe and heres why:

    • Simplicity. There are only 8 ingredients in this remarkably simple filling so the flavors truly shine.
    • The best pie crust. Were talking mega flaky, mega buttery, and mega delicious. This is the one and only pie crust recipe I use. Its been passed down through generations and stands the test of time. Heres my recipe for all butter pie crust if youd like to try that instead. Both pie crust recipes yield enough dough for 2 9-inch pies. You can freeze the 2nd half or make another 1 crust pie such as this chocolate chess pie or my pumpkin pie.
    • No pre-baking needed. The buttery pie crust has a wonderfully flaky texture, but still stays perfectly intact as the pie bakes and cools. Some recipes require you to pre-bake the pie crust before pouring in the filling, but I dont find that necessary. We can skip that step by simply baking the pie on a lower oven rack.
    • Incredible texture. The pecans on top get all toasty while the nuts underneath have a melt-in-your-mouth chewy texture. The pecans flavor and texture, paired with the flaky homemade pie crust, the fillings vanilla, butter, and cinnamon it all just makes this my favorite pecan pie recipe.

    How To Make Pecan Pie Without Corn Syrup

    The most common question here is: can I make pecan pie without corn syrup? My answer was always: yes, but the filling wont really set or it wont taste like pecan pie. So no, you cant. Until I tried maple pecan pie!

    Corn syrup is the glue that holds this filling together. Thicker than other liquid sweeteners, corn syrup works with the eggs to help ensure your pecan pie filling will set. The problem is that more and more modern bakers are looking for an unrefined substitution for the corn syrup. When creating my recipe for pecan pie without corn syrup, my goal was to find a solution to not only find a corn syrup substitute, but to guarantee the filling will SET and TASTE DELICIOUS.

    Taking a note from my brown butter pecan pie bars, I reached for pure maple syrup. This is a thinner liquid than corn syrup, but has the most remarkable flavor, as you know. The bars recipe calls for tempering the eggs, but I wanted a no-fuss filling that skipped the extra steps. Entire the magical ingredient: 1 tiny Tablespoon of flour. Simple, delicious, and pure flavors give us a maple infused + buttery sweet + deliciously thick slice of pie. I know youll love my maple pecan pie variation too.

    We see you. Youve been assigned a dessert for Thanksgiving, and so here you are, looking up pie companies because you dont bake. And youve got your cursor hovering over an add to basket button, wondering if that pie is really worth $25, 35, 50?!? Could you get away with picking up any old pie from the grocery store, instead?

    Were curious, too. Are those fancy pies you can order from a specialty bakery worth the extra money? Exactly what kind of sorcery is happening under those pricey crusts to make them cost that much? Or is there absolutely no difference at all, in which case youre completely justified in picking up a pie at Ralphs on the way to Aunt Simones the day of?

    We decided to find out. We ordered three pies from one of the best specialty pie makers in the country, the Southern Baked Pie Company. Surprisingly, they dont carry a sweet potato pie, so we ordered that from a barbecue outfit in North Carolina which shall go nameless because, bless their hearts, what they sent was an awful mess. Poorly packed, frost-covered, and the filling shrunken to half the size of the pie shell.

    We ordered a replacement last-minute from The Little Pie Company here in New York City. Sacrilege? Probably, but we do what we must.

    How To Store Pecan Pie

    The BEST homemade PECAN PIE

    As I mentioned above, this pie is best served chilled. So it stands to reason that you would want to refrigerate the leftovers, although I have let my pecan pie sit on the counter for a day or two without having it spoil. I wouldn’t let one sit out for more than that though.

    You can actually freeze a pecan pie and come out with beautiful results. Bake the pie as the instructions recommend, cool it completely, then wrap tightly with plastic wrap or aluminum foil. Slide the wrapped pie into a zippered freezer bag or an airtight container and freeze for up to 3 months. When you’re ready to serve the pie, thaw overnight in the refrigerator and allow it to warm up to room temperature before slicing. No one will ever know it wasn’t freshly baked.
